Everyday Indian: 100 Fast, Fresh and Healthy Recipes Review

I have only had the opportunity to make a half-dozen of the dishes. But every one of these has been delicious.
Some real favorites in there: My Mother's Chickpeas, Cherry Tomato & Paneer Salad, Tandoori Quesadillas, Bal's No-Butter Chicken.
Several things stand out.
1) Beautiful photography of the dishes.
2) Entertaining narrative for each dish. I felt like I know the author after just reading a couple of recipes. Very, very warm and personal.
3) Focuses on fast - fresh - and healthy... just as the subtitle says. She got me on the grapeseed & flaxseed oil kick when I cook.
One note. You should take the time to prepare her masalas and various spice blends as it will help prepare some of the dishes.
One small criticism. Give me a list of all of the recipes that use a given masala.
Still give it a 5 star. Please note the 3 star of another reviewer was a criticism that the book was not cut correctly. Not really a reflection on the content of this book and hardly the author's fault.

I own about 45 Vegan and Vegetarian cookbooks and this one is the best! Head and shoulders above the rest. It's recipes are easy to make. They are also incredibly delicious and nutritious! No need to sacrifice taste for good health when you have this gem in your library. The Indian breakfast cereal is now a staple in our house. If you don't own this book do yourself a favor and purchase it. You won't be sorry!

As an indian I can tell you, these recipes are as close as you can get to authentic indian while staying low fat.
I must admit this cookbook sat on my shelf for a long time because I loved Mathu Jaffrey's time consuming and complexly spiced recipes if I was going to use a cookbook. The cooking we have always done at home used alot of specialty ingredients and took a lot of time, it seemed to me that simple low fat indian couldn't be any good.
BUT I WAS WRONG! The recipes in this book are EXCELLENT. Very close to authentic while using ingredients you can find almost anywhere and VERY HEALTHY. Imagine that!
The recipes in this book are low-fat, low cholesterol and low sodium while being very flavorful and fresh tasting. The nutritional lable at the end each recipe is very complete also. For example, for beef samosa's, she has 2 different ways of cooking them, fried or baked. Then she includes 2 nutrient analysis for each way of cooking it. VERY NICE!
Also each nutrient analysis has a breakdown for sodium with salt included and sodium content without AND a saturated fat versas total fat breakdown.
The last 40 pages have info on :
indian spices and their usages and flavor
American, British, Australian, and Metric conversion
oven temperture conversion : F versas Celcius
explaination of proteins, fats, carbs, and sodium Table of desirable weights for men and women
differences in cholesterol cooked and raw
balanced diet info
and a nutritional breakdown table of "common" foods although it includes items like lentils, bulgar and veal.
The only minus is that this book has diagrams (for somosa wrapping etc.) but no color pictures. :(
Overall I'd say this is a wonderful book for people interested in fitness or dieting and exotic foods! Not a single item in this book is swimming in fat, like most indian cookbooks are.
I would buy this book for cooking for myself daily and a Muthu Jaffrey's (high fat) cookbooks for cooking for special occassions and guests.
Defionately buy this book, it lives up to it name!
Another good cookbook low fat cookbook I would recomend is "Easy Exotic : A Model's Low-Fat Recipes from Around the World" mostly indian, some asian. Very good too!

Recipes in this cookbook are straight-forward and produce great results. I particular recommend the fish in coconut and coriander sauce (mashli ghashi) and leaf-wrapped fish (patra-ni-machchi). Chicken in yogurt (dahi murgh) was also a big hit. The author is especially attentive to the use of spices and gives clear instructions to get the most from them. It takes time and attention to produce a main dish and vegetable, but it is worth the effort.

I've been eating Indian food for over 30 years and cooking it for over 20. I can't believe the few negative comments about this book. You do NOT need a pressure cooker. You will very soon be making food better than any Indian Restaurant in the US. I have made about 15 of the recipes without a single dud and four of them are now absolute regulars at our house. It is FAR better than all the other books with fancier photos or millions of recipes.

I first flipped through this book when I was a teenager almost 18 years ago. I have to admit I was a little put off my the ingredients and techniques that were all so new to me. Years later I gave it another look through. Being a vegetarian at the time, I was missing Chinese food and wanted to try making some of my own. I bought this book and that was it for me. Every weekend I found myself exploring Chinatown, Little India, Japanese, Korean and Thai grocery stores. Afterwards I'd run home and whip up some outstanding meals.
Since then, I've collected most of Madhur Jaffrey's books and my kitchen has truly transformed. I fell in love with Asian food, so much so that I packed up my cases and headed over here to Asia.
This is truly an inspirational and indispensable book. Her Chinese dishes are among the best and her Indian ones are far better than any dishes I've ever had at any Indian restaurant. The tomato chutney is out of this world!
This book is a great launching pad if you're a vegetarian and want to learn how to cook. It's a great alternative to the gaseous bean-filled or heavy-handed cheese recipes in other Western veggie cookbooks. It's also a fantastic cookbook if you want to venture into Asian cooking. Give it a go!

Since I have Type 2 diabetes and have successfully reversed it by switching first to a lowfat vegetarian diet, and then to a lowfat vegan diet (with even better results), I was thrilled to find a vegan cookbook which highlights my absolute favorite cuisine, the cuisine of India. As I began to read, learn, and cook from the Indian Vegan Kitchen, I realized that I had finally found someone who could explain Indian cooking techniques, ingredients, and recipes in a way that made sense to me as an American. It is clear to me that Madhu Gadia understands the kind of necessary background information and instructions that an ordinary American like me needs in order to transform her own kitchen into a palace of Indian delights. I have made quite a few recipes from the Indian Vegan Kitchen, all with their own distinctive flavors, and all successfully delicious! So far I have made a Kidney Bean dish, Carrots and Turnips, Black-eyed Peas and Potatoes, Zucchini, and Black Gram and Bengal Gram Dahl. I follow her recipes exactly, but have adjusted the ingredients to meet my health needs. Namely, I have reduced the amount of oil and salt. I also reduced the amount of cayenne pepper, since we like spicy, but not really hot food. That said, the recipes themselves have resulted in some very healthy and enjoyable eating at my house, and I can't wait to try the rest of the recipes in this cookbook. Madhu Gadia has included very helpful information on Indian spices, as well as the dals (beans and pulses) used in Indian cooking. She explains the basic techniques of Indian cooking, too. AND she has a website, [...], from which she is able to answer any questions you might have about her recipes or about Indian cooking. Before this cookbook, my husband and I were dependent on Indian restaurants for good Indian cuisine, but now my own house smells as fragrant and enticing as an Indian restaurant! But I enjoy it even more than a restaurant, because I know that all the recipes are vegan. I have already recommended this cookbook to many of my friends, and would recommend it to anyone who loves Indian cooking. I look forward to trying her New Indian Home Cooking cookbook as well. Thank you, Madhia! This is a dream come true for me.

My husband and I both love Indian cuisine and have tried many times over the years to cook it, much to our disappointment. We've purchased many Indian cookbooks, but we could never get the recipes to turn out very good. We had almost given up and resigned ourselves to only eating Indian food at restaurants. Then I found this book. It came recommended to me by some Indian friends who said it was easy, authentic & they enjoyed most of the recipes. So far, every recipe we've tried has been great. I am getting results as good or better than restaurant fare for the first time in years! And the recipe presentation is so easy, I'm even trying to make some of the recipes that I used to think would be too hard, like some of the stuffed breads. I have a lot of cookbooks, but I find myself making recipes out of this one all the time. There are also plenty of quick recipes, so even if you've had a long day, you can still have great Indian meal in a half an hour. If you like Indian food, you won't be disappointed with this book.

Lite and Luscious Cuisine of India : Recipes and Tips for Healthy and Quick Meals Review

I found this book under its old title "Lite and Luscious Indian Cuisine" at the library. I am hoping that only the title has changed, because it's a great book! Ms. Gadia writes in a very conversational way... I feel as though she comes through as a "real person" rather than just an "author"...the recipes are really down to earth as is her writing style. Not many esoteric ingredients are called for (I have a problem sometimes with pantry overload from Indian/Asian cooking...I probably have more kinds of spices in my cupboard than the average Indian person!). It bothers me at times in certain cookbooks when a recipe calls for half a teaspoon of a particular hard to find spice, then doesn't call for that ingredient again in the rest of the book. One ends up with a real overload of spices if you are not cooking Indian every day (especially if you are not cooking for a large family to begin with). In this book some ingredients might be specialized, (asafetida, cardamom pods, etc.) but most of the recipes seem to utilize what is available on hand in your average town (Ms. Gadia lives and works in Ames, Iowa...not New York or Chicago). Those who are on specialized diets will appreciate her tables for food exchanges and nutritional info, too. All around, this seems truly to be "home cooking" and a labor of love!

I just finished reading the book, "Grains, Greens and Grated Coconuts".

What a fantastic treatise! Congratulations to the author on a superb job!!
This is not just a cookbook but a review of the transition of a way of living from the past to the present.
There is something fascinating about Kerala. They seem to maintain their traditions for a long time. Some activities (Harvesting the coconuts for example) are the same today as they were in year 1342 as described by Ibn Battuta. I always felt that if we want to go back and live few centuries back, one of the best ways we can do is to go to Kerala and stay in a remote village.
But for many in Kerala, the past few decades have brought the biggest change in their way of living. A society that lived a matrilineal way of life is changing to patriarchical. Joint families of 50 to 100 members living together have disappeared. Individual kingdoms are no more and their special kitchens are gone. Families have become global rather than local.
So we may feel a need to look at the past and review the shift in culture from the past to the present.
This book fulfils such a need. What a "delicious" way to "taste" the past through a cookbook from a person who has experienced the change, first hand. Author has done a magnificent job. Not only has she given us descriptions of festivals throughout the year, family functions, the typical food served at each occasion and their recipes but also the history behind some of the ingredients. What a treat!

I thoroughly enjoyed reading the book. Congratulations to the author.

I've really enjoyed Bal Arenson's Spice Goddess cooking show on TV, enough so that I've looked up a few of her recipes online to make for dinner. When I found that the library had a copy of her new cookbook, I grabbed it. I'm glad I did.
Most Indian cookbooks (and ethnic cookbooks in general) make a big deal about teaching you to cook authentic dishes, just like Mom used to make. Sometimes they take shortcuts for time or because we can't get the same ingredients, but the expectation is that we are approximating a "real" Indian dish. What I like about Bal is that while she celebrates the spices and flavors of India, she is happy to use North American ingredients. (You may need to go shopping for some of the spices, but most of them are available mail order, and I'm lucky enough to have a Penzey's Spices store nearby.) Her attitude seems to be, "If salmon was available in India, this is what we would have done with it."
The author also puts a lot of emphasis on making the food healthy and, if not precisely "ready in 30," at least easy to put together on a busy weeknight. If you have a complete spice pantry (mine is 5 feet high, in what was built to be a DVD wall unit), you only need a few items for a tasty dinner. For instance, "coriander tuna with broccolini" uses crushed coriander seeds as a crust on the fresh tuna, served with steamed veggies spiced up with toasted mustard seeds.
There's a good balance of meat, fish, and vegetarian options. So far, the only dish I've made from the book is "chicken with almond butter," which met my criteria for a healthy midweek meal. (She notes, "Almonds are a good source of monounsaturated fats, vitamin E, magnesium, and potassium.") In addition to the chicken breasts and 1/4 cup of almond butter, it uses garlic, a tablespoon (!) of fenugreek seeds, coriander, and a cup of chopped tomatoes. It went together very quickly and was a solid YUM.
Next up on the What To Make For Dinner list is "maple cardamom salmon," served with bok choy and ginger. Or maybe it's "eggplant and sweet potatoes with cherry tomatoes" (seasoned with fresh ginger, cumin seeds, and garam masala). Hmm. These are fun choices.

This is the best book on Indian food that I have come across.It has low fat,healthy recipes and in no way does that compromise the taste of the dishes.I have almost a dozen books on Indian cooking but this is the one I refer to all the time.All the dishes I've made so far are absolutely authentic.I'm an Indian who lives in USA and love to eat authentic Indian food.This book helps me eat the way I did in India.I've had the older edition for many years and am glad to see there's a new edition now.If you have to buy one book on Indian Cooking ,get this and skip the others.You won't regret it!

If you're going insane on a low sodium, low fat diet then get this book!! The recipes are flavorful and rich without the salt and fat of traditional Indian cooking. Some really innovative ways of adding flavor to food (like the fat free coconut milk recipe) had me questioning the recipes but everything I tried has come out absolutely perfect. Ayurvedic Healing Cuisine Review

Ayurveda is an ancient system of medicine from India that emphasizes the healing properties of food. As Harish Johari says, "food is something very personal and it should never be eaten for taste alone; its purpose is to provide nutrients and satisfaction to the body, without introducing toxins." Johari, a Tantric and Ayurvedic scholar, wrote twelve books, as well as produced audiocassettes and CDs, before his death in 1999. Ayurvedic Healing Cuisine: 200 Vegetarian Recipes for Health, Balance, and Longevity, published posthumously, "explains the healing qualities of various foods and spices and recommends combinations appropriate for specific conditions of body and mind."
Johari first introduces the principles of Ayurveda, fully discussing the role of the five elements and describing the doshas--a way of classifying body types and temperments. He also explains that there are six tastes--sweet, sour, salty, bitter, pungent, and astringent. Each of the tastes has a different effect on the body. Foods are further classified as to whether they are hot or cold and heavy or light. These attributes also affect the body in various ways.
Understanding how foods interact with one another and how they effect the body provides a foundation for healthy eating. Johari maintains that "most diseases are the result of wrong eating habits and/or of eating antagonist foods."
He also includes information on the nutrients in food, such as protein and vitamins. That's followed by a section describing the healing properties of specific foods. He suggests using milk as a source of protein, rather than meat or eggs.
The bulk of the book is devoted to recipes, including how to prepare various Indian spice mixtures. All of the recipes are Westernized versions of Indian foods and use ingredients that can be obtained in the West. Many are prepared using a wok. Johari presents recipes for snacks, dals, main dishes, salads, condiments, breads, desserts, and beverages.
Appendices include menu suggestions, and several special recipes for children and the elderly. He finishes with a list of spice and specialty food suppliers.
Readers interested in applying the ancient wisdom of Ayurveda healing to contemporary lifestyles will find both an excellent reference and delicious recipes in Ayurvedic Healing Cuisine.

The Healthy Cuisine of India is a GREAT cookbook. I LOVE the recipes in this book. This is my first and only Indian cookbook so I can't really compare it to other Indian cookbooks. But I do know that I enjoy the food from these recipes even more than eating out at Indian restaurants. The author gives lots of details explaining the different types of spices and how to prepare them. There is also some discussion of the lore associated with the various recipes. And the food tastes GREAT. Highly recommended.

I liked this cookbook a lot. It is well organized, doesn't make many assumptions (Uses the Imperial/Metric and "American" systems of measurement), and easy-to-follow recipes (most have 3-5 steps). Really liked the Aloo Tamaatar Bhurta and the Bhaante Ka Bhurta.

Another reviewer panned this book b/c she bought it simply to "know Padma better." This is a cookbook, not a biography. The recipes are delicious, low in cholesterol and low-fat. They are easy to make and the instructions are clear, so the book is accessible to new cooks but still interesting for those with more experience in the kitchen. I think this is a terrific book, the recipes I've used have all been delicious (especially the Spinach and Garbanzo Tapas). I highly recommend it.

My initial skepticism about cooking Indian food in minutes was quickly dispelled after making some of the taste-bud-popping recipes in this cookbook. I'm from the old school (Madhur Jaffrey cooking style of Indian food) which makes no apologies for long and elaborate recipes. So I had to read Gourmet Indian in Minutes by Monisha Bharadwaj from cover to cover before I tried even one recipe. I fell in love with the pared-down versions of classic Indian dishes. The photographs are the best I've seen in any cookbook of any food style: elegantly enticing, the best mingling of colors, attractive to the point of seductive, literally demanding you to taste this alluring dish.
Monisha Bharadwaj approaches her cooking with high standards recognizable in all the recipes of her book. The dishes must be authentic in taste, nutritional, quick to make, and beautiful to the eye. I come from long line of cooks who, unfortunately, paid little attention to the latter. I now love to make my food look beautiful since I have discovered that food tastes even better if it looks enchanting. Bharadwaj is a master at marrying food with beauty.
Make no mistake, these dishes are delicious and will satisfy your demand for authentic Indian food. I delighted in Tamater Mahal, a salad of "tomato castles" that very much reminds me of our Italian tomato salad, a favorite with my family. Bharadwaj includes an extensive section of lamb dishes such as "Lamb in Cashew Sauce", "Meatballs with Fennel", and a delicious appetizer of "Skewered Lamb in Spices" which is heavenly. When it comes to Indian cuisine, I have gravitated to the vegetarian dishes, though not exclusively. I would consider myself not a fan of tomato soup, but I loved the "Tomatoche Saar", a spicy tomato soup. This recipe indicates that I'll eat anything if you put enough spices and flavors in it! The Vegetable section and the Lentils, Beans, and Seeds sections were my overal favorites. I could wax ecstatically over the "Chole Panjim" (chickpeas in blazing red coconut curry), Beans Tikki (potato cakes topped with red beans), etc., but I'll spare you my gushing. You get the point. Suffice it to say, this section on pulses has some of the tastiest -- and quickest -- Indian dishes I have ever tried.
To get the most out of Gourmet Indian in Minutes, it is imperative you read the introduction and stock your pantry with Bharadwaj's list of spices, pastes, and food items. She offers shortcuts on various pastes and spices that will cut down the preparation time. If you do not adhere to these helpful hints, it is unlikely you will find the recipes quick to make. Follow Bharadwaj's helpful pointers in the Introduction, and the recipes that follow will be easy and completed in minutes.

I had always been intimidated by the ingredients lists in many Indian cookbooks then I took a class with the author. WOW! This book is incredible. Instruction is easy and clear with wonderful serving suggestions. The ingredients are easy to find in my grocery store. My favorite recipe is homemade paneer cheese (p. 165). It is super easy to prepare and always looks elegant in any dish. The paratha (Calcutta Plain Flakybread - p.82) is also very easy and tastes wonderful! This is an outstanding book for vegetarian and non-vegetarian alike.

The Healing Cuisine: India's Art of Ayurvedic Cooking (Healing Arts Press) Review

I could write a very long and thorough critique of this book, but i won't. i just want to make a few points. First & foremost is that this is the only book of its kind (that i'm aware of); that is, it's a vegetarian indian cookbook based directly on ayurvedic science, with a complete introduction to ayurvedic theory & application... and it's vegan-friendly... (there's a small section of the recipes devoted to paneer cottage cheese and yogurt, and some of the other main recipes call for yogurt or cream, but these are few comparatively, and of course soy could be substituted).... As an introductory guide to ayurveda, it is pretty good (the organization isn't the best, compared to "Ayurveda" by Dr. Vasant Lad, which is the *only* definitive modern introductory guide to ayurveda that is clear, concise, thorough, complete with practical application).... Johari covers food and spice qualities and combinations and how to apply all of this to best suit your constitution... this is really good stuff & easy to grasp... his recipes are *superb* & come from his intuition.... (keeping it short): my only "complaint" is that there is no verbage to go along with the recipes; that is, which constitution the recipe is best for; what it will aggrevate or subdue; how the individual spices & veggies are working together in the recipe... example: at the beginning of the recipes, i'd like to see something like "This will subdue vata & kapha & aggrevate pitta; such & such spice prevents gas formation; such & such spices are digestive tonics; tonic for such & such conditions; good winter dish"..... In sum, vegetarian indian cookbooks are indeed rare (why is this?).... this is the *BEST* i've ever come across.... ("Classic Indian Vegatarian & Grain Cooking" is not all that great)
