Fresh Mexico: 100 Simple Recipes for True Mexican Flavor Review

I spied this book online a few months ago and was eager for its release (today, 8/25/09). Of course, I bought my copy this morning and immediately went to the grocery store for ingredients!
To my delight, these recipes seem authentic without being completely impossible. For example, the author calls for Mexican Ibarra chocolate in her mole sauce...but explains that you can substitute semisweet chocolate with 2 1/2 teaspoons of cinnamon and a little almond extract. These "tips" and substitutions are great because sometimes the grocery store doesn't have a wide variety of foreign foods.
While some of these recipes seem authentic, there are also some delicious looking "fusion" recipes. I am especially excited for the pine nut and pomegranite juice brittle (think Mexican trail mix) and cheese-stuffed jalapenos in puff pastry. Yumm!
The book itself is very beautiful to look at. The bright hues look great against the colorful pictures and savory recipes. There are appetizers, soups, salads, entrees, sides, salsas, and desserts.
This book is so outstanding because it isn't simply enchilada and flan recipes. We've seen those before! While there are some traditional recipes, there are many exciting "fusion" ideas too. I love the emphasis on FRESH ingredients (as the title hints) and easy to find items.
Recommended to fans of Mexican cuisine and those looking to transform their traditional recipes into something healthful, innovative, and delicious.

Quick and Easy Korean Cooking (Gourmet Cook Book Club Selection) Review

Ok, so this book is not a scholarly dissertation on Korean cooking. In fact, au contraire, it is extremely minimalistic. Most recipes contain a 2 sentence intro, less than 10 ingredients, and less than 5 steps, and among the most exotic ingredients it calls for is korean chile paste. It is not difficult to see grandmas in Middle America pick up the book, and cook through the entire book.
There is a fair representation of recipes from the familiar like korean barbecued beef ribs, to the unusual like black rice porridge. If you are looking for the definitive tome on korean cooking, this is not the book. But if you are a beginner and/or just looking for new recipes to broaden your weeknight repertoire, this book will more than do justice in introducing simple but authentic korean flavors.

The Ethnic Vegetarian: Traditional and Modern Recipes from Africa, America, and the Caribbean Review

The Ethnic Vegetarian is a book of mostly very easy-to-prepare recipes, cleverly arranged by related cuisines: 1) African, 2) Afro-Carribean, 3) African/Native American (a very specific cuisine from the American South slavery and early post-slavery era), 4) Creole/Cajun, 5) Southern (closely related to African/Native American cuisine), and 6) Modern African American foods. Within each section of cuisines are short lists of condiments, appetizers, salads, soups, mains, breads, desserts, and beverages.
Because of the ambitious nature of the book--six cuisines and at least six courses per cuisine, in only 272 pages including all the intro stuff and the index--none of these cuisines is covered in very much depth. This means there is offered only a small handful of each kind of food. There is a very short menus section toward the end, but this too is enough to tempt but not satisfy.
I think this book is best for two types of cooks:
1) beginning cooks interested in trying their hand at making tasty, basic dishes of African and African-American origin. The book is great for new cooks who love many different flavor combinations--sweet, spicy, earthy, rich--and who want to start easy and work their way up; and
2) very confident cooks who already know what generally they prefer to cook and eat, know how to experiment widely, and want some suggestions for great African-origin dishes, flavors, and combinations, and are comfortable adapting recipes to their liking.
There is a section in the back on what to stock in your pantry--very useful if you are just starting out in your cooking adventures and aren't really sure what foods you might want to have on hand. Similarly, there's a basics section that tells you good stuff about preparing dried beans, toasting nuts, prepping chiles, etc.
I found the book fairly useful as a compilation of suggestions--but suggestions I would almost certainly, and sometimes radically, revise to suit my tastes. My tastes are foods made fresh from scratch, whole foods, and artfully-prepared vegetarian foods that don't try to pass themselves off as meat--tastes not terribly accommodated by this book. The book is also fairly heavy on the dairy and eggs, which means vegans have to do the usual recipe adaptations.
This book is, in my opinion, a little too reliant on prepared foods that are meant to mimic animals. This isn't necessarily a fundamental flaw in the book: There is a place for this kind of cooking, particularly if you are in a household where someone is a hard-core meat eater and has a prejudice against anything vegetarian; in this case, maybe you want foods that seem enough like meat to entice the carnivore to even try your dishes. It is also true that a couple of the cuisines in this book are meat-heavy (particularly Southern US cuisines) and therefore take some creative re-engineering to adapt them to vegetarian palates.
It's just that I don't think vegetarian food has anything to apologize for (quite the contrary, great vegetarian food is worthy of trumpeting!).
One thing that keeps me from giving this book a higher rating: In the discussion of types of vegetarians, the author includes people who eat chicken and fish. Let us be very clear: No vegetarians eat animals. There is a wide spectrum of vegetarians, with vegans (no animal products of any kind whatsoever) being the purest and lacto-ovo vegetarians (dairy and eggs included) being the most permissive. But no vegetarian of any kind will eat a fish or a chicken, as these are animals, and vegetarians by even the most lax definition do not eat animals. Although there are no recipes in the book that include chicken or fish, I am dismayed that a "vegetarian" cookbook would include eating animals in a "vegetarian" diet. If you've ever been stuck on an 11-hour airplane trip with no food to eat because the term "vegetarian" is misunderstood, you'll understand my dismay.
.......
The Ethnic Vegetarian is a decent book, not a great book. I do pull it out of my shelf on occasion. I'd pull it out a lot more often if it were more comprehensive, less oriented toward prepared meat-like foods, and perhaps a little more advanced. My complaints about this book may be the very reasons someone else praises it.
In any case, I'm just glad there's such a book out there at all, whether I perceive flaws in it or not.

Lean and Luscious Favorites: The World's Best 301 Lowfat Recipes: Delicious, Easy to Prepare, Fun, and Healthful Review

I love to collect cookbooks, but insist on having full nutritional breakdown and healthy recipes. This book is going to quickly become one of my favorites. The recipes are short, using natural ingredients, and healthy. There are many great new ideas for boneless chicken, and ideas for everything from appetizers to desserts. The very first recipe, Crab-Stuffed Mushrooms, looks wonderful, and will be one of the first I will try. I bought a copy for myself and one as a gift for a friend, and definitely recommend it.

How to Cook Everything: Quick Cooking Review

Mark Bittman, a widely recognized and respected cookbook author and New York Times food columnist, has succumbed to greed. He and his publishers have split up his very well received book `How to Cook Everything' into several separate pieces and is charging for the pieces more than the price of the original book. This volume, `Quick Cooking' is one of the pieces.
The author and the publisher are not trying to hide this fact, although I suspect they will not shed a tear if you buy the book with the impression that this is new material.
On the surface, I am sure they will rationalize that they are doing their readers a service by providing parts of this very good book at a lower list price than the whole book. This is pure hokum. The original book is a very good contribution to the genre of `If you own only one cookbook, this would be it' cookbook. So, why would I want to buy only part of that book? If I want a book on basics, I would do much better to buy Alton Brown's `I'm Only Here for the Food'. If I want a book on quick cooking, I suspect one of Rachael Ray's books will be better AND cheaper.
Speaking of Herr Doktor Brown, he and his Food Network colleague Ina Garten seem to have caught the same case of avarice in that they have had knockoff volumes published with artwork which is based on their best-selling volumes, but which contain cut rate material, or maybe even no material. They are selling pure hype.
I have a great amount of respect for all three of these authors. I have even met Alton Brown and find him a truly gracious gentleman who deserves all good fortune and celebrity he can garner. But I do not wish these authors to put out products that some people can easily buy under a false expectation fostered by the product's marketing.
Do not buy this book. Buy the complete `How to Cook Everything' and be done with it.

The Urban Vegan: 250 Simple, Sumptuous Recipes from Street Cart Favorites to Haute Cuisine Review

I just happened upon The Urban Vegan at my local "booksellers" and did not realize it was so new, it is copyrighted for next year! Lucky me! I loved the tone of Dynise's voice in her introduction. It was if she was articulating my thoughts exactly but much more mellifluously. I do not have any vegan friends so to read her words was really cool.
I am sure this cookbook/lifestyle guide/armchair international adventure will do very well. I made the Cauliflower-Chickpea Tagine tonight (adding potatoes since I am wheat free at the moment) and It Was Amazing. Tomorrow I am cooking up the Pumpkin Risotto with Sage and Sundried Tomatoes and have my eyes on the Chickpea Paprikash for next week. Yum! I am sure I will not run out of "What's for dinner?" for a long time to come. Thanks Dynise!

Global Vegetarian Cooking: Quick & Easy Recipes from Around the World Review

Global Vegetarian Cooking presents fast, vivid, fresh vegetarian recipe ideas from Africa, Asia, Middle East, Latin America and the Caribbean. Beautiful color photos pack the book and crucial information about genetically modified organisms or GMO foods is presented in the introduction. Each recipe has a guide that lists its type (vegan, etc.), number of servings, minutes of preparation and time for cooking. There are recipes for salads and side dishes, main dishes, starters, snacks and soups, desserts and drinks, plus a glossary of food and spice items. A helpful nutrition guide at the beginning teaches the cook how to plan healthful diets with fruits and vegetables as the mainstay of nutrition. Protein rich foods listed include nuts, seeds, pulses, cereals and grains, soya products (with a GMO caveat), and dairy products for non-vegans. Specific sources for vitamins are listed as well as tips for vegetarian meals and meal planning. Recipe notes and a colorful spread of the Ingredients Gallery help to shop for recipe ingredients.
Wonderful recipe choices that are truly global in derivation include: Mushroom and Tofu Stew (China), Pumpkin Curry (Guyana), Spiced Sweet Potatoes (India), Tabbouleh (Syria/Lebanon), Rice with Nuts and Raisins (Caribbean), Muttabal or Eggplant/Aubergine Dip (Middle East), Hummus (Lebanon), Lentil Soup (Trinidad), Nachos (Mexico), and Peanut or Papaya Soup (Africa).
Global Vegetarian Cooking is recommended by some rather well-known people i.e. Julie Christy and Dr. Benjamin Zephaniah. -- You will like it too.
