Everyone seems to like this book more than I do so I took a second look at it. I opened up to the chapter "Everyday Entrees". The first recipe for Gayle's Country-Style Steak does sound good, but it has to simmer for 1 to 1 1/2 hours. Not exactly "Fast". Looked at the next recipe Texas Cowboy's Pie and it calls for "shredded already-cooked beef" for which there is a recipe on another page. I took a look at that recipe and it would take more than 3 hours to cook. The 3rd recipe in this chapter is Beefed-Up Chinese Burritos. It calls for "Flexible Mexican Filling" for which there is a recipe on another page. You get the idea. I notice that these recipes that are needed for some of the general recipes are in a chapter titled "Budget-Minded Batch Cooking" that's at the end of all the chapters with recipes for dinners. So if so you decide to try this book, I'd suggest starting with that chapter. Each of those recipes does tell you which recipes require them. The recipes must be good if so many people wrote positive reviews, so take that into consideration when making your final decision as to whether or not to buy this book.

The Freezer Cooking Manual from 30 Day Gourmet: A Month of Meals Made Easy Review

I bought this book a few months ago after a friend recommended it. My friend has a cooking partner and they've been cooking this way for well over a year now. My circumstances do not allow me to spend a whole day cooking meals, but I have used the ideas and recipes in the book to fit our family. Instead of spending a whole day cooking enough dinners for a month, I will make 2 or 3 meals' worth of a recipe when I do cook. I freeze what we don't eat and I've accumulated quite a good supply of meals that are in the freezer.
Tara and Nanci have developed quite a system. There are charts and worksheets that are extremely helpful. This book is not just a book of recipes that freeze well. It's chock-full of information and techniques. Also, 30daygourmet.com is their website and they have message boards (with the authors participating!) and if you own the book, you can see and print out an additional 50 recipes, set up just like the ones in the cookbook!
The ingredients are listed in quantities for one meal, then they do all the math and multiply out what you need for however many meals you want to make.
The recipes are very family-friendly and delicious. No strange ingredients that you would have trouble finding. Everything I've made from the cookbook has been WONDERFUL. I've made the Taco Rice (serve it with cornbread - yummy!), Crispy Baked Chicken, Saucy Oven Pork Chops (recipe from website), Cheeseburger Quiche (also from website), and Cheese-Stuffed Shells. I made 80 shells last time I made them and you freeze them in rigid containers and they don't stick together and to cook them, you just take out however many you need in the morning and put them in the fridge and at dinnertime, put them in a cooking dish with spaghetti sauce on the bottom (I use Ragu!) and cover with more sauce and bake. Absolutely delicious!
This is a great way to have homecooked meals without having to cook every night. I really enjoy doing it! God bless you, Nanci and Tara!
PS Nanci and Tara also do conferences where they give a demonstration of their cooking methods. I'd love to see one of those - they also have a great sense of humor! With 7 kids between them, they really know what it's like to have a chaotic dinner hour!
Cooking this way saves you time and money and gives your family great meals. I can see that this would be useful for anyone - from young singles or newly-married to families with children at home to empty nesters! You won't be disappointed with this book!

Despite what the media and politician's (let's face it; they are the same thing) keep saying, the economy is only getting worse. Americans love their sequels but I don't think the Great Depression II is one they have been looking forward to. Never the less it is here. The big wigs in DC may not be feeling the pinch but the rest of us are and like our predecessors we are pulling ourselves up by our bootstraps.

Take Chef Susan Irby (the Bikini Chef) for instance who has just published her new The $7 a Meal Quick & Easy Cookbook (Adams Media). Irby is a cheflebrity who has cooked with the likes of Todd English and Ming Tsai and for the likes of Patrick Swayze, David Spade and Kate Segal. But in this 332 page guide she teaches you how to cook like a celebrity chef without blowing your fiscal or time budget.
The 301 recipes found within sound expensive but are not like the Grilled, Herb-Custed Pork Chops with White Wine Sauce ($6.96), Baked Tortillas with Crab and Basil ($6.60) and London Broil with Merlot Marinade ($7 flat). But what really sets Irby's work apart from others is the way she gives you a basic recipe then teaches you how to elaborate on it. Take for instance the humble omelet; first the Bikini Chef gives her basic omelet recipe then she expands on it with the Roasted Red Pepper Omelet, Vegetarian Omelet and the Golden Apple Omelet made with both Parmesan and Bleu cheeses.
Each recipe is broken down with a chart that details prep time, cook time, total cost, calories, fat, protein, cholesterol and sodium content. The book consists of fifteen chapters thirteen of which are recipes. The first two are purely instructional with chapter one providing information for those new to the home cooking game include a list for a properly stocked pantry and freezer while chapter two is full of tips for shopping on a budget.
The $7 a Meal Quick & Easy Cookbook is perfect for the 20-something just starting out or the family that is having to reinvent itself because of trying economic times.

College Cooking: Feed Yourself and Your Friends Review

I'm not a foodie, but I like to cook. I've also found its one of the greatest ways to pull together people from diverse backgrounds--nothing like closeting a group of unrelated people in a cozy kitchen, pulling out some good food and drink, and chatting. Beats the heck out of the cardboard pizza most study and discussion groups serve. So, when I received a copy of Megan and Jill Carle's College Cooking: Feed Yourself and Your Friends, I have to admit I was more than ready to give it a go.
Now, normally a cookbook labeled "College Cooking" is going to have 101 things to do with Ramen Noodles or 100+ ways to microwave canned foods so that they no longer resemble canned foods. The Carles didn't take this approach, however. They've put together real recipes, using real foods. The catch is, you're going to need a real kitchen--or at least access to one--to make their dishes. Sometimes that's not such an easy item to come by when you're still in college--even if you are a graduate student.
What do the Carles have to offer? Let's take a look at last week's brunch: fresh tomato soup (ripe tomatoes, salt, milk, and pepper), chicken salad pita sandwiches (real chicken, lettuce, celery, cucumber, grapes and a peppery mayo), zucchini olive salad (strips of crisp zuchinni, garlic, basil, lemon, olive oil, salt, pepper, Parmesan, black olives and sunflower seeds), and lemon sugar cookies (made with real butter). Everyone had fun lending a hand with the meal and it was absolutely yummy!
Unfortunately, everything in this meal--with the exception of the zuchinni salad--required access to a full kitchen; and that particular fact applies to almost every recipe in the Carles' book. Also, the Carles give quite a few tips on making vegetarian dishes using their recipes; but few tips on making their recipes either low-cal or low-fat. All of which explains why I'm reviewing this particular "College" cookbook on the graduate school site and not the colleges site--graduate students have been out of the nest long enough to have learned a few tricks to manage these particular issues.
If you do have access to a full kitchen (and a nice enough bank balance to afford some of the more particular ingredients these recipes call for--like fresh black olives as opposed to canned), the Carles have put together a really nice collection of recipes covering everything from comfort foods to party foods in College Cooking: Feed Yourself and Your Friends.

While the two entrees I've made from this book were quite tasty, the nutritional information/serving size were a disaster. The Egg Fried Rice with Peas says that it serves 4 and is a mere 182 calories and 3g of fat. However, the recipe takes 4 cups of cooked white rice (which would be 672 calories minimum), then 2 Tbsp Peanut oil (240 calories & 26g fat). If you add these two together and divide by 4 you get 228 calories & 6.5g fat per serving - that's before adding ANY of the other ingredients from the recipe.
The other recipe I made was the Tortellini Pasta with Tomatoes and Kalamata Olives. This recipe says that it serves 8, but it only calls for 1 - 8 oz package of fresh tortellini. Do you know what a teeny little serving 1 oz. of tortellini is? It's probably enough for a 2 year old. Clearly they intended to put a 4 person serving, which would be consistent with the nutritional information. I find it a hassle to double check everything to ensure the recipe makes sense before planning a meal.

I just wanted to say that this is a great book! I have read a couple other "once-a-month" cookbooks, and have found them to be too complex for the stage of life I am in. This book was simple to understand and the ideas were easy to do! The recipes are very family-friendly. They were very easy for me to adjust for my youngest son's food allergies, and both of my children love the food I've made from this book. So far it has been cost-effective, and doing one big shopping trip this month has allowed me to keep my kids out of the grocery store during flu season, which I'm very thankful for. I worked very hard the first two days of cooking, and spent a large portion of my "grocery money" in one shopping trip, but it has been so worth it. No more running to the store every few days (and tracking all those receipts!), no more spending a couple hours each day on top of my other work preparing dinner and cleaning up, no more wondering what to make for dinner tonight...that time is now being spent on more important things. Having enough food in the house and meals prepared in my freezer for a whole month has taken a huge amount of stress off my shoulders. Thanks Deborah!!

Vegan on the Cheap: Great Recipes and Simple Strategies that Save You Time and Money Review

The recipes in this book really are inexpensive to make. The book starts with about 28 pages of advice on ways to save money on food, and the rest of the book is devoted to recipes. I have tried the following so far, and thought they were great:
Cheezee sauce (excellent!)
Comfort loaf (Best vegan 'meatloaf' I've ever had)
Baked ziti (Delicious; I was amazed at how well the tofu worked in this dish)
Mexican rice and bean bake (Today's dinner - also outstanding)
The one caveat I have about the book is that some of the directions appear to be incomplete. This is okay for experienced cooks that can just figure out how to make it work. But someone with less experience and know-how could possibly end up wasting money by trying recipes that won't work.
For example, the Cheezee sauce recipe tells you to combine some ingredients in a saucepan. Then it says, "Turn the heat on medium and whisk in the soy milk. Cook, stirring, until the sauce thickens, about 1 minute." This makes it sound like you are supposed to just turn on the heat and have the pot on the stove for 1 minute. What you have to do is bring the mixture to boiling and then cook it for about 1 minute longer. So, the author forgot to mention the part about bringing the mixture to boiling. If you've never made a sauce this way before, you might throw it out if you follow the directions, because it's not useful in that watery state.
In the Mexican rice and bean bake, the recipe involves partially cooking some rice on the stovetop, and then putting it in the oven to cook the rest of the way. I think that there is something missing from the directions there as well, because I cooked and baked as directed, and had to double my baking time to cook the rice completely. (And, no, there is nothing wrong with my oven.) I presume that it was supposed to be cooked a little longer on the stovetop first, but again, the directions just indicated that you were to return the stovetop mixture to boiling, and then dump it in the pan to go into the oven. I suspect you were supposed to boil it for a little while on the stovetop first.
The food tastes great. She really does a lot with inexpensive ingredients. (One of the things I liked about this cookbook was that she only asks you to have a few non-standard ingredients on hand, unlike most vegan cookbooks, which expect that you are secretly running an international grocery store in your kitchen.) But considering I tried 4 recipes so far, and 2 of them had inaccurate directions, I'm a little concerned about the rest of the book. I'll just have to remember to be more vigilant when making these recipes.
I think this is particularly important for this book, because I am sure that this book was geared, in part, to the 'starving students' and other new vegans who want to eat vegan on a budget. In general, younger people have less cooking experience and therefore will be less likely to know how to 'fix' these recipes. Also, I have a few of Robertson's other cookbooks, and haven't ever come across this problem so far. So, I'm disappointed for that reason, too.
But, man, that Mexican rice and bean bake is REALLY good.

As the title implies, this cookbook would be useful for folks looking to prepare meals without simply resorting to microwaving frozen dinners. Some of the included recipes are the sorts of things that you might find in a club recipe book and in fact, I've seen variations of several of them. This is not a
"whole foods" type of cookbook: it makes heavy use of processed foods. For example, there is a recipe for a "pizza" which uses canned biscuit dough for the crust. The recipes are devoid of nutritional information so you'll have to use your own judgment in that regard. If you already have a collection healthy, quick meals, then this cookbook is not for you. On the other hand, if you are at a loss for how to feed a family that's frantically on the go, this book might be for you.

$3 Meals: Feed Your Family Delicious, Healthy Meals for Less than the Cost of a Gallon of Milk Review

This book does a brief overview of how to save money at the grocery store (nothing really new). It goes on to present a major money saving strategy -- making every sauce, stock, dressing, and marinade from scratch. From there, the author presents recipes for main dishes. She finishes with recipes for baking breads and muffins from scratch.
The recipes are sound, and I have no doubt that they will produce reasonably healthy and tasty results. But...
#1 -- there is no reason to make every sauce from scratch. With sound couponing and savy shopping, I can get a bottle of bbq sauce for free (same for salad dressing, bottles of marinade, etc). If I make those things from scratch (and I frequently do), it is a question of quality, not cost.
#2 -- the main dishes presented are not complete meals. Most of them require additional side dishes (vegetable, fruit, and/or starch) to complete the meal. Beyond a passing mention of a crispy salad and fresh bread, the author does not provide any assistance in how to complete the meal and stay under budget. No ideas for inexpensive sides are provided.
#3 -- many of the recipes are not make-able for the advertised $3 pricetag. Unless I were to catch the fish myself, I simply do not see how I could make a dish calling for a pound and a half of bass or cod for a total cost of under $3. Nor could I make a dish that calls for 2 bulbs of fennel along with a pound of chicken and come in at that price.
#4 -- the serving sizes are a bit unrealistic. Most recipes call for 1 to 1.5 pounds of protein (beef, fish, chicken, or pork) and will serve 4 to 6 people. For six people, that's a 4 ounce portion of protein. Admittedly that is the recommended serving for many, but it is not enough for some men-folk and growing boys.
#5 -- virtually none of the sauces/marinades/dressings presented in the beginning of the book are used in the remaining recipes. so what are they for?
I think this book does have some good points, and a lot of good basic recipes. It presents some of the information and tools needed to control grocery budgets, but not all of them. If the author intended to present meals that were under $3 per serving, she succeeds. However, her book implies that it is $3 for SIX people... an unrealistic and unrealized promise. If I caught all of the ingredients on sale at their lowest price of the year, I could conceivably make most of them for under $6 each. If I were shopping on an average day, many of them would come closer to $10.

The Everything Quick Meals Cookbook: Whip up easy and delicious meals for you and your family (Everything (Cooking)) Review

This is typical of the other "Everything" books or "The Idiot's Guide", it's a comprehensive cookbook to cover 30 minute meals. As if you've not had enough of Rachael Ray and Robin Miller.
The biggest tip for any of the quick cooking books is to have a plan. Whether it's a plan of what to have for dinner or a plan how to use leftovers or a plan to make a menu. Either way it's what gets you going. So as soon as you hit the door from work you know what to start making. You're not standing gazing in the refrigerator as though you're a deer in headlights.
This is an OK cookbook, I like that it does give how many the meal serves, it includes prep times and cooking times up front. The recipes are not divided into those categories, you'll still have to scan all the recipes to figure out if you have 30 minute recipe or a 10 minute recipe (and yes there are 10 minute recipes in this book). And this cookbook is much better than the BHG "Off the Shelf" one.
If you want a cookbook divided into quick, quicker and quickest look at The Family Dinner Fix: Cooking for the Rushed, it's sorted that way.
An example of a recipe in this book is buying a rotisserie chicken from the supermarket, coming home and shredding it and then putting it over a bagged salad, adding drained mandarin oranges, golden raisins and italian salad dressing. Hummm...I don't know if that's much of a recipe? Another recipe to cook chicken thighs and then spread store bought salsa verde over them. There's are no suggestions for side dishes, accompanying dishes, etc. If I'm in such a hurry that I can't figure out to pour a jar of sauce over some cooked chicken thighs then I probably need help with the whole meal, not just one component of it.
I wasn't real impressed with this book. If it had been divided into menus or suggested side dishes then I would rate it a little higher. There are no pictures, there are 3-4 recipes crowded onto one page. It's printed on recycled paper so don't get the pages dirty or wet. Overall, it's what's expected of the Everything series books. I would spend my money on Saving Dinner: The Menus, Recipes, and Shopping Lists to Bring Your Family Back to the Table or The Food Nanny Rescues Dinner: Easy Family Meals for Every Day of the Week.
Another suggestion would be The Good-to-Go Cookbook: Take-along Food, Quick Suppers, and Satisfying Snacks for On-The-Go Families. They're in the similar vein as they cookbook but put together a little better. HTH.

The Everything Freezer Meals Cookbook (Everything Series) Review

I bought several of these freezer cookbooks. This one is my favorite. I am not going to spend a whole day cooking for a month. I wanted a book that showed me how to cook a meal for tonight and make extra to freeze for later. This one has directions for both finishing part right then, and for freezing for later. It works out great.
I also think this has the best recipies. Everything I have tried has been great. The recipe for South of the Border Lasagna is worth the price of the book. My husband grabbed the frozen one just the next week to have for dinner.
These are not "light" recipies; they are tasty!

The Food Nanny Rescues Dinner: Easy Family Meals for Every Day of the Week Review

I feed 6-7 people every day for dinner, sometimes more if one or two of my kids' friends are over. I think about food all day even when it's not meal time because I'm thinking about what to put together to make a cohesive meal, if I laid it out to thaw, if I have enough of it, if I have any leftovers that I can incorporate so as not to waste food. It is exhausting. I purchase absolutely any cookbook there is that will help me make meal planning, prep and cooking easier. So when I saw this book I had to have it.
The very first page was planning the weekly menu like I've been trying to do for years. This book is having Comfort Food on Monday, Italian on Tuesday, Fish & Meatless on Wednesday, Mexican Night on Thursday, Pizza Friday's, Grill Night on Saturday and Family Traditions on Sunday. I've been doing something similar but trying to make mine Meatless Monday's, [...]. But regardless of what you pick this is excellent meal planning advice. It gives yourself (and the kids and spouse) an idea of what to look forward to rather than coming home with pots and pans banging around with no idea of what to prepare.
That is what I liked about the Sandi Richard book too, The Family Dinner Fix: Cooking for the Rushed. She has similar ideas to Ms. Edmunds. I would use a calendar that you get free in the mail and write your "theme" across the top. Your themes might be different than the suggested themes in this book but either way come up with 7 themes and write them across the top of the calendar.
Now go to each chapter in this cookbook (or any other cookbook) and list a recipe that corresponds to that theme. List the page it is on and briefly write any side dishes that you would be serving with the main entree. Ms. Edmunds suggests making your menu first and then your grocery list second. I believe in making the grocery list first and then making meals from that. I try to buy what's on sale and then make meals from the sale foods rather than the other way around.
I made the white chicken chili that was listed under the Comfort Food section. It's intended to be a Monday meal but I think we had it on a Wednesday (oops!). LOL. It was very good. Also under each recipe is a conversation starter. It's a question you're to pose to the family around the dinner table to stimulate conversation. I actually purchased these from www.savingdinner.com and here they are free.
There are also bread recipes, side dishes, desserts, after school snacks, cooking tips, and other great ideas to get the family back to the dinner table. It's an awesome book. One of my better purchases. This is certainly a fantastic gift, wedding or otherwise. It would be a great gift for someone just starting to cook who needs ideas and instruction for getting a complete meal on the table.
Another good cookbook I like is Saving Dinner: The Menus, Recipes, and Shopping Lists to Bring Your Family Back to the Table by Leann Ely. It has shopping lists, menus, and great recipes to get started. It's not laid out with "theme" nights like the Food Nanny but it's good nevertheless.

I got this for my preteen daughter, who is becoming very self-conscious about her body. So I educated her about what good foods and bad foods will do to our bodies. Putting good foods in our bodies will keep us healthy and this cookbook was a smash. That Acorn Squash recipe was our favorite...its now a staple we enjoy at least once a month. Great for Thanksgiving as well.
