I taught Home Economics Foods classes over a 23 year period and found not all recipes are tested that get placed into cookbooks. Ms. LeBlanc has done an excellent job in creating these recipes for those who are gluten intolerant, like herself. The directions are clear and the portions are correct.
I am not gluten intolerant but do try to stay away from white flour and white sugar, so I found some of the recipes were ones that I could use when wanting to bake a cake.
