I found your book and was glad that I bought it! The empanadas recipe was a Godsend as I was paying a wonderful Spanish lady for her homemade goodies for sometime... I will miss talking to her, but at least I have my empanadas and don't have to wait! Wonderful book , great recipes, different tastes! How could you go wrong?????

Easy Bread Machine Baking: More than 100 new recipes for sweet and savoury loaves and shaped breads Review

I found this book to be easy to read and use. Yes, sometimes it does call for different ingredients, which make for a different taste. That's one thing that makes it special. It is not just the usual rehashed recipes for the same old breads. The breads, and the absolutely BEST sticky buns I have ever tasted, turn out beautiful to look at and delicious to eat. I have been using breadmachines for at least 10 years and have numerous books. This is one of my favorites.

125 Best Quick Bread Recipes Review

I'm a 33 year old Dutch lady how likes to bake. Quick breads or not common/known in Holland. I started once with a chocolate/bananabread which the family loves (my 7 year old nephew claimes that he gets better pronto after eating the bread)!! So started to find more on the www, and purchased some books. This is the best, because it gives you background info and easy to follow recipes. Family & Friends love the Zucchinni/cranberry loaf and the apple upside down cake (my brother in law, who is an pro cycleracer, ate 1/2 of the cake within 15 minutes, forgot his dieet.

Whole Grain Breads by Machine or Hand: 200 Delicious, Healthful, Simple Recipes Review

First of all, this is a lovely book with wonderful information.
But the title "Whole Grain Breads..." implied to me that the recipes would incorporate only "whole grains" to the exclusion of white flours. Nearly every recipe I looked at had a large proportion of white flour.
Oh well, Borders willingly accepted my return...I'm off to search again!

Gluten-Free Baking Classics for the Bread Machine Review

This cookbook is the only one out there for GF Bread-Machine Baking. The book has good recipes and a great flour mix. But I have a problem with her problem fixes and her some of the instructions. The bread machine specific programing instructions, (which take about %10 of the book) only apply to one brand of bread machine, you'd think she got royalties. Her fixes to common problems all start with, "if you read the recipe, and bought the same brand and model of machine I have then you would have no problems". In fact she is wrong. You can use another brand and you can alter the instructions for your needs. They also don't cover basic bread error fixes, like sour smell when mixing (too much yeast or your yeast is bad) and dampness (de-pan after minimum cooling). You need to consult the gluten-centric bread-machine manual for these.
I have a 10 year old Breadman model TR-440. I can make perfect bread-machine bread.
I use her flour mix and mostly follow the recipe for sandwich bread. I alter it in that I use olive oil instead of canola oil and I use unsweetened almond-milk instead of dairy. I do let all my inredients come up to room temp before I start.
I set my machine for #2-Basic Medium Crust. I scrape down the sides during the first mix with my silicone spatula.
Then I walk away. It beeps for fruit and nuts addition, I scrape it down again.
Then an hour and a half later, it beeps for done.
I take it out, cool it for 10 minutes then de-pan. Let is cool for another 20, and Yum-pass the buttery spread!
Oh and don't try to use her flour mix to make bread machine bread with Betty Hagmann's bread machine recipes, it does not work well.

125 Best Gluten-Free Bread Machine Recipes Review

When we got started with gluten-free bread making, we bought three books and a Zojirushi BBCCX20 Home Bakery Supreme Bread Machine. The first recipe we tried was from the bread maker manual, which turned out heavy and relatively tasteless. Our second recipe was the breadsticks from this book (page 146). We made them exactly as the recipe described, and scored a delicious success.
The best part of this book is its completeness. Each recipe includes full ingredients and instructions, like most books. But it also includes specific instructions on measuring the temperature, customizing machine cycles, etc. We learned a lot by making recipes from this book before trying recipes from our other two books.
To be successful with gluten-free bread making, you need the right machine. Pages 15-19 of this book give specific recommendations on how to choose the right one. If you want my one sentence answer, buy the Zojirushi, which meets all of the requirements described there. You need a machine that can handle gluten-free dough, which is often thicker and heavier than wheat dough. The Zojirushi has two paddles in a horizontal baking tray, instead of one paddle in a vertical tray like many smaller machines. It is also programmable, which helps a lot. More tips:
* Make each recipe EXACTLY as recommended the first time. That will allow you to compare any changes you make with the results obtained by the authors.
* Measure ingredients exactly, particularly flours. Don't pack the flour into the measuring cup, just scoop into the measuring cup and scrape off the excess. If you tap or otherwise pack the flour into the cup, you'll end up with too much of that flour, by perhaps 20% or more.
* Measure temperature after baking cycles, as often recommended in this book.
* If you have hard water (ours is very hard) use bottled spring water for baking. This can make a surprising difference.
Gluten free baking requires practice, but the result is worth the effort. Enjoy!

200 Fast and Easy Artisan Breads: No-Knead, One Bowl Review

First off: I was very experienced in no-knead breads even before buying this book. I write a bread blog (breadland dot blogspot dot com) and have been experimenting with this method for almost a year, using many types of flours, shapes of breads, combinations of refrigeration, freezing, etc. You can find out a lot about no-knead breads online, which is great.
And take it from me: no-knead bread is INCREDIBLE! It was eye-opening to me, and believe me, I love to make breads the traditional way, kneading by hand if and when I have the time. But the airy, open texture, the hard, crisp crusts, the well-developed, almost sourdough flavour of no-knead bread was truly a revelation.
But I found I was looking for a book which would lay out a whole bunch of no-knead recipes, nice and easy, without having to search the Internet or make up my own formula, which might or might not work. This book does that.
I chose 200 Fast & Easy Artisan Breads over Artisan Bread in Five Minutes a Day and another one called Baking Artisan Bread, by Ciril Hitz, which is the same no-knead idea, and also includes a video, because this book seemed to offer more genuine recipes, not just reworkings and different shapes of the same dough. Also, it's less expensive than a few of the alternatives, probably because it's a paperback, and that's okay with me.
There is still a time and place for kneaded breads (by hand or machine) in the cook's repertoire, but since I'm usually cooking in a hurry for my family of six, this technique and my big "dough bucket" have saved me tons of time - and with this book, I can keep saving time while flipping through recipes to discover new and exciting favourites.
I'm not sorry I bought this book: it covers the basics and lots more, including sourdough, sweet doughs, long-risen doughs and more. There is a nice variety of technique, some of which is more labour-intensive than you might associate with the term "no-knead." The author clearly knows her bread.
However, one thing I enjoy in a cookbook is a sense of the author's personality, and this book is almost totally lacking in that area. The recipes are laid out professionally, with tips and hints and nothing is LACKING, but it doesn't give the sense that the author really, truly loves bread, the way some bread books I have read really do (try Bread: A Bakers' Book, by Jeffrey Hamelman if you want that, but the recipes in there take FOREVER!).
I would perhaps have felt more impassioned if there more illustrations of how to form the different shapes of loaves, but in most cases, there's just a description. Particularly when she's talking about how to form the complex "epi de blé" loaf shape, a diagram would have been helpful, and even for the more ordinary shapes like boule, baguette or batard, this is one area I knew ahead of time that this book would be lacking.
(Artisan Bread in Five Minutes a Day contains many nice photos so you can see how you're doing throughout the process - however, the first edition also contained many errors, another reason I avoided buying that book, despite corrections at the authors' website.)
One slightly annoying touch is the repeated - ad nauseum - use of the word ARTISAN. Everything is artisan: the recipes, the "extras" at the end of the book. Find a new word, everybody: ARTISAN = DULL.
I also quickly got annoyed at the repeated reference - on every single recipe! - to the use of Canadian flour. I use Canadian flour; I know it's different. When I'm not feeling lazy, I compensate accordingly, end of story. A single reminder at the beginning of the book would probably suffice - not 200 reminders throughout the book; especially when there are two recipes side by side, it sometimes looks like she's just trying to fill up the pages. But maybe not; maybe they're just trying to be helpful.
Like I said, the book is nicely laid out, and I haven't found any flaws in the recipes, so it's really a very good introduction to no-knead baking, if a less-than-passionate one (the other books, particularly Artisan Bread in Five Minutes a Day, read a bit like the authors have discovered a new religion and are eager to share it with the world!).
In short, despite colour illustrations (in the centre, not with the recipes) this is not a book to drool over. It is a no-nonsense book to open to the right page, read the recipe, mix the recipe, and boom - you're done. Easy bread, just as it says on the cover. So I don't regret buying this book, and you might not either, as long as you're clear about what you're looking for.
If you want photographs, diagrams, hand-holding, or just pure, foodie passion for bread, you're going to have to look elsewhere. If you want an inexpensive, helpful (less-expensive) guide to begin your journey into the fascinating (and delicious) world of no-knead breads, this may well be the book you "knead."

750 Best Muffin Recipes: Everything from breakfast classics to gluten-free, vegan and coffeehouse favorites Review

I ordered this from my cookbook club, but decided to post here on amazon , too. I have countless baking cookbooks, but this one is moving front and center as a new favorite. I have two other cookbooks by Camilla and have watched her on the Food Network many times. Every recipe creation I've tried from her has not just been good, but outstanding. I think she is extraordinarily talented.--not only are the recipes innovative, but her instructions are crystal clear, making it near-impossible to go wrong. My first thought when I saw "750 muffins" was "really???" But when you see the book, it makes perfect sense--it's like 9 complete books in one, each chapter (e.g., classics, morning muffins, savory muffins, farmer's market muffins, vegan muffins, etc). can stand alone--like 9 books for the price of 1.
Although I am excited by all of the muffins, the global muffins chapter and the farmer's market chapters are absolutely thrilling. Made the Gajar Halva Carrot Muffins for my book group (Indian-inspired muffins with cardamom & pistachios. There's a gorgeous photo of them in the book) -as we were reading a collection of Indian short stories. I believe we spent more time talking about the muffins than the book--this is one of the most delicious baked goods I've ever made.
From the Farmer's Market chapter I've already made the blueberry goat cheese muffins (to die for) and could not resist trying the Kale & Toasted Walnut muffins (I had a heaps of kale in my CSA box). Spectacular!!! Served them with a white bean soup. Who would have thought Kale would work perfectly in a muffin? Camilla, that's who.
This is a beautiful book in every sense, and I'm a tough critic. Brava, Ms. Saulsbury!!!

The Complete Idiot's Guide to Easy Artisan Bread Review

This book has great recipes that have all come out super tasty so far. The method is no-knead and it would be nice if there were alternate instructions if you did want to knead the bread, but the no-knead method works well. If you enjoy the hands-on process of making bread this can be a little disappointing but you could always experiment with the traditional technique. My only complaint is the equipment. The author expects you to have a dutch oven, pizza stone, pizza peel, etc and doesn't offer many suggestions if you don't have these items. I've made do with a baking sheet and broiler pan and each recipe has turned out fine, just would have been nice to have the info in the book rather than by trial and error.
