Rachael Ray's Look + Cook Review

I love cookbooks, I must have hundreds and my mother (from whom I inherited my passion for cooking) has thousands. A few of my early purchases were of the "Look and Cook" variety, such as French Country Cookery (Anne Willan's Look & Cook) but I have since moved on to cookbooks that rely on the reader to have mastered the different techniques that are required for each specific dish. Then I saw Rachael Ray on television cook some of the dishes from this new cookbook of hers. I must say that I was impressed with both the style of the dishes and their ease of preparation. The recipes are new, trendy and very approachable. The photos that demonstrate the preparation of the dishes do so in a step-by-step fashion are well shot and very easy to learn from. Some of the recipes in this book were posted on Rachael's website before the book was released so I had the opportunity to try out a few earlier as well as some new ones that are only in the book.
The look and cook portion of the book includes 100 recipes and is divided into 3 chapters:
1. Cozy Food - Includes recipes for some great comfort food, such as: Shepherd's Pie Stuffed Potatoes; Pimiento Mac n' Cheese; and fresh Onion and Wild Mushroom Soup2.Make Your Own Takeout - Restaurant-style dishes that can be prepared faster than you can pick up something to-go, recipes include: Chinese Orange-Barbeque Cashew Chicken and Crunchy Tuna Tacos3.Fancy Fake-Outs - These are simplified versions of dishes that are usually reserved for the advanced home chef, including: Almost Tandoori Chicken; Individual Beef Wellingtons; and Veal and Olive Ragu with Pappardelle
The back section of the book includes 5 more chapters (125 additional recipes), but they are in her 30 Minute Meals format and do not include photographs. There is also a link to her interactive website where you can see select dishes being made in real-time.
So far my favorite recipe is for the Chicken Cutlets Brasciole. The chicken breast filets are butterflied and pounded; the breasts are then stuffed with a mixture of raisins, toasted pine nuts, parsley, lemon zest, cheese, garlic and bread crumbs and is served atop a tomato, wine and tarragon sauce. Delicious!
This book is full of great recipes, some of which will become regular fare at my house. Although the Look and Cook feature is not really necessary if you are an advanced cook, this book is still worth having for its creativity and ease of preparation alone. It should be a big hit with the beginning and intermediate home chef as nothing is assumed and each technique and process is both shown and explained in detail. Advanced cooks will still be inspired by Rachael's ability to simplify classic recipes and to substitute easy to find ingredients for those that have been used historically in the well-known versions.
Ms. Ray has both her fans and her detractors. Some find her a little too "cutesy" with her made-up words and expressions (like EVOO for extra-virgin olive oil), but I find her somewhat unorthodox style to be refreshing (and she's not too hard on the eyes!). All in all I find this to be a very fine cookbook and one that I will be recommending to quite a few of my friends who would appreciate both the recipes and the step-by-step style of the photography and instructions. This will not become a go-to cookbook for me, but I am very glad that I own it and I will be cooking recipes from it from time to time.

I guess I'm a little confused with the negative reviews for this book. I love it just as much as Robin Miller's first cookbook. I agree that some of the ingredient combinations sound odd, but every recipe that I've tried has been wonderful. This cookbook allows me to create home-cooked meals in a relatively short amount of time, and everyone loves them! I really appreciate that most of the ingredients lists are either fairly short or mainly rely on pantry staples that I always have. This cookbook is helping me keep grocery costs down as prices rise (even as I've had to give up some of my other favorite cookbooks because of the prices of required ingredients). Strongly recommended for adventurous eaters with smaller budgets and little time. :)

"Rachael Ray is a very busy lady" - so says the back of Ray's new book, "Express Lane Meals". With a show on the Food Network, a slew of cookbooks and a recent magazine venture, you would think that she has no time left to write another book. But obviously, this wonder woman has found the time to do it again!
This book is focused on those of us who come home from work, exhausted, but still want a good, quality meal on the table without a lot of fuss. In Express Lane Meals, Ray emphasizes that this can be done - with a well stocked pantry and freezer - plus a few simple ingredients that you can pick up at the store on your way home. The secret is this - about every two weeks (or less depending on your usage), you do a "big shop", where you buy all the staple pantry/freezer/fridge ingredients that you keep on hand(ex: eggs, Parmesan cheese, pasta, frozen corn, lemons, canned beans, etc.) and then, you combine these ingredients with a few fresh items - and presto - you have quick, delicious dinners faster than you can say checkout!
The food is typical Ray fare: lots of pastas, some Tex-mex and Asain, plus plenty of Italian. The recipes are really nice and tasty with everything from Balsalmic Chicken with White Beans and Wilted Spinach to Thai-Style Grilled Beef in Broth with a Lot o' Noodles. Each recipe features the "Express Lane Shopping List" (what you need to pick up at the store) as well as a list of ingredients that you should have on hand from those 'big shop' days. This is a really handy feature and it helps you to be organized so that you are not caught without your necessities.
The book is divided into three sections: Meals for the Exhausted, Meals for the Not Too Tired, Bring it On! This allows you to choose from super easy to more complicated meals. I also like the "Master List" for the big shop days - this gives a good idea of what a well stocked pantry should be. It certainly gave me a few ideas that I didn't think of!
I would recommend this book for working moms, harried executives, busy families, college students or those of us who simply want a nice home cooked meal without a lot of fuss. You really can't go wrong with any of her books. Well done!

Quick Fix Meals: 200 Simple, Delicious Recipes to Make Mealtime Easy Review

I preordered this book (placed my order on Feb 21), and it arrived Mar 13 (it didn't hit the stands until Mar 12, so I was impressed with the Amazon delivery service -- especially since I did the Super Saver shipping). But anyway, about the book...
I was looking forward to this book's release, since I enjoy the show. I compare Robin Miller to Rachel Ray's "30 minute Meals" series, so I'm also comparing their cookbooks. The recipes in this book are very similar to Rachel's recipes. If you're looking to spice up your dinner time, you'll find little difference between Robin's book and Rachel's series (they have the same types of recipes with interesting ingredients and flavors that "normal" folks like me would never think of trying). Most recipes don't have tons of ingredients, but they do have ingredients that require everyday folks to make a special trip to the grocery store. Don't expect to open this book and just start having dinner.
Both cooks claim to have the secret to great dinner in a flash. I sum up the difference between Robin and Rachel as this: Robin just takes you a few steps back and tells you HOW to make it quick, not just how to cook. She comes out the winner because she gives you the secret: pre-planning, prepping, and a well-stocked kitchen.
The first chapter in the book explains her strategies, such as "In the Bag" -- creating meal kits and storing them in fridge or freezer for later use, and "Morphing It" -- using one dish to create many others. Not exactly rocket science, but if you're a full-time working mom like me, you just never quite heard or saw it put this way.
She also includes a section on how to get your kitchen to be "quick fix" friendly. Prepping, storing, freezing, 5 basic sauces to prepare and store, her top 10 never-without pantry and fridge items.
The recipes include time-saver tips, ways to "quick fix it" your way. The Morph It section starts with a main recipe, and the "morph it" recipes follow (no searching through indexes to find the matching recipes -- a BIG PLUS). All the recipes include timing guides for prep and actual cooking time, so you can plan when you want to prep and when you want to cook. The index is complete, but is organized like the indexes in those coooking magazines at the grocery store.
The print in this book is small! It's in a green ink and a brown ink, which is sort of easy on the eyes, but it could be a bit bigger. Also, all the recipes that are on the left page have the ingredient list on the inside of the page, near the center fold. I don't know why they did this, because I found myself pulling the book apart to see the recipe list. This will definitely wear the book out quicker than normal.
I'm leaning more towards Robin's book, only because of her overall strategy included in the book (prepping ahead, morphing one dish into many). The authors did a good job of trying to make the book organized and not chaotic or daunting. The language is very friendly, not formal. It stays true to the whole concept of de-stressing the dinnertime dilemma. Rachel's great too -- this book just speaks more to women like me, who feel guilty about how many nights I put $5 pizza on the table when my family deserves better.
UPDATE: I've had the book for 2 months now. Still love it! But one downer: the dessert section could have been taken from a Sandra Lee "Semi-Homemade" recipe book. Cool Whip, jam, chocolate sauce, with a bit of fruit thrown in.
NEW UPDATE: This book has really changed the way I shop and cook. I have several very helpful habits now!! I ALWAYS have pre-cut onions, green peppers, celery, and potatoes in my freezer. When I make any gravy or sauce, I make a big batch and store it in a ziploc bag. And once or twice a month, I'll cook a whole bag of boneless skinless chicken breasts, slice them up, and toss then in ziploc bags in the freezer. Just these few tricks have TREMENDOUSLY changed how fast I get dinner on the table. Even if I didn't like the recipes (which I mostly do), these new habits made the book price worth it 20x over!!!!!

This book, like many others, is often mistaken as a "I hate to cook!" book, when in fact it is more of a "I have no time to cook!" book. Cooking is one of my favorite passions, however working 50 hours a week really doesn't lend well to cooking elaborate meals. Rachael Ray provides a menu-style book that is both cost-effective and does not require unusual ingredients that are hard to find. The meals are easy and always 'homestyle' delicious. The only drawback, as many have pointed out, is that her deserts leave a lot to be desired. But it IS geared towards getting a meal done in 30 minutes, and as mentioned, I usually don't have time to make creme brulee. :-P

Sandra Lee Semi-Homemade Slow Cooker Recipes 2 Review

There are a ton of slow cooker receipe books on the market, but this one is the very best. I think it is even better than her first book of slow cooker recipes. I had borrowed a copy of the book from my library before buying it and already knew I was going to be crazy about it. I loved it so much I bought an extra copy for my neice who was pregnant with her third child. I figured she needed a good slow cooker recipe book more than another receiving blanket.
Not all of the brand names she calls for in her recipes are available at my supermarket, but it is hardly rocket science to make substitutions. I also think buying all of the convenience foods she calls for makes the recipes more expensive, but I recognize she includes them to make things easier. I have successfully made substitutes for some of the convenience items (i.e. regular bacon for pre-cooked bacon).
I love the twists she puts on tried-and-true recipes. When you feel you can't possibly think of another way of cooking chicken,Sandra Lee is there with a new, tasty, easy-to-make recipe. My family loved the Bourbon-Mustard Brisket, Smothered Meatloaf, Borracho Chicken (made with Jose Cuervo) and Cajun Red Beans with Andouille Sausage.
I'll be using some of the party foods and warm-up drinks receipes for the holidays.

Rachael Ray's Open House Cookbook: Over 200 Recipes for Easy Entertaining Review

I'm on a tasty journey licking my finger on hundreds of Rachael Ray's recipes in her many cookbooks. In the course of reading, using, and reviewing these cookbooks, I've been struck that the early Rachael Ray is different from the more recent work. Both have a lot to be said for them. The newest works are more sophisticated, appeal to a wider palate, use more ingredients, and are often daring in the way they simplify what most of us think of as very time-consuming dishes. Early Rachael Ray by comparison is full of family stories, traditional Italian cooking, and happy memories of days gone by when great meals united families and friends.
Rachael Ray's Open House Cookbook is as desirable an example of early Rachael Ray as you can hope for. Anyone who has ever had the pleasure of being invited for an Italian feast will recognize these dishes and the generations of love that create them for each new generation. Thanks to Rachael Ray's work in this book, you can now expect that these wonderful dishes will survive for yet another generation as she brilliantly takes the pain and agony out of such extensive preparations.
The book's first cooking section is called "Company's Company: Parties You Can Prepare and Attend." Around our house, having a party means my wife and I are either always in the kitchen or are carting things back and forth from the kitchen . . . unless we hire someone to help with the party . . . which gives the party a whole different feel that isn't necessarily a better one. The recipes are set to feed 20 or more, and to spread out the preparation and serving work so that it's not so overwhelming. Here's an example: An antipasto party begins two days before when you do the shopping; a day before, you do the heavy lifting of cubing, slicing, and chopping of ingredients . . . and getting the glasses and disposables ready to go; the day of the party, you make a topping and do a little work on two of the appetizers; two hours before the party, you make things that need to be fresh and platter your meats and cheeses; one hour before the guests arrive, you make one more dish and arrange platters and countertops. At the last minute, you make one other dish and cook your bacon-wrapped stuffed dates. Obviously, if you drop a dish or two, you can make the last minute even easier. Nice! Your party dish choices also include: pizza; tapas; and mix and match varieties of dips, spreads, pick-ups and entrees you can serve at room temperature (like beef tenderloin and two sauces). Invite me anytime you want to serve from this great cookbook!
At Home Sundays is the next action and looks at all three meals for Sunday. The breakfast choices are mostly what you would expect except for some tasty alternatives to French toast. Lunches are a zestier version of what you probably usually have. Suppers are where this section shines with recipes for dishes like I-Waited-All-Week Spaghetti Dinner, cioppino, and paella.
Home for the Holidays features comfort foods. These are basically the classics (stuffed artichokes, onion risotto, stuffed mushrooms, onion soup, figs and prosciutto, roast turkey with apple and onion stuffing, baked ham, prime rib, popovers, roast pork loin, brisket, leg of lamb, mashed potatoes (with flavorings), stuffed tomatoes, baked beans, standard vegetables with an extra zesty taste.
Dinner at Eight repeats some of the most popular 30-minute meals from The 30-Minute Meal with an emphasis on classic dishes.
Cooking Rookies is 21 pages of recipes for those who are over 12 with an adult helper. Recipes include pizza dough; four pizzas; egg sandwiches; baked chicken drumsticks; two kinds of tacos; simple take-out food and snacks; three dips; three desserts (including peanut butter kiss cookies); and some mocktails.
Just Desserts to me is the most charming section. Ms. Ray admits that baking isn't her thing; it's too much science and not enough art. So she always sticks to desserts that don't need baking. With that modest preamble, she shares 12 simple dishes that won't blow anyone away . . . but will satisfy those who want to indulge their sweet tooth at the end of a lovely meal.
Although the format isn't exactly in 30-minute style, everything here can be done pretty quickly. If you want a cookbook to make you look like a great party-giver without spending a lot of time, this is a great choice.

Cooking 'Round the Clock: Rachael Ray's 30-Minute Meals Review

`Cooking `Round the Clock' is by Rachael Ray, who is seeming more and more like an old friend, as this is the fourth of her books I am reviewing on top of watching her an average of 90 minutes a day on the Food Network and twice that on Fridays when her travelogue / celebrity interview shows air in the evening.
For those of you who really live the 30 Minute lifestyle and can't wade through my usual 1000 words, I will say that this volume is as good or better than it's `30 minute' precursors because it gives recipes for those times of the day which simply are not well covered by most cookbooks. And, Miss Rachael continues her previous style of easily available ingredients, very few `convenience' prepared foods, lots of fresh meats and vegetables, and no preaching about prowling local farmers' markets for the stuff which was in the ground two hours ago.
I continue to be impressed by the fact that both her '30 Minute Meals' and `$40 a Day' concepts were all hers before she started with the Food Network. And, after six cookbooks in about four years, I also like to think that all her recipes are also her own creations, although from the evidence of her acknowledgments and other chef / writers' practices (such as Jamie Oliver), I suspect a lot of Rachael's contributions to these books are rough drafts on TV scripts, cocktail napkins, and Dictaphones, all assembled and tightened up by a copy editor. My mother, for one, wonders how she can manage three shows AND cookbook writing all at the same time.
But, most of this is idle speculation and the real issue is how useful is Rachael's latest work to her core audience of busy young family members who like to cook but have no time to read Julia Child or Marcella Hazan or Paula Wolfert, or even `The Joy of Cooking' for that matter. One cannot discount the fact that looking for a recipe and shopping for ingredients may take as long as the time in front of the range. In this regard, Miss Rachael's recipes maintain the fast cooking lifestyle by not requiring any Internet shopping or trips to distant big city specialty markets.
This book gives lots of recipes for the neglected meals of the day, a hearty breakfast, a fast but tasty lunch, evenings in front of the TV watching a movie, and late night snacks. Among the more than 300 cookbooks I have reviewed, I have seen but two on breakfasts and one on sandwiches. Rachael fills this gap for people who want good, interesting food the other 23 hours of the day and don't have time to track down uncommon books by authors whose names they don't know. Nancy Silverton and Marian Cunningham may be foodie heroes, but the average 10 hour a day young professional does not know who these people are and whether or not they can trust their sandwich and breakfast books respectively. Rachael's `brand name' is a lot like that of Howard Johnson's in the 1950's. You know you are not getting gourmet fare, but you also will not get an unexpectedly poor meal.
In spite of the non-primetime dishes, these recipes still require a modicum of kitchen skills. Rachael's familiar aversion to measuring is not something you can acquire by reading. It takes practice and attention to what you are doing. Rachael's recipes also do not require a lot of kitchen equipment, but prep work and cooking will go faster if you have the right skills and a few pieces of high quality equipment. Topping the list of `not cheap' equipment is her Santoku knife, rangetop grill, two very good large (12 inch) saute pans, one or two large good Dutch ovens (8 quarts), an 8 quart pasta pot with pasta insert. A very good relationship with your oven's broiler is also necessary. I constantly envy her for her very retro range on her '30 Minute Meals' set. It is a much more convenient broiler than the floor level gas grill in most ovens. It is almost as convenient as a professional salamander.
Like most of her books, recipes are arranged by meal in the same style as her shows. This means that instructions for each meal show you how to organize the whole meal, not just a recipe at a time. The meals include:
Rise and Shiners (breakfast) with lots of scrambled eggs, French toast, scones, and hot cereals.
Let's Do Lunch with pasta salads, sandwiches, crudites, wraps, burgers, and did I say sandwiches.
Early Bird Specials with easy suppers based on chicken, thin pork chops, fast steaks, soups, and casseroles.
Sit Down Suppers with hearty retro recipes for slaws, grilled cheese sammies, linguini, and more burgers.
TV Dinners & Snacks with recreations of classic takeout dishes and finger foods.
Bistro Meals, or `Tony Bourdain without the swear words'.
Late-Nite Bites This chapter alone will have you keeping this book in your kitchen.
If all this were not enough to convince you, I offer the opinion that Rachael's procedure descriptions are quite good in that all prep instructions are given with the list of ingredients and each short paragraph begins with the most important verb. There is not a lot of instruction going on here. This is the recipe, the whole recipe, and nothing but the recipe. That's why you need to expect to make the most of Rachel's recipes only when you are comfortable in the kitchen with a very sharp knife and very hot oil.
One small caveat is that the pastel colored print can be hard on older eyes. I ran into more than one person who genuinely had trouble reading the instructions.
Rachael delivers the goods again to her core audience. Highly recommended if you like her show or her earlier books.

I've purchased two previous books from Robin Miller, one I liked, the other not so much so I was really wondering which way this third book would go for me.
The book is laid out in weeks. The weeks run from January through December (they aren't labeled as such) but she mentions in the introduction the 'warm you up from the inside out' meals will be in the beginning and the end with the warm weather menus that use fresh summer produce are in the middle.
Each week has 3 meals. I can't tell you HOW MUCH I LOVE THIS!! I've learned in the past that I don't cook 5 meals, regardless of all the shopping and planning I put into it, I just lose steam and don't 'feel it' come day four and five of the week. So the fact that she features three menu's for each day is WONDERFUL!
At the beginning of each week she lists the menu and a page entitled "Prep List"for example week 24 includes* Grilled Chicken w/Sherried Carmamelized Wild Mushrooms
* Baja Chicken Soft Tacos
**quick side dish: Olice and Tomato-spiked rice
* Seared Tuna w/Miso Broth and Sesame Soba Noodles
**Quick side dish: Chunky Tomato Salad
then on the opposite page is the "Prep List"
* Cook extra chicken for the tacos when you make the grilled chicken. (Refrigerate up to 3 days or freeze up to 3 months. Thaw overnight in the fridge before using.)
* Cook soba noodles for the tuna dish; toss with oil as directed (refrigerate up to 2 days).
The recipes are on the next three pages complete with prep time and cook time. I've never been one to prep ahead but I'd be curious to see how it works, I may have to try it.
The recipes are in a nice large font, the ingredients in bold with a lot of options for each recipe, ie; morphing into another meal, or a quick side dish option.
All in all, the book has a VERY NICE layout, pleasing to the eyes as you browse through it. There are two groupings of pics, not a lot but hey the book is $20 so I'm not complaining.
I GIVE THIS A TWO THUMBS UP or in this case FIVE STARS!!!

This book is for busy people who dont have a lot of time. People who would like to eat healthy with simple ingredients in under 30 minutes.Its great because you can eat well and lose weight too. It depends on your level of cooking of course. The author Haas includes seafood, vegetarian and entertaining meals. There's 150 recipes which include, soup, beef, chicken and dessert. Everything is broken down in terms of serving size and nutritional value. The only bad thing about this book is no pictures. Its great to add to your cooking library and it doesnt make you feel like your on a diet.

I buy a lot of recipe books, but most I don't use much. This one is different. I'll be cooking with it all the time.
A collection of 125 recipes, it is not meant to represent an entire diet. Instead, it's a cookbook of especially yummy dishes that just happen to be healthy, too. The recipes can be the foundation of a new way of eating, or serve as treats if you have already reached a healthy weight.
Author Devin Alexander makes it easy. Each recipe is either 100, 200, 300, 400 or 500 calories (within 10 calories), so it's easy to track your calories without a calculator. The dishes are, for the most part, healthy versions of your old favorite fattening ones. So, for example, instead of the typical 746-calorie, 38-grams-of-fat slice of chocolate cake, you can have a slice of Dark Chocolate Layer Cake with Buttercream Frosting for 294 calories and 6 grams of fat.
Each recipe also includes how many grams it contains of carbohydrates, cholesterol, fat, saturated fat, fiber, protein and sodium. Most also have this data for the traditional recipe, so you can easily see what you're "missing."
As someone who has managed a 55-pound weight loss for 16 years, Alexander knows her stuff. At the beginning of the book, she gives you options: Do you want to count calories or not? The author details a simple diet plan either way (based on your gender, age and activity level), shows you how to put together a weekly meal plan, and covers the importance of exercise.
The book itself is beautifully produced, with glossy paper, lush color photos and color-coded text.

Rachael Ray's Book of 10: More Than 300 Recipes to Cook Every Day Review

This book is not anything new or glaringly different from Rachael Ray's other cookbooks. So, if you already have 1 or 2 of her cookbooks and are looking for new types of recipes you might want to skip this.
However if you are a fan, this book is a good purchase - it has a different concept; at the beginning a list is given of family faves, best dishes to show off, and super easy. The sections consist of entertaining, stretch a buck, burgers, vegetarian, pasta, seafood, one-pot, chicken, meat and date night. The index is divided by dish names and ingredients.
If you don't have any of her cookbooks this would add to your collection.
The book is a paperback and does have to be bent/coached into laying open on your kitchen counter, but so far it has held together and seems solid. There is one recipe per page - easy to read and a few picture sections.
You will not find fancy French cooking here or complicated recipes, this book is pure Rachael Ray. She has such a huge fan base because of her personality and style and the relative ease of her recipes. If that's what you are looking for, this is for you, or the gift you are looking to give.
