Table for Two: Meat- and Dairy- Free Recipes for Two Review

Table for Two has been a main source of meals for me. Yes, I live alone, with two cats. I don't have a lot of time, space, or money to cook. Enter Table for Two. Possibly Jo's most lifesaving book for vegans strapped for time and space such as I.
There are a lot of vegan cookbooks out there not suitable for new vegans. This is not one of them. Actually, all of Jo's books are suitable for new vegans! It is chock full of information to ease the pain of leaning to cook such as "Basic Cooking Terms", "Cupboard Staples", and even "Kid-Pleasing Recipes". I have to disagree with the latter...they tickle me pink and I'm no kid!
To start, the book has a great "Lay-Flat Binding" cover. Very convenient in the kitchen. It has recipes for every occasion, breakfast, lunch and dinner. I love starting my Sunday's with "Peanut Butter Banana Pancakes". Oh my! So delicious and still manage to stay in the realm of healthy eating! Another favorite for me and my workmates is Peanut Butter & Jelly Muffins. Those always go over well :-) Preparing dinner? Try a side of "Spicy Black-Eyed Pea Salad" or "Warm Dutch Potato Salad". There is a killer recipe for "Thousand Island Dressing" as well. Low on fat, high on taste! "Pan-Handle Chili" is a bi-weekly recipe for me. This recipe even freezes well for those who are actually a Table for One :) Another favorite is "Old World Cabbage Soup". It is JUST like I remember it from the Polish and Jewish restaurants my grandparents took me too as a child. The tomatoey base of this hearty soup really brings me back. Some vegans feel that they will never have another grilled cheese as long as they live. Not so. "Toasted or Grilled Cheeze Sandwiches" are delicious and they actually melt! Imagine! Cheezy goodness with a pickle spear on the side. Remember those days? Anyone can make a bean burrito but be honest...If you are like me it's usually a can of pre-mushed beans plopped into a tortilla. The "Bean Burritos" on page 101 will keep you wanting more...hearty and authentic.
There is an extensive variation to stir-fries with "Stir-Fries Tonight!" "Aunt Rose's Marinara Sauce" is so delicious and simple...you'll never pop the top off another jar of pre-made sauce again. There is an entire section on my favorite...potatoes! and grains and pasta. "Stuffed Sweet Potatoes", "Aunt Shayna's Potato Cakes" (yum yummy!), "Cheezy Macaroni" and "Brown Rice Croquettes" to name a few. Are you ready for dessert? "Schoolyard Oatmeal Cookies", better than mom used to make! A favorite of mine and my non-vegetarian boyfriend is "Maple Banana Custard" topped off with some "Carob Fudge Sauce". Decadent and you'd think a little naughty...but again, this is vegan cooking and the dessert is low fat.
This nowhere near completes the extensive span in this book, but I hope it gives you (vegan and non-vegan, young and old) a better idea of Table For Two. It is a staple in my house and a staple to my health. Enjoy!

The Single Vegan: Simple, Convenient and Appetizing Meals For One Review

don't let the the dearth of pictures deter you--this is a wonderful cookbook, even if you are not totally vegan. Especially good are the Tempeh-Sweetcorn Roast, Aduki Bean Casserole, and Tomato-Olive Spaghetti Sauce. I use this book almost every day. I hardly ever use any other cookbooks and was about to give up on them entirely until I found this one. Most of the recipes have been great and even the "worst" ones were okay. I haven't even tried everything yet because I love what I have eaten so far so much I get a craving for those recipes and make them instead.
The ingredients are almost all inexpensive and easy to find, plus there aren't a whole lot of perishables to purchase and waste. The ingredients include many of the foods that are anticarcinogenic, immune-system building, etc.
This book makes me enjoy being vegan. I feel priveledged to be eating this way and feel sorry for people that think that food has to be a dead animal and unhealthy to taste great.
I actually cook from this book almost every day (as long as I have some groceries in the house)after working a long day!

The Everything College Cookbook: 300 Hassle-Free Recipes For Students On The Go (Everything: Cooking) Review

I'm a junior in college, and my parents bought this cookbook for me as a gift for my first apartment. My experience with cooking hasn't really gone past heating up chicken cutlets in the oven, so I was a little wary of using an actual cookbook. But this book is really useful.
The recipes are varied (snacks, "date-worthy" meals, desserts, healthier cooking, etc.), and there are also a lot of tips that can help out new cooks, be applied to other recipes, or adjust the ones already in the book for less ingredients or quicker preparation. A couple examples...
-Blueberry Muffins: "Don't have buttermilk? Add 1 tablespoon lemon juice to 1 cup regular milk and let it sit for a minute before adding the egg."
-Creamy Chicken with Noodles: "To serve the basic sauce in this recipe with other foods, leave out the frozen spinach and experiment with a different combination of seasonings, such as cayenne pepper or a hot sauce for seafood."
-Grilled Honey & Garlic Spareribs: "Don't have a grill? The ribs can also be baked....[gives instructions]. Baste the spareribs frequently with the honey & garlic marinade during the final 30 minutes of cooking."
In addition, the book provides helpful advice on food safety, how to store leftovers, and cooking terms ('simmer' I know, but 'blanch' and 'dredge' were helpful to have explained).
Some people with more experience in the kitchen might find a lot of this book a little too basic, but I appreciate having instructions on how to hard-boil an egg, or to remember to leave a quarter-inch of potato pulp inside the skin when making stuffed potatoes so that the whole thing doesn't fall apart.
I agree with the previous reviewer that this book is by no means for anyone living in a dorm (though it claims to be). Maybe some colleges have fully-stocked dorm kitchens and grocery stores right near campus, but this book is definitely better for a student living in an apartment with a kitchen, storage space, and time to make actual meals.
There are definitely certain things about this book that some would consider drawbacks, but for a real first-timer with a kitchen, like myself, this book is perfect.

Cheap, Fast & Easy Cookbook Review

This cookbook is geared toward people who live in a dorm room and no access to a kitchen. Recipes are meant to be cooked in a microwave, hot plate or blender. It's not really cooking, it's just throwing together a quick meal in your dorm room.
