Watch out for the salt content on some of the recipes for chicken that also has a cooking sauce, such as Chicken with Mushrooms and Lemon Grass Chicken. I reccommend 1/2 teaspoon salt for 10 oz of meat or 1 teaspoon per pound of meat; you can always add more but you can't remove them once they're in.
Original review:
This is a nice cookbook with no personal or cultural anecdotes, just simple recipes with practical ingredients and very good results. The recipes are laid out one per page, with photographs of the dish, the ingredients and preparation. With so much photos, the instructions are necessarily streamlined, which works for many of the recipes except for a few, like beef pho. Telling one to combine all the ingredients in boiling stock and cook over low heat just won't do for pho. It assumes you know a thing or two about preparing this soup, like how long to simmer it. I reccommend at least an hour or more.
There is a wonderful recipe for chicken simmered in coconut juice and flavored with Maggie sauce, which is essentially Ga Roti in my book. It tastes just like my mom's and no other vietnamese cookbook I've come across have it. In fact, the ingredients the author uses are exactly my mom's, except she would measure in pinches and tads and touches of this and that. Ditto for the caramelized pork and eggs (thit kho & trung).
There is also an ingredients list containing color photographs that is handy for shopping.
Overall, a good selection of easy, homey, delicious recipes like bun rieu, bun suong (another hard to find recipe), and vietnamese sandwiches. Also, if you like cookbooks that contain more photos of how to prepare the food and optimal (minimal) use of words, this is a good choice.

I love Vietnamese cuisine, and this book allows me to easily incorporate it into my everyday diet. The ingredients are easy to find in chain grocery stores and I can use ingredients I buy in multiple recipes, making the book economical. I recommend preparing your own chicken stock (have it on hand in freezer). It improves the taste of the recipes. I grow my own Vietnamese herbs in the summer, and the book will give me lots of opportunity to use them on the fly. I have also lost a little weight cooking from this book because the dishes are flavorful (be sure to use the Everyday Dipping Sauce) and healthy, and replaced microwaved and canned meals. Many books may be more in-depth, and not every dish is absolutely fantastic, but if you need something for the busy weekdays, this is a good choice.

I've been eating Indian food for over 30 years and cooking it for over 20. I can't believe the few negative comments about this book. You do NOT need a pressure cooker. You will very soon be making food better than any Indian Restaurant in the US. I have made about 15 of the recipes without a single dud and four of them are now absolute regulars at our house. It is FAR better than all the other books with fancier photos or millions of recipes.

My husband and I both love Indian cuisine and have tried many times over the years to cook it, much to our disappointment. We've purchased many Indian cookbooks, but we could never get the recipes to turn out very good. We had almost given up and resigned ourselves to only eating Indian food at restaurants. Then I found this book. It came recommended to me by some Indian friends who said it was easy, authentic & they enjoyed most of the recipes. So far, every recipe we've tried has been great. I am getting results as good or better than restaurant fare for the first time in years! And the recipe presentation is so easy, I'm even trying to make some of the recipes that I used to think would be too hard, like some of the stuffed breads. I have a lot of cookbooks, but I find myself making recipes out of this one all the time. There are also plenty of quick recipes, so even if you've had a long day, you can still have great Indian meal in a half an hour. If you like Indian food, you won't be disappointed with this book.

The Vietnamese Cookbook (Capital Lifestyles) Review

Diana My Tran's unassuming cookbook is a real treasure for several reasons:
1) Recipes are easy and tasty!
3) Lots of Vietnamese dishes that are ubiquitous in the home but uncommon in Vietnamese restaurants.
2) No boring, pretentious, affected prose about how charming life in Vietnam was before the war a la Mai Pham.
4) Recipes do not compromise authenicity but their flavor profiles should appeal to the Western palate.
5) Color photographs of the star of any cookbook - the food.
I am Vietnamese and I've bought all of the popular Vietnamese cookbooks on Amazon. This slim little book by a woman who is not a professional chef is the best one out there for all of the reasons above. It's not a perfect 10 because Diana My Tran doesn't use caramel sauce and recipes like Ginger Chicken and Caramel Shrimp should start with caramel sauce. Honey just doesn't work -- you're better not even attempting it. Also the Pho Bo recipe is way too streamlined -- but if you live in a major metropolitan area then there's no reason to make it at home when you can just go to your local noodle house. The best thing about this book is the large number of Vietnamese recipes like Butternut Squash soup that my Vietnamese mother makes (before I bought this book, I thought she invented it) but no restaurant would serve. I recommend it to all of the young Vietnamese people who never learned to cook and also to anyone who's looking flavorful cooking that isn't scary.
