The Healthy College Cookbook Review

Putting in 90-100 hour weeks during Graduate school, I needed a basic but comprehensive cookbook where the meals wouldn't take long, the ingredient list wasn't huge, but the meals would still be flavorful. I picked up this little gem. I can't even count how many times I've cooked my favorite recipes out of this book--Vegetarian Lasagna, Balsamic Chicken & Potatoes, the list goes on and on. This cookbook covers every meal item possible and gives you a great combination of classic and unique recipes that anyone can make. You don't have to be a BAD cook to get this book, the authors are sensitive to the fast-paced lifestyle many people have and present this as an alternative to lengthy cooking. And now that I'm out of the Graduate School schedule, guess what -- I'm still making these recipes.

Christianne's Herbal Kitchen: Fresh Herb Recipes for Body and Soul Review

I like this book. I recieved it as a gift over Thanksgiving from someone who knows that I prefer light cooking. I like recipes that focus on flavor in lighter fare like soups and salads/salad dressing. The book has these and also had sauces that looked pretty good, though I haven't tried those yet.
I tried the Eggless Ceasar and the Baby Beet Salads and the Chicken Vegetable with Pesto soup. The author knows how to use spice in dishes in way that makes them pretty unique from anything you's have at a restaurant.
There's a cocktail section that was pretty in depth. I used to bartend in NYC at a martini bar, and these were pretty sophisticated combos she had going. I'm most curious about the pomegranate sparkler. Pomegranate juice and booze is a tricky combo.
Besides what I mentioned there is a dessert section (lots of sorbet), an entree/ side dish section and a appetizers section. Everything used fresh herbs.
Personally I was really into the direct treatment that herbs get in the descriptory section of the book with both a historic and scientific shakedown. There were also some beauty tips throughout the book which was something I'd never seen before.
Overall, seems like an ideal book for entertaining. I'm giving it five stars because its full of interesting salads and light soups which are my most favorite things to cook. I also don't know squat about using herbs so it was really infomative in that sense.

Cooking in the Nude : Quickies (Cooking in the Nude (Howell)) Review

This book has some great recipes, it is one of the first cooking for 2 books I bought. The names are a bit wimsical (A Grape Fantasy, Lovers Lure, Vealing Lusty) which makes the index a little chalenging but the actual dish is in parenthesis. The recipes are also listed in a subject index (beef, chicken, etc.). There is a pantry list that has common ingredients in the recipes that makes stocking easy, and the recipes themselves are very clear, easy, and quick as the title sugests. There are categories for appetizers, salads, dressings, entrees, and vegetables. Each main dish has a suggested menu using other recipes in the book if you are uncomfortable planning your own, and they work fairly well, though I must say that the wine recomondations are not the best. There is no nutritional information. All in all this is an excellent book and I think you'll be very pleased.

Simply Natural Baby Food: Easy Recipes for Delicious Meals Your Infant and Toddler Will Love Review

I love this little book. I know a past reviewer criticised the book for being too thin but that's one of the things I like about it. I have always enjoyed cooking and bought quite a few baby cook books when my daughter was very young thinking I would potter around making her perfect gourmet meals but soon realised that there are many days when the thought of even leafing through the pages of those cookbooks is too much effort. I just find them too overwhelming and invariably reach for this book because the recipes are simple but still tasty. You don't need to be a great cook to be able to make these recipes, the instructions are very easy to follow.
Despite being a slender volume, the book packs a lot of information into its pages, and still has a great collection of recipes.

I never found it to be a problem finding any of the ingredients. I have to admit that even though I consider my cooking to be quite wholesome I had never used some of the items like dried seaweed (you only use a pinch) and ground seeds myself, but after reading in the book just why these things are included, I found myself adding them to my own food as well. They are incredibly nutritious and such an easy way to bolster your child's immune system which I found so reassuring during the winter. I'm sure you can order these ingredients online if you can't find them in a store nearby. You use such a small amount that they will last for ages. And you can always leave those items out if you prefer.
The book is written in a very friendly manner and is a nice balance between educating and guiding you as to what your baby's and toddler's developmental needs are with easy to follow recipes. A reviewer below wrote that the last thing they needed was to be making their own baby cereal. Well I guess if that's your mindset then this book isn't for you because honestly it takes all of two seconds to make the cereal, and the jar lasts a very long time when you are using a couple of tablespoons at a time! Not that you can't find good organic packaged baby cereal, (I did try that myself but my baby would never eat it). And there's nothing stopping you from using the recipes as guides and substituting purchased products for some ingredients if it makes life easier.
The book takes you right through to when your child is a toddler with tips that help you sneak vegetables into their diet and great snack ideas too. There are some lovely recipes for cookies and cakes as well, which is nice, it's very realistic in that although you want to feel that you are presenting your child with yummy healthy food, there's always a place for sweet treats in life. I'm not personally a fan of soy products which some of the recipes call for, but I just substitute the tofu or whatever with chicken,lamb or fish.
I went online to check out the authors website and was happy to see that the adorable little girls on the website who I assume are the author's daughters look like very happy and healthy children. They are a great advertisement for the book.

The Shiitake Way: Vegetarian Cooking with Shiitake Mushrooms Review

The Shiitake Way by Jennifer Snyder is a fabulous vegetarian mushroom cookbook. The recipes are easy to follow, and great care is taken that they are all low fat and healthful. I especially love the mushroom loaf. It reminds me of my mom's meatloaf, from my childhood, but without the heavy meat. If you are interested in ways to cook these delightful mushrooms, but thought it might be difficult, try this book. It is inexpensive and well thought out. Andy Weil covers information regarding the health benefits as an added plus.

One of the best of the vegetarian cookbooks, this has delicious recipes (e.g., "Pasta with Greens and Ricotta"), and clear directions for relatively easy vegetarian fare. There's an emphasis on the "fast and easy," and each recipe has an estimated preparation time, often under half an hour. Sometimes these estimates imply a cook with Olympian speed and efficiency, but with experience, preparation time is reduced. For example, "Field Peas with Kale and Sweet Potatoes" requires boiling potatoes, and sauteing onions, kale, and peas. Total time is a reasonable 25 minutes. A nutritional analysis follows each recipe. Field Peas above has 142 calories, 6.9 G protein, 2.3G fat, 24.5 Carbohydrates, 19mg sodium, and 0 mg cholesterol.
There's no particular low-fat emphasis here: Boiled Polenta with Mushrooms and Cheese" has 15.6 g of fat per 8 oz. Serving, Moosewood Fudge Brownie have 9.3 grams per two-inch brownie, but there are several recipes with under 3 grams of fat per serving.
It's a very comprehensive book, with recipes for soups, quick breads, salads, sauces, main dish salads, grains, beans, pastas, fish, desserts, stews, stir-fries, pizza, and more. The book includes a guide to ingredients, and chapters on techniques, herbs, menu planning, and a list of recipes for kids, parties, vegans, and buffets. Finally, there is a chapter called "Quantities," so that you'll know with utter serenity that it takes 2 ½ cups of florets to get one pound of cauliflower.
For an emphasis on low-fat vegetarian cooking, take a look at the Moosewood Low-Fat Cookbook. Otherwise, this is an excellent cookbook for beginner or expert, and ranks with "Vegetarian Cooking for Everyone" as one of the best vegetarian cookbooks available.

The Best Simple Recipes Review

As a "seasoned" cook, I've been down most of the cooking routes: from the French classics, to one-hour gourmet, to complex vegetarian, to severe, healthy cooking by the docs. Now, I lean to this cookbook's style: simple, tasty, fresh and light -- somewhere between poached quenelles and fried tofu. This is a good grouping of contemporary recipes with zip, often with international flair (oriental, Mexican, etc.). Some recipes are updated twists on old faves like Tuna Melt but with artichokes; BLT salad using mayo-smeared croutons; vegetarian chili with corn; Southwestern salmon cakes. Others take classics but ditch the complex and daunting preparation-- like switching paper-thin potato slices for a potato chip mix or skipping the fish-steaming by laying salmon atop the asparagus, or using rotisserie chicken for a flavorful- but quick-chicken soup. Some clever ideas that work! The book has some surprising ingredient combos like kielbasa with potato leek soup. I appreciate the explanatory notes on the thoughtful but concise hows and whys of the recipes, and am impressed with the recommendations of brand name grocery items that they have tested. It's instructive without being pedantic or fussy. For those of us who like to see the cook in action, there are selected photos of some of the techniques and I picked up a few new ones. This is the kind of cookbook you can actually USE everyday, without resorting to the dumbed-down or goofy ones, or those with exotic hard-to-find ingredients or lengthy preparation. It reflects how we cook these days, and I plan to use it often.

I'm not a foodie, but I like to cook. I've also found its one of the greatest ways to pull together people from diverse backgrounds--nothing like closeting a group of unrelated people in a cozy kitchen, pulling out some good food and drink, and chatting. Beats the heck out of the cardboard pizza most study and discussion groups serve. So, when I received a copy of Megan and Jill Carle's College Cooking: Feed Yourself and Your Friends, I have to admit I was more than ready to give it a go.
Now, normally a cookbook labeled "College Cooking" is going to have 101 things to do with Ramen Noodles or 100+ ways to microwave canned foods so that they no longer resemble canned foods. The Carles didn't take this approach, however. They've put together real recipes, using real foods. The catch is, you're going to need a real kitchen--or at least access to one--to make their dishes. Sometimes that's not such an easy item to come by when you're still in college--even if you are a graduate student.
What do the Carles have to offer? Let's take a look at last week's brunch: fresh tomato soup (ripe tomatoes, salt, milk, and pepper), chicken salad pita sandwiches (real chicken, lettuce, celery, cucumber, grapes and a peppery mayo), zucchini olive salad (strips of crisp zuchinni, garlic, basil, lemon, olive oil, salt, pepper, Parmesan, black olives and sunflower seeds), and lemon sugar cookies (made with real butter). Everyone had fun lending a hand with the meal and it was absolutely yummy!
Unfortunately, everything in this meal--with the exception of the zuchinni salad--required access to a full kitchen; and that particular fact applies to almost every recipe in the Carles' book. Also, the Carles give quite a few tips on making vegetarian dishes using their recipes; but few tips on making their recipes either low-cal or low-fat. All of which explains why I'm reviewing this particular "College" cookbook on the graduate school site and not the colleges site--graduate students have been out of the nest long enough to have learned a few tricks to manage these particular issues.
If you do have access to a full kitchen (and a nice enough bank balance to afford some of the more particular ingredients these recipes call for--like fresh black olives as opposed to canned), the Carles have put together a really nice collection of recipes covering everything from comfort foods to party foods in College Cooking: Feed Yourself and Your Friends.

With its simple "Dummies'" approach this book has definitely improved my outlook on being gluten intolerant. Fortunately this is the first "gluten-free" book I got my hands on. I'm glad I paid the overnight shipping because this book ended a lot of agony for me. "What am I going to eat!?" I've been gluten-free for 2 weeks now and the results are amazing. It's been a long time since I've been pain free (my symptoms are arthritic in nature). This book has helped me become optomistic about being able to stay gluten-free for the long-haul and still enjoy food.

I will admit to avoiding these books like the plague for a long time. I wouldn't even flip through them to look at the pictures until my mom finally talked me into it. I love the photos. That right there will sell me on any cookbook, but I also like the lay out. I wish Rachael Ray would do the same thing. I think I'd like her books a lot more if they had photos like these do. Anyway, I ended up buying the slow cooker, the 20 minute meals and the grilling book. I took them home and spent a lot of time looking at the photos and reading each recipe and realized these are my new favorite cookbooks. I do cheat, I cut up my own onions, I make my own potatoes and sweet potatoes instead of using canned and pre-packaged ones, I grate my own cheese, and I try to use fresh ingredients over the pre-packaged, which I know defeats the purpose of the cookbook, but the recipes are right there with my own taste buds that its worth the extra time to make as many of the ingredients I can from scratch. I ended up buying all of the books and will continue collecting these as long as she prints them, and as long as they stay the same with the color photos and nice lay outs.
I love the sweet potato sheppards pie. That has to be my favorite so far, though I have enjoyed everything I have made.
I wish I hadn't been so stubborn for so long and found these books sooner. They are great, and remember, just because she says to buy pre-made mashed potatoes doesn't mean we can't make our own without all the added preservatives and junk, or that we can't cut op our own onions, etc. The options are there to help us save time, but if we have time, we can use fresh ingredients in place of pre-packaged.

Rachael Ray 365: No Repeats--A Year of Deliciously Different Dinners (A 30-Minute Meal Cookbook) Review

I agree that this is Rachael's best and most diverse collection of recipes to date. I actually did a rough count of the recipes by the protein or main ingredient. This is approximately how the recipes stack up: 53 meatless (many do contain cheese, however), 11 lamb, 4 egg, 8 ground turkey, 21 ground beef, 80 chicken, 21 beef (steaks, London broil, etc.), 5 ground pork, 16 pork (chops, tenderloin), 9 turkey (cutlets), 10 ground chicken, 29 fish (halibut, cod, swordfish, salmon, tuna), 11 veal (ground, cutlets, etc.), 30 shellfish (shrimp, crab, mussels, scallops, calamari), and 48 sausage, etc. (ham, prosciutto, chorizo, Italian sausage, breakfast sausage, bacon, salami, pancetta, etc). According to the listings in the front of the book, there are 48 pasta dishes, 33 soups and 20 burgers. I may have miscounted a few, but I think these numbers are fairly close. Perhaps some reviewers got the impression that the ingredients were repetitive because of the technique Rachael sometimes (but not always) uses of providing a master recipe with variations by swapping out ingredients. For instance, there is a master macaroni and cheese with broccoli recipe, followed by macaroni and smoked gouda with cauliflower, Tex-Mex mac and cheddar (with ground beef) and a chipotle mac and cheddar with chorizo and tomato.
While many of the recipes are Italian or Italian influenced, reflecting Rachael's heritage, with Tex-Mex following closely behind, there are also Spanish, Cuban, Indian, Chinese, Thai, Japanese, French, Cajun, Greek, German, and Carribbean influenced recipes as well. There is also plenty of "American" fare as well, although there are fewer traditional "comfort food" dishes in this book than there are in some of her other collections. The subtitle of the book is a hint at that. It truly is "a year of deliciously different dinners." And, after several years of watching Rachael's show regularly and making many, many of her recipes, I find that I can come close to the 30 minute mark in completing the meals, especially after the first time making a particular recipe.
As for pictures, if you are familiar with buying cookbooks, you realize that you trade off photographs for affordability. If this book were full of glossy photos of the food, it would probably have a list price of at least $40. I don't know of anywhere else you can find such a large and diverse collection of recipes for so little money.

Sorry Wayne, I love you but....
Our 10 year old son gave this book to his dad this Christmas. My husband enjoys an ocassionaly foray into the kitchen but he's not much into reading. I think this book would be more interesting to him if there was less talk and more pictures. As it is, I'm the one who's enjoying and using this book.
I would have given this book 4 or even 5 stars were it not for one serious flaw - it doesn't have pictures! In a book written for men I think that's a big oversight. Many men are visual learners. If this book is meant for beginner or reluctant cooks then photos or detailed illustrations would be most helpful. Besides, men generally feast with their eyes. Photos of plated dishes can help them choose what they would be in the mood to cook. The scant monochrome line drawings scattered in the book just don't cut it.
Having said that I love the authour's "I'm your buddy" style of writing. He is one funny guy. His on-screen persona comes across in this book loud and clear.
As for the recipes, they are easy to follow and yield declicious but not extraordinary results. Looking at the ingredients, which BTW are all available in any supermarket, you know exactly what to expect and the results don't disappoint. This is a great book to refer to on those nights when you just don't feel like cooking. Effortless yet satisfying meals good enough for the whole family.

Cucina Rustica Review

Having just spent a month in Italy, Cucina Rustica takes me back every time I use it. The recipes are simple to make and delicious. Especially wonderful is the Ribollita, zuppa di ceci and all the fagioli. The Spaghetti al Pomodoro Arrostito is the easiest to make and best tasting sauce ever. It's the only one my teenage son will eat (and he "hates" tomatoes)! Be sure to use fresh ingredients and shop at an Italian grocery store if possible.
