125 Best Biscuit Mix Recipes: From Appetizers to Desserts Review

I found your book and was glad that I bought it! The empanadas recipe was a Godsend as I was paying a wonderful Spanish lady for her homemade goodies for sometime... I will miss talking to her, but at least I have my empanadas and don't have to wait! Wonderful book , great recipes, different tastes! How could you go wrong?????

Sandra Lee Semi-Homemade Desserts Review

Ms. Lee has no real grasp of balancing flavors within foods it seems. Having seen her recipes on her show, which are mostly included in her books, and read recipes in her books, it becomes obvious she's all about themes of the day rather than good food.
The idea of semi-homemade is nothing new. Some simple additions to homemade food purchased products are great. Ms. Lee does not seem to understand that food should taste good and balance flavor. Sickeningly sweet is really what I get from many of these recipes.
Sugar overkill and and obsession with canned frosting and angel food cakes.
She has at least 10 angel food cake creations in her book. If I recall correctly all of them call for purchased angel cake, which isn't the greatest (always slightly stale) especially when a boxed mix is simple to prepare--and still would fall into the semi-homemade concept.
But then she slathers all of these light airy cakes with heavy canned frosting. One cake included Corn Nuts as a decoration? Corn Nuts?

Immensely silly in what could have been a fun and romantic section are her ideas for romance:
Pixi Stix as a base for dusting powder and she asks you to dust it onto your bed and yourself.
Canned colored frosting as body paint.
Lip gloss with food color and Crisco.
Can you imagine the sticky, sweet, grainy mess (I'm no prude...but pixi sticks?)
The other complaint and it's extremely distracting throughout the book: Trademarked name brands throughout the entire book. She may not be getting kickbacks from them, but she certainly has shown who the book is being created for...and it's not the people who are trying to get good recipes and ideas. Seems to be a book created to get deals with all of these companies.
She basically thumbs her nose at good cooks and is insulting to those hoping to learn.
(sure there are some good recipes...but wading through the rest, definitely not worth the money.)

Bakin' Without Eggs: Delicious Egg-Free Dessert Recipes from the Heart and Kitchen of a Food-Allergic Family Review

This book is WELL WORTH the money!! If it was $50, I'd pay it!!
After trying so many "egg-free" recipes off the internet that totally flopped and wasted my time and ingredients, I was so elated when I came across this book at a local bookstore. My husband, who is highly allergic to eggs, never could have any tasty baked goods. The best thing about Emro's recipes is that the baked goods actually taste good and 85% of the recipes are simple to make!
The baked goods I've made from this book are indistinguishable from your regular, quality baking with eggs! I prefer this egg-free recipe book over many of my bakery books that have eggs! I HIGHLY suggest buying this book! I've made wonderful cookies, cupcakes, cakes, shortcake, and more! I haven't even skimmed the surface of this book's potential and I would have paid $50 for the recipes thus far!
(Helpful hint: on occasion the batter may get a titch dry because of the lack of eggs, she generally replaces eggs with oil, etc, sometimes it is necessary to add a teaspoon or two of water, sometimes she will even say so). Use common sense with this cookbook. My husband has never been happier. He can finally partake of treats on the hoildays or just for fun!
Just tried the eggless cheesecake and it was wonderful. I was amazed I made it and it turned out so close to regular cheesecake, if not better. Absolutely wonderful recipes!
GREAT JOB ROSEMARIE EMRO! This is the best cookbook I have ever owned and will ever own! I'd DEFINITELY suggest this book to a friend, even one who could eat eggs! BUY IT NOW!

Vive le Vegan: Simple, Delectable Recipes for the Everyday Vegan Family Review

...it is an informative book on healthy living. Besides numerous nutritious recipes for breakfast and brunch, baked goods, sauces, spreads, soups, main courses and other things, Burton provides advice for "Feeding Your Vegan Baby & Toddler" which is divided into age groups for 6-9 months, 9-12 months, 12-18 months, 18-24 months and 2+ years. In the section "Additional Notes for Feeding Baby" Burton discusses organic foods, prepackaged foods vs. home-made and food preparation tips.
Another helpful section that offers practical information is "Cooking Guides & Notes" where the author provides guides to cooking grains and beans and other "Cooking Notes." A comprehensive glossary is also useful.
Burton's support of hemp foods is a welcome addition to this recipe book and will hopefully encourage other cookbook authors to feature this nutritious food in their books. Not only does Burton include a section on "Hemp Foods," but she also mentions the importance of hemp in the Introduction.
"This is one of the few cookbooks you will see that features hemp products. Hemp seed nuts and nut butter provide complete protein and essential fatty acids that we can only get from our diet. Hemp seed oil is also rich in the essential fatty acids." (page 14)
Another interesting aspect of Burton's book involves the relatively small number of recipes that contain soy. Burton's reason for minimizing her use of soy is simple. "I suspect that many vegetarians and vegans rely a little too heavily on soy, and while I still include it in my family's diet, no one food should be consumed excessively." (page 14) Burton also includes numerous wheat-free recipes and recipes which feature a wheat-free option.
It's nice to see that vegan recipe books are becoming more popular. Vive le Vegan! is one of the better vegan cookbooks that I've seen as it not only offers a good selection of easy-to-make, nutritious meals and snacks, but it contains lots of other important information as well. Those who turned to vegetarianism due to a love of and respect for animals will want to get a copy of Burton's book and consider taking the next step to veganism. As Eric Marcus points out in the Foreword:
"Many people assume that concerns over cruelty can be addressed by becoming a lacto-ovo vegetarian, and buying free-range eggs and organic milk. Unfortunately, welfare standards for these foods are utterly lacking. And, just as troubling, these foods depend on slaughter every bit as much as their factory farmed counterparts. There is simply no such thing as animal agriculture without suffering and killing - the economics just don't allow it."
Vive le Vegan! will be of interest to everyone looking for interesting, nutritious, cruelty-free recipes.--N. Glenn Perrett

Party Like a Culinista: Fresh Recipes, Bold Flavors, and Good Friends Review

Just looking at the cover of Jill Donenfeld and Josetth Gordon's new cookbook, makes me smile. It generates happiness. I am excited and inspired to have a dinner party right now! I have a huge number of cookbooks but none quite like this one. This book is an absolute gem.
Party Like A Culinista has an amazing format. Not only are there menu suggestions, each recipe is designated as "easy", "make ahead", "vegan" or "vegan flex", as well as offering the cooking order. The book even suggests when to change into your party clothes! How fun is that? The photos of the prepared recipes in the book are beautiful and make my mouth water because they look so delicious. The chapters in this book offer suggestions for all different kinds of parties from the casual daytime party to a last minute party, an anytime party or even a big "blow out" more formal party.
I have tried quite a few of the recipes in this book and found them all delicious, unique with a nod towards healthy preparation and ingredients. Though everything has been absolutely excellent some of my favorites are: the Chicken and Apricot Falafel, the Seafood Cobb, the Warm Squash Salad with Faro, Hazelnuts, and Currants, the Arugula and Mozzarella Salad with Eggplant Caponate and the Roasted Vegetable Enchiladas. The Chorizo Red Pepper Polenta Squares are fabulous and a snap to make.
As for ease of use, I think the pictures are really helpful, the directions are very clear with tons of information so that even an inexperienced cook can prepare an impressive, flavorful and healthy meal that will be an enormous hit with his or her guests. The authors offer suggestions for the substitution of hard to find or out of season ingredients. Stated prep/cooking times seem right on, and since many of them require less than an hour, it's pretty easy to pull together a meal quickly. I appreciate that the advance preparation and hold times for the refrigerator and freezer (if applicable) that are given for each recipe. I almost feel as if I am in an expensive cooking class. The introduction includes good information about ingredients, preparation and even equipment. Variations to the recipes are also provided to make them vegan. Finally, I think there are numerous recipes that would appeal to people who like lean proteins with healthy, flavorful sauces, too. If you like lots of flavor, you won't go wrong with this book. It is sure to become one of your favorites.

Vegan Pie in the Sky: 75 Out-of-This-World Recipes for Pies, Tarts, Cobblers, and More Review

I was a tester for this book, and I am so excited that it was finally released! Pies can be a bit tricky, even if I used the same crust recipe that's worked before, sometimes it would fall apart and I never knew why. Terry and Isa don't just tell you that a recipe works, but why, so you will actually become a better baker via this book. Previous to this book, my go-to pie was a basic chocolate peanut butter in a pre-made crust. Now I am confident in my ability to whip up all kinds of fruit pies, crumbles, cream pies, homemade cookie and buttery pie crusts, and vegan cheesecakes which are NOT made with store-bought cream cheese.
Let me repeat that: vegan cheesecakes without faux cream cheese! They aren't soy-free, and take a little extra effort to make, but they are delicious and worth your time.
There aren't too many hard-to-find ingredients in this book, but there are a few that are key to many of the non-fruit pies: agar powder and coconut oil. Coconut oil is a little pricey, but you can make many pies with one jar. Agar powder can be found in health food stores, asian food stores, or on the internet if you don't have the former two in your area.
But there are also crusts and pie fillings that require no fancy ingredients, if you want to make vegan pie with your grandma you can do so with a shortening or olive oil based crust and frozen fruit. There really is a pie for every person in here.
Some favorites that i've made include:
Strawberry Rhubarb Crumb Pie
Pumpkin Pie Cheesecake
Raspberry Lime Rickey Cheesecake (this was a big hit with family)
Chocolate Peanut Butter Cuplettes
Ginger Peach Pandowdy
Little Lemon Mousse Pies
Summer Fruit Buckle Cake
Rad Whip (awesome vegan whipped-cream topping)
I will also add pictures to the gallery so you can see for yourselves.

Serve Yourself: Nightly Adventures in Cooking for One Review

From the smallest kitchen in the world, starring the fattest fingers you've ever seen - making Joe Yonan's Yucatan-Style Slow-Roasted Pork from his book, "Serve Yourself: Nightly Adventures in Cooking for One." It's not too hard to make, cooks low and slow for a long time, and it's really, really super-delicious! What you don't eat, you can freeze, and it re-heats very nicely for sandwiches, tacos, or with rice.

Icebox Pies (Non) Review

Lauren Chattman is going for maximum nostalgic gusto here--note the term "icebox" instead of "refrigerator" or "fridge." With her delightful "Icebox Pies," Chattman turns the spotlight on a sorely neglected dessert subject--and rightly so. The pies herein are scrumptious to look at, and I can attest to the fact that they are easy as, well, pie, to make!
Chattman has a loosey-goosey, conversational style in her text, but this is clearly a woman who knows her way around the kitchen. When she tells the reader what to do, she doesn't just say, "Do it"--she explains her thinking and experience behind the directive. This makes you feel that you're in capable hands, as indeed you are.
I really liked the additions of crust and sauce recipes. I was particularly intrigued by the inclusion of a crust recipe which uses crunched-up ice cream cones as the main ingredient--what a simple yet brilliant idea (wish I'd come up with it myself!). There are old favorites in here, as well as desserts with a new twist: Pumpkin Mousse Pie, Piña Colada Pie, White Chocolate Ganache and Banana Pie, Ricotta Cream Pie with Blood Oranges, Couscous and Apricot Pudding Pie, and so on. The more traditional pies include Rich Chocolate Mousse Pie, Chocolate-Mint Sorbet Pie, Coffee Heath Bar Ice Cream Pie, and even a yumilicious-looking S'Mores Pie.
This slim but well-researched volume is an excellent choice as a hostess gift for the folks with whom you're going on vacation--or as a special treat for your favorite dessert-maker. Everything in here looks do-able, and the results are very, very good in every way.

The Gluten-free Gourmet Makes Dessert: More Than 200 Wheat-free Recipes for Cakes, Cookies, Pies and Other Sweets Review

Those of us following a gluten-free diet often feel something akin to claustrophobia when it comes to food. Every day we're faced with so many goodies that we can't have. It's a great comfort to have a resource like this one at home when you walk past the bakery section of your local grocery store. Just knowing you *can* go home and bake something sweet and tasty
opens up your world a little.
And these recipes do work; some are complex, many are very simple, which means the book answers a range of cook's skills.
While it is true that the recipes are based on mixes made from a wide range of sometimes exotic flours -- usually available through an American health food store -- it's not fair to condemn any of Bette's books for this. You're just not likely to find most gluten-free flours for cheap in your grocery store, at least not this early in the millennium.
My 11-year-old daughter has adopted this book as her kitchen companion. She turned out a wonderful cake on her first try. For those of you with children stuck with a gluten-free diet for life, there is no more essential skill to pass on to them than cooking -- and no better passion than a love of cooking -- that will support them through a lifetime on a specialized diet. This book makes a great starting place for cooking with kids, as well as being a suitable cookbook for adults of all skill levels.

The Food Allergy Mama's Baking Book: Great Dairy-, Egg-, and Nut-Free Treats for the Whole Family Review

To say this is the ABSOLUTE BEST cookbook for children with allergys would be a HUGE understatement. It does not get any better than this book. Kelly has a true gift. I have several other cookbooks and they are terrible. I love how Kellys recipes are every day household items. I live out in the middle of nowhere and having to find items that my local stores do not sell was very had with the other cookbooks. Then the food would taste like dirt and there were no pictures to see what "said food should look like" Kellys book is the exact opposite. Her recipes are every day ingredients. You can tell she puts her heart and soul into her recipes. Kelly is a lifesaver and I am just so thankful for how much she has helped my family. Not the first person has noticed that any of the foods I have made were dairy/egg/nut free. How wonderful is that?
Like I said IT DOESN'T GET ANY BETTER THAN THIS COOKBOOK!!
I would pay triple the amount... that is how good it is!

Desserts 4 Today: Flavorful Desserts with Just Four Ingredients Review

I may have to stop reviewing cookbooks from Taunton Press--every single one I have chosen to review thus far I have wanted to own. My personal copy ordered from Amazon is on it's way to me as I type this.
What is it about this one? At first glance, it seems a little gimmicky. About 10 or 12 years ago, there were several cookbooks published that either limited the number of ingredients or number of steps for a recipe. Sometimes they were successful and sometimes less so.
Johnson Dodge has an understanding of ingredients, of chemistry, of baking and cooking, and of today's cook that works like magic here. When you only have four ingredients, they all count, and they all must work together to make the finished product. She gives a great introductory section where she talks about ingredients, techniques, equipment and more. Almost every recipe has suggestions to change it up, or comments on technical things or ways to gussy it up with sauces or glazes or the like. Usually when I review a cookbook, I make two or three dishes to see how they turn out. These recipes were so easy and so good, I found myself making one every time I turned around.
I started with Jammin' Sugar Cookie Thumbprints (p. 22) and Toasted Pistachio Crisps (p. 19). I am lazy, so I almost never get out my mixer. On the thumbprints, I filled them with raspberry preserves. They were rich, buttery, crispy and the raspberry was a perfect contrast. There were several suggestions for switch-ins and anyone with a little imagination could come up with more. I was not able to slice the dough for the crisps, it kept crumbling. (Possibly my fault for either mixing by hand or not chopping my nuts finely enough). It didn't matter, I rolled the dough into balls and pressed each flat with the palm of my hand. My husband loved them, suggesting I add them to my regular baking. From there I tried Crunchy Peanut Butter Buttons (p. 32). You will be amazed that such simple ingredients make such a divine cookie. Next time I think I'll try the suggestion and add mini M&Ms. These cookies were surprisingly even more peanuttier the second day. The Oatmeal-Cinnamon Crisps (p. 28) made a believer out of me. I looked at the "dough" and then my homely piles of oats on the cookie sheets and thought there is no way this is going to work. And then it did, almost like magic, when the brown sugar caramelized to make little crunchy mounds of goodness.
There were two recipes that were less successful however. The Lemon Meltaways (p. 29) had nice texture but didn't taste very lemony. This again may have been my fault, as I didn't measure my lemon zest, just zested the one lemon I had and figured it was enough. The Chocolate-Toffee Crumble Cups (p. 37) were delicious when first baked, but after they had cooled, the toffee in the dough seemed to get very hard and chewy and made them not as good. In this case, I think I would make them again and only put the toffee on the top, or try one of the suggestions for other things to switch-in their place.
Almost every recipe I tried had a higher yield than indicated. (If you are into cooking or just like to be exact, I recommend buying cookie scoops of varying sizes, they work so well.) I wanted to try other recipes in the book, so I can't wait for my copy to get here. And Abigail Johnson Dodge, if you see this, I would love a Cookies 4 Today book next. (You can tell I can't get enough of these cookie recipes!)

Little Cafe Cakes Review

Not to say this isn't a fine book. What I wish I'd realized is that it's from New Zealand. I am in the United States. Some measurements are metric. Some aren't. Many measurements are by weight, so have a kitchen scale handy. Temps are celsius. I'll have to do many conversions. Other problems: many things have different names than we use here, so I have to translate to figure out what they are. Also, some things are not foods available here, as far as I know, like quark. What is that?
Cookbooks are better if they are from your region, in terms of measurement and temperature systems -- and available ingredients. Some of the cakes sound bizarre to me for that reason, but there are lots of interesting-sounding items to try!

Ani's Raw Food Desserts: 85 Easy, Delectable Sweets and Treats Review

Ani Phyo is getting more and more popular by the day, and in large part that's due to the fact that she, more than any other raw foodist, is making raw food easily and readily accessible. Yes, she does use the dreaded dehydrator, but not for nearly as long as some of her peers. Her food looks and tastes good, but it isn't nearly as fussy and "gourmet" as some of the other stuff out there.
This book goes even further towards accessibility than her last book. Whereas before her recipes for ice "kream" required the use of young Thai coconuts- wonderful, but not always easy to access- here she gives a recipe using easy to find shredded coconut and an alternative preparation with raw coconut. Also, while on her websites she gives recipes for (really wonderful) chocolate using very hard to find raw cacao butter, here she provides a method with coconut oil and then, again, gives tips to use the harder to find ingredient. Yeah- now it's even that much easier to enjoy these (healthier) desserts.
She provides recipes for chocolates, ice creams, fudge, cupcakes, cobblers, pies and even cheesecake- yum! However, she's a little short on recipes for cakes- not entirely sure why, and I'm disappointed because I was hoping to see more of those (she had a few in her last book). Also, the cupcake recipes seem more like mini cobblers. She doesn't give any instructions on how to eat- with a fork? by hand- so I'm not sure what the texture is like. Still, it feels like a worthy experiment to undertake :-)
I'm exciting about trying pretty much every recipe in this book.

The Vegan Scoop: 150 Recipes for Dairy-Free Ice Cream that Tastes Better Than the "Real" Thing Review

First let me say the I did learn two things from this book -- saving it from a one-star rating. Those things were:
Arrowroot powder is a nice additive for better texture
Soy creamer can be used for a creamier texture
I have made soy-based ice cream for years now, but have never used either of these ingredients. I would merely take a regular ice cream recipe and substitute soy milk for real milk. These concoctions were good, but lacked a bit in the texture department. Now I have a solution!
As for the rest of this recipe book, it is a single base recipe for the majority with a single ingredient added to make a unique flavor. So, for Espresso ice cream, add 1/4 c espresso to the base recipe. For "Earl Grey", steep the soy milk in 8 bags of Earl Grey -- same base recipe otherwise! Are we to believe that adding a single simple ingredient will transform this recipe into the perfect balance of new flavors? No additional sugar or slightly less sugar would be better? And does every recipe really benefit from EXACTLY 1 Tbls of vanilla extract?
Also, I tried one of the "novelty" flavors -- Chocolate Martini. Next to the recipe is a picture of thick, creamy, dark chocolate ice cream with a frozen black olive on the side. Wow! Amazing that you can get such a wonderful looking ice cream from sugar water and a total of 6 teaspooons of various liquors. Well, you can't! The mix looks like dirty water and the finished product looks like a dirty slushy -- and tastes about the same.
I am going to buy "Lick It!" which is recommended by another reviewer. Sounds more promising. I'll also be experimenting with my own recipes by adding various quantities of soy creamer and arrowroot powder.

The SPLENDA World of Sweetness: Recipes for Homemade Desserts and Delicious Drinks Review

Buy this book if you want recipes that use Splenda products. Don't buy it if you want recipes that are low-calorie, low-fat, or even low-sugar (some contain a Splenda product but are also loaded with corn syrup or molasses). The occasional nod is made to calorie reduction where no particular work is required to adjust the recipe, for example replacing the regular milk in a recipe with low-fat milk. But by and large, nothing else has been done to standard baking recipes except to swap some Splenda product or other for sugar.

The Get 'Em Girls' Guide to the Power of Cuisine: Perfect Recipes for Spicing Up Your Love Life Review

I saw the authors on one of the morning shows and ordered and I'm glad I did. The recipes are all doable. Sometimes you get a book and its just too much to do (I'm a lazy but good cook) or you're just not interested in anything they're offering because its way too fancy for my taste. Not so with this book. Love the salmon. I'm glad to see they have another one out about cooking for get togethers. These women know what they're doing.

Kristen Suzanne's EASY Raw Vegan Desserts: Delicious & Easy Raw Food Recipes for Cookies, Pies, Cakes, Puddings, Mousses, Cobblers, Candies & Ice Creams Review

Kristen's Easy Raw Vegan Desserts is just awesome. I would have to say this is one of my favorite books by Kristen. There are so many amazing recipes in this book that you have to try. Like the Bananas Foster (to die for!), Peppermint Chocolate Mousse, Peach Caramel Pie, Raspberry Vanilla Cheesecake, Out of this Galaxy Chocolate Brownies, Southern Cinnamon Peach Ice Cream, Chocolate Hazelnut Ice Cream to name just a few. Plus, the sauces, coulis and glazes are great additions to any dessert. I've taken many of Kristen's desserts to potlucks and family parties and they are always a hit. I've been asked many times for the recipes and what's funny is that they didn't even know they were raw! I would definitely recommend Kristen's other books. I know you won't be disappointed.

Caribbean Vegan: Meat-Free, Egg-Free, Dairy-Free Authentic Island Cuisine for Every Occasion Review

Caribbean Vegan is already one of my favorite cookbooks. In this day and age of finding recipes on the internet, I can't encourage you enough to own this book for yourself. It's full of rich, satisfying recipes, with easy to follow instructions. I was new to both eating and cooking Caribbean cuisine, and I learned some great cooking techniques along the way. Some of my favorite recipes include the rum cake, lentil patties, split pea soups, and of course the tofish. The book includes everything from the basic sauces to cocktails to breads to seitan ham, etc. Taymer has experience in the food industry and it shows. She creates complex flavors in an authentic way. No other vegan or vegetarian cookbooks have these recipes, and if you live in the U.S. you may not even have access to the homestyle recipes that Taymer revised.
You will love these foods, do not delay! (Did I mention the gorgeous photos?)

The Cake Mix Doctor Bakes Gluten-Free Review

Leave it to the very creative Anne Byrn to be right on top of food trends with her latest cookbook entry - The Cake Mix Doctor Bakes Gluten-Free. We love the layout of this book which is easy to read, contains a helpful recipe reminder panel on some recipe pages where you can jot down your own notes, and offers just plain old good advice, like how to prevent a bundt cake from sticking to the pan! Be sure to read the "Cake Mix Doctor Says" tips listed at the bottom of most recipes.
Byrn proves that just because a dessert recipe is gluten-free doesn't mean it has to be dull. Among her more than 50 recipes is an Almond Cream Cheese Pound Cake, Caramel Melted Ice Cream Cake, German Chocolate Cake, Coconut Cake with Fluffy Marshmallow Frosting and even a Gluten-free Wedding Cake! Recipes cover layer cakes, bundts, sheet cakes and bars, brownies, cookies and cupcakes, too. Just browsing through this book has us ready to get out our mixing bowl and bundt pan.
