Vegetarian Cooking for People with Alergies: Delicious and Healthy Review

I was so relieved to find this allergy free vegetarian recipe book after being diagnosed with mulitple food allergies. The recipes are user-friendly and unlike other allergy cookbooks I didn't have to make a special trip to the health food store to purchase special food substitutes and expensive ingredients in order to start cooking. My husband and I take turns preparing dinner and he enjoys the simplicity of the recipes and actually looks forward to serving up a new meal that is both "safe " for me to eat and delicious for the rest of the family to enjoy. I am interested in learning more about Dr. Rettner's chiropractic treatment for curing food allergies and I plan to look for someone in my area who is familiar with this technique. I highly reccomend this uncomplicated cookbook for allergy sufferers who would prefer not to have to take formal cooking classes before preparing delicious meals while they adjust to a new way of eating. The book has been a lifesaver for me!

Gluten-Free Recipes for the Conscious Cook: A Seasonal, Vegetarian Cookbook (Whole-Body Healing Series) Review

I've long been a fan of Leslie Cerier's easy, earthy style of cooking, full of hearty grains, gentle seasonings, and organic produce. Though I'm not gluten-free, I added this book to my collection for all the above reasons.
The previous review is so unfair-- to give a book a one-star review because it has no photos? It would have been nice, for sure, but some publishers don't have the budget. And because there is a recipe for cooking short-grain brown rice? These instructions preceded a whole chapter on making healthier sushi, hence its inclusion. Also such instructions are good for people who buy grains in bulk and who are just getting familiar with healthier grains.
I've already made several recipes from this book and they are outstanding. Corn Grits with Sautéed Onion, Kale, and Cheddar (I used vegan cheese), Soba with Tempeh and Broccoli in Coconut Sauce, and Cilantro Pesto were all great. There are probably more dishes here for cool-weather cooking, so I'm looking forward to trying things like Spiced Yams with Pecans and Garlicky Baked Beans with Parsnips and Butternut Squash in the fall.
Aside from being good for gluten-free cooking, this book is a great introduction for using a wide array of whole grains we don't usually think of, like millet--it's such a tasty, healthy grain, and I rarely think to use it. Thanks, Leslie, for another great collection of recipes and tips! If you like this you'll also like Going Wild in the Kitchen, one of my favorite veg cookbooks.

The 125 Best Gluten-Free Recipes Review

I am totally impressed with this cookbook. I have adapted recipes and cooked for my celiac husband for over 10 years and I thought I knew a lot about good gluten free baking. However, this book has given me a ton of good ideas (and recipes that work) and has rekindled my interest in baking. I particularly liked the lemon yogurt scones, shortcake, and white cake recipes.
I tried the breadmaker recipe for white bread and for the first time produced bread that looked good,was sliceable, tasted great (according to my husband) and was so easy to make. Not to mention much cheaper than buying it at a specialty bakery! Another plus is that the recipes are good enough for me (a non-celiac) too! The wealth of information about alternative flours has given me the means to adapt a lot of my own recipes successfully.

I was so pleased to find this book! Imagine a gluten-free cookbook that doesn't use rice flour! I love the fact that most of the recipe instructions simply say, 'blend all ingredients' together rather than having numerous steps to follow. This cookbook covers everything "From French Toast to Fried Chicken". I'll be cooking from this book for years to come.

The Complete Idiot's Guide to Gluten-Free Cooking Review

The Complete Idiot's Guide series is certainly right on target with this newest release focusing on one of this year's hottest food topics - gluten intolerence and insensitivity.
Jean Duane does an excellent job of offering a range of easy to moderately complex recipes in a wide range of categories to prove that a gluten-free diet doesn't have to be dull or boring. From Dilly Apple Cucumbers and Grape Tomato and Basil Salad to Pork Medallions with Apples and Almonds and Chocolate-filled Chocolate Tortillas, recipes are accompanied with quick tips and "gluten-free gab" trivia facts. There is also a great resource in back of book with menu plans and a list of gluten-free products from the grocery store.
Gluten-Free Cooking is a simple, no-nonsense recipe book for those who want to give gluten consumption the heave-ho for better health.

This is really a wonderful book. I'm not sure why I was so surprised to find this the case - I've read their website for months and always enjoyed their recipes and style of writing... but I think I had been so disappointed by some other gluten free cookbooks, that I was trying to not get my hopes up. Now, this and Carol Fenster's 1000 gluten free recipes are the first two books I reach for when its time to cook.
The flour blend works beautifully. My first attempt was their chocolate chip cookie recipe. I think in the 8 months I've had to deal with my celiac I have made 20+ recipes... and most ended up in the trash. Either tooth shatteringly hard, weird flavors, or a consistency more in keeping with Floam (the children's aerated play sand) than a cookie. Theirs? Chewy. Soft. Delicious! I have cookies again! I haven't been that excited about the thought of sitting down with a cookie and a glass of cold milk since I was 6.
Breads, soups, main dishes, desserts - all presented in a wonderful style. Great recipes, easy to follow - no weird ingredients that you can't track down! After months of not knowing what to cook - I can't wait to have friends over for dinner again. I don't have to worry that folks won't want "weird" food - its all wonderful. And just happens to be gluten free.

The Complete Book of Gluten-Free Cooking Review

Jennifer Cinquepalmi is not, as far as I know, a professional chef. The cookbook, quite refreshingly, reads much like a church or community cookbook: The recipes are simple, as are the directions. While I cannot vouch for the main courses that contain meat (I'm a vegetarian), I can tell you that the baked goods alone are worth the price of the book. Especially convenient is the recipe for the "Individual Freezer Pizza Crusts." The crusts taste great, stay crisp, and are so easy to make. As for the quick breads, cookies & cakes, she does not shy away from sugar or shortening, so the occasional treat, really is a treat.
I will mention this book is for those that have gluten-intolerance as their sole food issue. While Cinquepalmi does offer some substitutions for eggs and only a very few recipes contain corn or nuts, if you are looking to omit dairy, look elsewhere. For the rest of us, this is a must-have gluten-free cookbook.

Allergy Free Cookbook for the Family by Brianna Monson is a charming little book that delivers what it advertises: family-friendly food that is free of allergens. The recipes in this book are simple, quick and budget-conscious. They are foods that are likely to appeal to children. The author is a mother of a child with life-threatening food allergies, and her personal experience with this challenge is apparent throughout the book. Each recipe has a little note about it being her childhood favourite to bake with her grandmother, a dish she serves to her inlaws, or a weekly meal at her house. I like this little personal touch that lets you know these are enjoyed so much by her family.
Some of the recipes that most interested me included:
* Breakfast burritos
* Country hash browns
* Sugar cookies
* Pie crust
* Apple crisp
* Graham crackers
* Raspberry pie
* Meatballs
* White sauce
* Honey ham
* Croutons
* Ham and bean soup
* Kale soup
The ingredients are not whole-foods conscious, which is the usual fare at our house. There is plenty of refined sugar, corn starch and corn syrup throughout the book. I simply made the recipes with replacements such as natural cane sugar or agave, tapioca or arrowroot flour, and rice syrup. For most people just venturing into the world of allergies, the ingredients in the book are likely familiar to them and easily obtainable. I also found that the baking recipes call for way more sugar than we usually use. For instance, the banana bread and muffins call for 3/4 cup of sugar, where my recipe (using the same amount of flour) calls for 1/8 cup. But in spite of this, I still like this book and have enjoyed several recipes from it, applying changes as needed for our lifestyle.
This book uses rice flour, potato flour and tapioca starch for most recipes that include starch, with the occasional recipe requesting oat flour or cornstarch. Ener-G egg replacer is recommended as a substitute for eggs. Dairy-free margarine is used frequently, and sometimes shortening is used as well. A few of the recipes call for oats, oat flour, and soy-based cream cheese; we do not use these due to an allergy, so I avoided those recipes. The book advertises that "most" recipes are free of milk, eggs, peanuts, tree nuts, wheat, fish and shellfish. As far as I can tell, the recipes are all free of those ingredients, with the recipes containing oats specifically listed as not being gluten-free unless gluten-free oats are used. Some recipes do contain soy and corn.

Simply Sugar and Gluten-Free: 180 Easy and Delicious Recipes You Can Make in 20 Minutes or Less Review

I've been gluten free for about 6 years. I have many gluten free cookbooks, but I was hooked on the promise of simplicity for the recipes in this book. I like the idea of quick, healthy meals for my family that also meet my dietary limitations. Tonight, I tried the mac and cheese and meatloaf. Both were delicious, and the family liked them as well! The recipes are fairly simple, and turned out very tasty. My only "complaint" - which I hope really isn't seen as a complaint but more of a fact - is that the 20 minutes part of the title means preparation time; it does not include cook time. But regardless, I look forward to trying more of the recipes.
As many other reviewers have mentioned, the tips are extremely helpful. There are tips for how to buy dried fruit, storing chickpeas in the fridge so homemade hummus will already be chilled, making double batches and freezing, etc. I love the idea of baking a big batch of brown rice or making extra quinoa and freezing for later use. I have a very active family, and this kind of meal planning for the sake of convenience is huge for us.
The only real negative for me is that Ms. Green's flour mix contains bean flour. I have not been able to tolerate the taste of bean flour in most other recipes (or its effects on my tummy if I eat too much). I seem to have a keen sense for the taste, and have only found a few recipes containing bean flour that I like (one is Bette Hagman's zucchini bread with pineapple, the other is Erin McKenna's Apple Cinnamon Toasties, which are both super yummy!)The mac & cheese I made tonight called for the bean flour mix, but I used sweet rice flour instead, and the recipe still turned out great.
If you have a dairy sensitivity, there are quite a few recipes that call for milk, cream, or cheese of some sort. For those with nut allergies, there are also recipes calling for nuts. In both cases, there are often notes at the end suggesting substitutions to make the recipes dairy or nut free, which I think is awesome! Many recipes are labelled vegan, dairy free, or egg free, to help chefs isolate recipes that will work best for them.
For those who have been disappointed that this book does in fact contain some sugar (in the form of palm sugar from coconut), you may want too look up cookbooks for the Specific Carbohydrate Diet, like Grain Free Gourmet or Recipes for the Specific Carbohydrate Diet. South Beach also contains many, many great and healthy recipes. Just remember the healthiest recipes are going to be those that use whole foods, not artificial sweeteners, which some SB recipes call for.
The bottom line for SS & GF is that is is simple, easy to follow, has an overall healthy approach, and a great variety of recipes. I will be using it quite frequently!

I'm delighted that I could transform my wheat intolerance into a gratifying business that helps people eat the foods they love-without the ingredients they don't want. ~Carol Fenster
Carol Fenster, Ph.D. is one of America's gluten-free experts. Her work appears on the Health Network and she enjoys developing gluten-free products for manufacturers. She also counsels patients who are allergic to gluten. Carol's journey began with a case of chronic sinusitis. When she stayed away from wheat, she finally found relief.
Celiac disease now afflicts 1:133 Americans and is now the nation's most common inherited autoimmune disorder. Celiacs have to avoid gluten because it prevents the absorption of nutrients in food. This causes a cascading problem and can lead to anemia, osteoporosis and other health problems like rashes, stomach aches and general fatigue.
When I went to the store to find a Gluten-Free Flour Blend, I found the GF Garbanzo and Fava Flour blend by Bob's Red Mill. Apparently, Carol developed a gluten-free line for Bob's Red Mill. She also gives the recipe for her Sorghum Flour blend in this book.
Today I made the most delicious Banana Muffins using Carol's recipe from page 73. It is a quick bread recipe and you can make a Banana Bread variation. I did use ¾ cup milk instead of the recommended ¼-1/3. So, if you choose to buy a premixed flour blend, you might need to slightly adapt the liquid quantities. Overall, I was very impressed with the recipe and made 24 delicious and healthy banana muffins for breakfast. I'll freeze the leftover muffins for future banana muffin cravings.
Last week, I decided to try the Basic Bread recipe in my bread machine and then sliced the bread thinly and dried it out in the oven for 20 minutes to make crackers. They are the best crackers I've ever tasted. So far, I've only found rice-based crackers at the store, so this was a wonderful solution. You will need to look for items like potato starch, Xanthan gum, guar gum, soy lecithin and cider vinegar. I used rice wine vinegar and another flour in place of the potato starch. So, these recipes can also be adapted to taste. Most of the ingredients are now readily available at your grocery store on the natural foods isle. If you can't locate these in your town, Carol gives plenty of online sources.
This book is simply fascinating because the author is so knowledgeable and even suggests that you stay away from some flours you would never suspect. Her alternative list of flours for Gluten-Free baking will also be useful when you are shopping and reading labels. If you normally use wheat as a thickener, you might want to try Agar, Arrowroot, Cornstarch or Guar Gum. There is a handy substitute list on page 23.
If you decide you are serious about the gluten-free lifestyle, you might want to go through this book and make a list of the special ingredients. Once you have rounded up about 5 main ingredients, you can easily put together a number of healthy recipes. Xanthan gum, gelatin powder, tapioca flour, potato starch, soy lecithin, guar gum, sorgum flour, tapioca flour and a choice of corn flour, almond flour or bean flour are needed for this cookbook. It is nice to know that if you are allergic to nuts, you can also use bean flour or corn flour.

Personally, I have a ton more energy when I stay away from wheat products, so this recipe book is helping me to adapt my lifestyle. I'm also excited about trying the Bob's Red Mill flours in my own recipes.

The Wheat-Free Cook: Gluten-Free Recipes for Everyone Review

One of my closest friends is a hardcore "foodie" but has a horrible wheat allergy. She must take antihistamines in order to indulge in her favorite foods, which is fine for the rare oppurtunity when we dined at Perse but not something you want to take everyday. So, when I found The Wheat-Free Cook, I took it upon myself to prepare a meal for her from scratch. Now first off, I don't like to bake but I knew bread was going to be a big deal for her. I made the recipe on page 133 (quick flatbread) and found it not only easy but extremely delicious! Luckily, I doubled the recipe as the rest of the diners devoured it along with the delectable short ribs on page119. This book offers classic cooking (a la Julia) and brings "gluten-free" out of the dark ages (nasty health food store selections, ugh). It's easy enough to use for the novice cook and innovative enough to inspire the toughest "foodies." I recommend it for ALL cooks-wheat free or not!

So, What Can I Eat Now: Living Without Dairy, Soy, Eggs, and Wheat Review

This is a physically beautiful book with gorgeous, colorful photographs of food on thick semi-gloss pages, like a coffee table book.
The author has the misfortune to be intolerant of soy, eggs, and wheat, which she says are the three most common food allergens. She had to modify the beloved recipes of her Southern (US) childhood to accommodate these food intolerances. Many of the recipes, however, are not modifications of traditional Louisiana foods. I mention that because I don't want you to dismiss this book just because you may not like Southern cooking. There's an international influence here. Good food is good food, regardless of origin.
The recipe instructions are clear and orderly. With the growing awareness of food intolerances, grocers are increasingly stocking the ingredients you'll need for some of these recipes, such as brown rice flour tortillas used for the taco salad. I especially enjoyed her recipe for black-eyed peas; so much better than canned!
You can make most of these meals without specialized equipment. Be aware that one of the recipes requires a slow-cooker, a number need a food processor, and a few use a juicer.
Physicians are lately realizing that gluten allergy and intolerance are much more common than we once believed. If you're so affected, you'll enjoy these gluten-free recipes.
Another appreciated feature is that Ms. Peters provides nutritional analysis for each recipe, such as calorie count, carb and fiber grams, cholesterol content, etc.
There are millions of cookbooks out there. This is one of the few that successfully addresses the needs of people with multiple food allergies.

I am very new to this but one thing I've seen too often are gluten-free books with salads (duh!), chili or stew or other recipes that anyone could figure out. But Beth tackles the roughies ... Brioche, condensed mushroom soup, matzo AND -- wait for it -- cheese puffs gougere! It's like she read my palette. Good basics like flour blends, relplacements. I would have given it 5 stars if it included nutritional analysis but there are plenty of recipe calculators online. I really feel Beth wanted to give her readers the full benefit of all she's learned ... And we're the lucky beneficiaries!!
LOVE IT!!

This is an attractive cookbook and every recipe I have tried has been delicious and easy to follow. The dishes tend to be elegant and great for entertaining, but not too difficult for everyday family meals. However, I have noted a couple ingredients that are not gluten-free, such as blue cheese and beer. Overall, I highly recommend this cookbook, but do not rely on all ingredients listed to be gluten-free.
