I purchased this cookbook when I was given a dutch oven for Christmas. I was excited about the gift, but wanted to learn more about how to use it. The recipes in this book have left me underwhelmed thus far (I've only had it about a month, but I've made two to three dinners from this book a week, so it's getting good use). Some are definitely yummy (Chicken Satay stands out as my favorite), but some just didn't seem to have as much flavor as I was hoping for. Regardless, this cookbook is a must-have for learning how to cook in a dutch oven. I've come up with my own recipes and ingredients, but cooked them as advised and explained in this book and everything comes out wonderful!!! I can't believe how quick and easy it is to get dinner on the table now!
Another note - most recipes call for baking in a 450 degree oven, but my dutch oven (Lodge Color Enameled Cast-Iron 6-Quart Dutch Oven, Island Spice) indicated that it shouldn't be used above 400 degrees. I kept the oven at 400 and kept a close eye to see if I would need to modify the time, but didn't - everything still cooked up perfectly and in the noted time.

One Pot French: More Than 100 Easy, Authentic Recipes Review

In Jean-Pierre's own words: "French cooking is about complexities ... Can this all happen in a single pot? I think it can. I admit I may bend the parameters in certain places" (Challet & Decorte, 2008: 6).
The preceding quote, taken from the introduction to this book, pretty much sums up my thoughts about it. However, I would choose to replace the word 'bend', with 'ignore' and give greater emphasis to the word 'think'. This is a recipe book that does give an excellent introduction to classic French cuisine from basic recipes, to appetisers, soups, salads and sandwiches (obviously cooked in one pot?!?), egg and cheese based dishes, potato dishes, main courses; and last but not least deserts.
However, what this book is `not' is a focussed guide to rustic `one pot' (i.e. casserole/stew style cooking) French cooking, as one may be led to believe on first impression. It is simply an introductory guide to some of France's most classic recipes, which happens to include 'some' one pot dishes.
If the title of the book had been pitched to match it's content, I would have been inclined to give it a higher score. For as an introductory guide to classic French cuisine, this book serves it purpose well.

I love my other cookbooks BUT they often are separated into appetizers, meats, vegetables, pasta and rice, desserts, and drinks. Yikes! I needed a cookbook where all the different food groups are together in one dish. Who has time to make four different things just to have a complete meal? This cookbook is the perfect solution.
It offers over 320 one-pot recipes that are all complete meals. There are soups, stews, casseroles, skillet meals, and more. Most of them have a meat and beans, rice, pasta, cous cous, polenta, or vegetables. You can substitute meats to make it healthier. For instance, I substitute smoked turkey sausage if the recipe calls for chorizo. There are also some vegetarian meals.
The food tastes great! Each recipe is well-seasoned. Most of them don't even call for adding salt. I cooked the chicken chili today (seasoned w/ chicken broth, cumin, and ground red pepper) and it was excellent. I felt like I made something that would be sold in a restaurant. Other dishes that I look forward to making include the baked fish and potatoes, paella, potato and corn chowder, shepherd's pie, dublin stew, beef and spinach stir-fry, curried chicken and peanut stew, pan-roasted garlic pork with vegetables, thai vegetable fried rice, baked spaghetti, cream of potato soup, tomato noodle soup, and chicken and dumplings! This cookbook is great for single, busy people who might want to fix a filling dish that they can eat for leftovers throughout the week. One might also easily take leftovers to work because you'd only need to take one dish. Each recipe lists the amount of time it will take and they range from 15 minutes to several hours in the slow cooker.
There are plenty of recipes that have everyday ingredients. Some of them call for things I have never used (e.g., dry white wine, leeks, saffron threads, or rutabaga), but the recipes look so mouth-watering that I might try them. The book has about 10-20 ingredients on average per dish. However, because these dishes can be eaten for several days as leftovers, I haven't found the ingredient lists to be cumbersome.
Finally, this book has lots of beautiful pictures of the dishes. The pictures are so mouth-watering, that you can't wait to get the ingredients and try them.
