Over the years, I've bought and used recipes from Cooking Light. For me, it's one of the most trustworthy sources for revised recipes that still taste good. So, when I saw this at the supermarket, I picked it up. (Should have gotten it from Amazon. Cheaper here, but it was one of those impulse buys, ya know?)
Not a lot of recipes. For someone like me who can't eat seafood and won't eat gluten/most grains/starches, yeah, not much to choose from. BUT..that's fine. I love cookbooks with recipes and lighter cal versions and from a trusted source.
What do you find here?
~ Soft back style, so handle with care
~ 89 recipes and some pages with hints on handling food items. For pretty basic, mostly useless cooks like me, pictures and hints and simplicity is a necessity. If you're a crack cook, hey, you don't need this, right?
~6 sections in usual cookbook format: Appetizers/Snacks/+, Beverages, Entrees, Salads, Soups, Desserts.
~Purdy pictures
~You can flip through yourself and see lots of recipes with FEW INGREDIENTS on the list. I like that. I'm all about simple.
~Nutritional info on the page with the recipe, picture opposite.
~low carb dishes are tagged with a "recipe benefit" doohickey under nutritional analysis.
~some dishes are tagged as having the recipe benefit of "low fat".
~some recipes have a "choice ingredient" special little profile, like prosciutto in one or rosemary in another, etc.
~a 2-page spread with pics showing "5 Healthy Office Snacks". They're pretty basic, but some folks need to know this. I can only really allow 2 of them (fruit; nuts) and rarely allow the third okay one (hummus/veggies) on my particular plan. But others can have PB/crackers and popcorn without undue issues, I suppose. :D
~2 page spread on Snacking Strategies.
~ 2-page spread on the 8 top Secrets of Portion Control
~2-page spread on how to choose the healthiest meats and poultry and what portions are like
~2-page spread on how to make delicious and show-stopping salads.
~2-page spread on essential salad greens and another "all about oil"
AND MORE...(I got tired of typing, sorry)What I want to try very soon:
Grilled pepper poppers. The picture made my mouth water. I'm all about cheesy-creamy. Mmm.This is low-carb, and it suits my taste.
Mediterranean Style Frittata: ooh, I'm so there with the feta, spinach, etc. I eat something similar to this regularly, just not as frittata, as omelet.
Ginger Lime Beef Stir Fry : Hubby would dig it.
Chicken Salad with Asparagus and Creamy Dill Dressing. Mmmmm
Lemon Caper Pork Medallions: I adore capers. I love capers with lemon (a la chicken picata). I've made a more caloric version from a Cooking Light years ago and it was insanely good. This should work, too. 168 cals per serving. Oh, yeah. That works!
Sweet Potato Leek and Ham Soup. YUM! It's starchy, but I'd try it. It has the recipe benefit of "low fat".
Chicken Cutlets with Fontina and Blueberry Sauce: whoa, that looks luxurious! And it's got mustard and thyme. Yeah!
Mango lassi: mango is my fave fruit. And while I'll need to sub for the sugar, it's very me-friendly and tasty and probiotic-ey. :D
I can't eat seafood (allergy), but if I could, the Sunflower Crusted Orange Roughy looked killer nummy.
The Yucatecan Rice Salad, with brown rice and beans and chunks of Jalapeno Monterey Jack, fresh cilantro and green olives looks like a rare indulgence I'd allow (I try not to have much rice, the starch and all), but man. That picture is tempting.
Also tempting, Smoky Black Bean Soup with Avocado-lime Salsa. It's worth breaking the eating plan for some o' dat!
Desserts include Lemon Pudding Cake, Marsala Poached Figs, Triple Chocolate Pudding, Dulce de Leche Tartlets, and Coconut -Oat cookies.
Anyway, after losing 114 lbs (with 25 to go, and a lifetime of maintenance ahead of me), controlled calorie, yummy-food cookbooks with EASY recipes call my name.
Maybe they call yours, too. :D
