When you think of vegetables, it's hard to get excited. For most of us eating vegetables is something we do because it's good for us. But with this cookbook I found myself looking forward to my vegetables and barely noticing the main portion of the meal. All recipes are on two pages so the book lies flat. All recipes have supporting photos and there are hints and cautions where necessary. Don't you just hate it when you get ready to put a recipe together and see a note that it has to be refrigerated or sit at room temperature for two hours? This cookbook makes those instructions plain from the get-go so there are no surprises. I've made about four or five recipes from this book already and my toughest critic (my daughter) enjoyed them. Great cookbook, nothing hoity-toity about it, and visually appealing to boot.
