Sundays at Moosewood Restaurant: Ethnic and Regional Recipes from the Cooks at the Legendary Restaurant (Cookery) Review

so what the heck am I doing with a vegetarian cookbook?!?? Well, I was given the book and some suggestions -- Sopa de Lima (from the Mexico section) and Saffron Butterflies. But it's a veggie cookbook, so it just sat on my shelf -- until I had dinner with the person who gave it to me. It wasn't until AFTER dinner, she told me it was recipes from this book -- the meal was so good, I didn't even notice it was meatless.
So, I tried them, and now I'm HOOKED! Sopa de Lima is great food for during halftime of basketball and football games -- and I later found out I can make it fast and easy with some simple substitutions (hint: use a jar of salsa instead of a bunch of other ingredients). Saffron Butterflies is SMOOOOOOOTH and good -- with or without some meatballs thrown in. These two were so good I've had to try others and now "Rumpledethumps" (silly name, but GREAT DISH) is a personal favorite -- I just use it as a side dish along with a London Broil. Okay, so I'm a carnivore -- these recipes are great standing alone, and most of them work well with meat added or on the side.
More than just the great recipes, this book is great for the stories, too. I never would have thought cookbooks make good reading, even when I'm not cooking, but this one is.

The Jewish Vegetarian Year Cookbook Review

This book is great for learning about Jewish traditions. But I was disappointed by the selection of recipes. If you take away the Jewish recipe names, it is mostly just a standard collection of vegan recipes. I wanted to learn how to make vegetarian matzoh ball soup, tzimmes, noodle pudding and rugelach. Instead I found recipes for ratatouille, spicy peanut pasta, tamales and baklava. Which would have been fine for an international cookbook, but not what I was looking for in a Jewish cookbook. I ended up returning the book.

Hip Kosher: 175 Easy-to-Prepare Recipes for Today's Kosher Cooks Review

This book is a winner. The recipes are simple, modern, and focused on fresh fruits, vegetables, healthy entrees. It arrived on Wednesday and by the following Sunday, I had experimented with six different recipes ranging from terrific side dishes to salmon to dessert. All were winners and I'll make them all again. This cookbook IS hip and you don't have to be kosher to enjoy it.

Yiddish Cuisine: A Gourmet Approach to Jewish Cooking Review

This book doesn't have the glossy pictures or fancy covers that you often see in cookbooks these days, but the content is superb. The recipes are beautiful, and strike me as authentic. The best part of the book, though, are the stories the author writes that put the food into the context of Ashkenazi Jewish culture. As a non-Jew, I found Sternberg's stories and sidebars both fascinating and intimate. I've other books on Jewish food, and this is the only one I use regularly.

Healthy Helpings Review

This cookbook by Norene Gilletz excites me so much that I don't know where to start in sharing a review with you. If you don't have it, get it. ...as fast as you can!
The cookbook covers so much that everyone is sure to find something that satisfies within the 411 pages of recipes -- 800 recipes no less! Did you see that? 800 recipes are included in the easy to read, colorful to look at, several recipes with photos of several dishes in each photo. The photos are all in one place and I think I like that very much. The title reads "800 Fast and Fabulous Recipes for the Kosher (or Not) Cook". I am not a Kosher cook but I have found so many recipes that I know I will use over and over again. But for those who ARE Kosher cooks, you will be very happy with this cookbook also. There is a whole section on holidays and celebrations that I'm sure will be helpful to you.
You can tell Norene Gilletz knew what she was doing in designing this cookbook. In the beginning she acknowledges all those who have helped her with ideas or tested recipes. She credits her Mother as one of several who inspired and taught her, or encouraged and advised her. She had willing taste testers and even had a focus group to keep her apprised of what people want and "need to know in today's kitchen".
"Healthy Helpings" is a healthy cookbook so for those who look for the nutritional analysis, you will be happy to know it is included with each recipe. There is a whole page of guidelines Norene used to analyze her recipes. I personally found it very helpful to know things like "4 to 6 servings" was analyzed for 4 servings or "optional ingredients and garnishes in unspecified amounts were not calculated". These are the questions that sometimes puzzle those who are trying hard to figure closely all the nutritional analysis.
As any thorough cookbook author would include, there is a list of staples for a healthy kitchen and it includes oils/vinegars, mayonnaise/salad dressings, dried legumes, tomato products, canned vegetables/legumes/fruits/fish/soups, pastas/grains/cereals, snack foods/cookies/crackers, breads/bread crumbs, beverages/juices/miscellaneous, and dried herbs & spices, baking supplies. There is also a section on perishables, frozen foods and herbs. There is so much information under each of the staple items and so much "healthy" information listed before you even get to the first recipe! I really like this in a cookbook!
The format of "Healthy Helpings" recipes is done in a single list of ingredients with directions below. There are two columns on each page, which seems to afford extra room to get more recipes per page. The print is large enough to read and is a nice feature without a feeling of paper wasting as in some of the other cookbooks I've bought lately -- the kind with large fonts and only one recipe per page and an obvious waste of paper. But not "Healthy Helpings"! I have the feeling that there was so much information to include that Norene and her publisher, Woodland Publishing, figured out the best way to get the most print on a page without it looking too crowded, etc.
Almost all of the recipes have the little friendly paragraph at the beginning of a recipe that we all love to read -- the little hint of origin or inspiration for that particular recipe. That feature means a lot to those who like to read cookbooks like they read novels (I'm one of them!).
I collect cookbooks and have thousands of them, but this is one that we will use over and over. In fact, I have made several of the recipes already and some even twice and I've only had the cookbook just a few weeks! My favorites so far are:
Chunky Monkey
Grilled Orange Teriyaki Chicken
Teriyaki Asparagus
Israeli Salad
Rainbow Rice Pilaf (the first recipe I tried from Healthy Helpings)
There are many other recipes I have marked to try so I already know this cookbook is going to take a prominent place on the cookbook shelves near the kitchen, probably next to Norene's "Food Processor Bible", which we use a lot also. In fact, I have loaded this cookbook with bookmarks and post-it flags to help me find the next recipe I want to try.
Another good thing -- the recipes call for ingredients that most of us already have in our cupboards. When I feel inspired to try a new recipe I can reach for "Healthy Helpings" and know I will most likely have all the ingredients on hand to make a healthy and satisfying dish.
I highly recommend "Healthy Helpings" as an addition to your cookbook shelf. At $19.99 it's affordable and makes a nice gift for yourself or to someone you'd like to help on their way to a more healthy lifestyle. I'm including the recipe for "Israeli Salad" below. Not only is it delicious and healthy, but it is also a very pretty dish to have on your dinner table.
Israeli Salad
1 head of Romaine or iceberg lettuce
4 green onions
1 medium onion
2 green peppers
1 red pepper
1 English cucumber, peeled
8 firm, ripe tomatoes (preferably Israeli)
4 Tablespoons olive oil (preferably extra-virgin)
4 Tablespoons fresh lemon juice
1 teaspoon sale (or to taste)
Freshly ground pepper, optional
Wash and dry vegetables well. Dice them neatly into 1/2-inch pieces and combine in a large bowl. Sprinkle with olive oil and lemon juice. Add seasonings; mix again. Adjust seasonings to taste.
Yield: 8 servings. Salad tastes best eaten the same day it is made, but leftovers will keep for a day in the refrigerator. Drain off excess liquid in the bottom of the bowl before serving.
Note: This recipe makes quite a lot so either halve the recipe or invite someone over to help eat it.

A Taste of the Past: The Daily Life and Cooking of a Nineteenth-Century Hungarian-Jewish Homemaker Review

This lovely book brings a slice of Hungarian Jewish culture to life in a uniquely three-dimensional way - the sights, the tastes, the details of everyday life. I found the recipes easy to follow and the pictures charming. The author's great-grandmother whom he profiles here is a refreshingly complex character - her views about such things as religion and national identity change over time, along with historical changes, and some of these shifts are even reflected in her food! For example, this is one Hungarian cookbook that is light on the paprika - apparently ginger was the spice of choice in the 19th century. Who knew?

Cooking Jewish: 532 Great Recipes from the Rabinowitz Family Review

Although I own over a thousand cookbooks and this one just arrived last week, it is already one of my all-time favorites ... truly phenomenal!
The recipes were all tried-and-true favorites contributed by family members all over the world, and preceded by descriptions of what makes each one so wonderful. Each and every recipe was tested and perfected by the author, who carefully noted every relevant detail to virtually ensure success.
The caramels are scrumptious (and well worth the price of the book). Every recipe seems to be that way ... incredibly delicious, and written to virtually ensure success. The author also offers simplified alternatives, such as roasting eggplant and peppers in the oven rather than on top of the stove for Romanian Eggplant.
One caveat: although Cooking Jewish holds a special appeal for Jews, the food is scrumptious for any palate. (I'm a Christian, and these are recipes anyone would love, and which I would proudly serve anyone.)
I can't even imagine not loving this cookbook ... It offers everything I consider important in a cookbook, and the recipes are well-tested, incredibly delicious, and clearly written. HIGHEST POSSIBLE RECOMMENDATION!!!!!!!!!!!!!!!!!!!!!!

The Children's Jewish Holiday Kitchen: 70 Fun Recipes for You and Your Kids, from the Author of Jewish Cooking in America Review

When Bon Appetit and other prestigous publications give this one rave reviews, that's a hint that you might have a "find"...and they are right. From Sabbath to Passover, there are recipes that are delicious, generally very easy to prepare and clearly explained. Although designed for children, I think this one would be excellent for anyone who wants to become an excellent Jewish cook. It is like having a crash course in both the essentials and some special variations.
The book is extremely attractive and there are additions which make it special, such as suggested prayers, historical info about each holiday, great illustrations, etc.
Although the vast majority of the recipes are very simple, when one is a bit more complex, there are often step-by-step illustrations. An example would be Children's Cholent, where every single part of the process is pictured, right up to putting the dish in the oven.
I was pleasantly surprised to find that many of the recipes were unique or new to me.
ANOTHER PLUS: The author suggests which parts of the recipe might be appropriate and easy for a child to handle and which should be done with supervision.

Jewish Cooking Boot Camp: The Modern Girl's Guide to Cooking Like a Jewish Grandmother Review

You take chances when you order a book sight unseen.
That being said, I urge readers to use caution with this book, especially if you are planning to prepare a meal according to Jewish Dietary Laws. Many of the recipes are "kosher style" and mix dairy and meat products in the same recipe, or suggest the pairing of a dairy recipe as a side dish to a meat one.
But the worst offense is the recipe for a crab salad that is meant to be served before the Yom Kippur fast. Come on! The author specifically recommends that you eat a specifically non-kosher food before the holiest day of the year. Yes, I know there is fake crab that can be used. But that is not mentioned as an optionin the recipe. And there is another page that lists what foods are kosher and which are not, but it is not referenced on this page.
If this were a regular cookbook that was not titled as "Jewish", I'd just ignore the recipe. But I question why it had to be included in the first place.
With only 50 recipes in the book, it wasn't a great bargain anyway. I got Denise Phillips' new release in the same package. I highly recommend her book as a far better value and more authentic. Go with "New Flavours of the Jewish Table" if you are looking for a brand-new cookbook.

Meal*lean*iumm: 800 Fast, Fabulous & Healthy Recipes for the Kosher (or Not) Cook Review

I recently received this cookbook as a gift. I have two other Norene Gilletz cookbooks. Although I have 30-40 cookbooks on my shelf, I have to say that this cookbook is something special. The recipes are a combination of traditional Jewish with more modern, almost California-style tastes. What makes the book special is its presentation. Each recipe is not only explained very clearly, there is an descriptive introduction to each one (e.g. says it's a favorite of her students/caterees), there are a number of notes offering tips, or replacement items. Also, she tells us which recipe can be frozen. Most importantly, the tips allow a nonprofessional cook to gradually learn how to be flexible in her/his cooking abilities, experimenting with different forms of the same recipe.

The WORLD OF JEWISH COOKING: More Than 500 Traditional Recipes from Alsace to Yemen Review

If you're looking for a glossy coffee-table book with lots of stylish photographs, this is not for you. That said, it is an attractive book, well laid-out, printed in two colours and illustrated with old engravings and photographs. The illustrations are of people and markets rather than the dishes themselves, which underscore the book's focus on the origins of the dishes and the people who made them.
Marks does a great job of explaining why Jewish food is so diverse and how the Jews adapted their recipes to local ingredients, and also adapted the local recipes to the laws of kashrut. He includes recipes from India, Poland and Morocco, and everywhere in between. For many recipes he includes an anecdote or a little bit of history, which bring the dishes to life.
One of the things this book brought home to me was how important food is in Judaism: everything has a symbolic meaning and you don't eat things just because they taste good, but also because they represent something. At Rosh Hashana and Yom Kippur, apples dipped in honey represent hopes for a sweet coming year, while the challah (bread) is shaped into a round loaf (instead of being braided as usual) to symbolise the cyclical nature of time. Matzo is eaten at Pesach because when the Jews fled Egypt, they did not have time for their bread dough to rise. Thus at every festival meal the participants are reminded of the meanings of the festival and why it is celebrated.
The recipes themselves are clearly laid out and look easy to follow, although I haven't tried any of them yet. I didn't notice any impossible-to-find ingredients and the techniques are mostly within the average cook's capabilities.
The only thing missing in this book (and the reason it got 4 instead of 5 stars) is a more comprehensive section on each festival with a description, which foods are traditionally served, and some sample menus. As it is, if you want to create a Rosh Hashana meal you have to look up the individual recipes in the index. Otherwise a lovely book and well worth the money!

America's Great Delis: Recipes and Traditions from Coast to Coast Review

Oddly, while deli food is considered one of the great American traditions, it's roots are steeped in our invaluable immigrant ancestors. Honestly what's better than a great corn beef sandwich or a steaming bowl of matzo bowl soup? America's Great Delis takes a fond look at these hallowed halls of dining pleasure in a book that is part tribute, part history, and part cookbook and all a pleasure to read.
Author Sheryll Bellman begins the book by taking a look at the history of deli food including a timeline of events that includes the first known preserving of cucumbers in 2000 BCE, to the origination of the Frankfurter in Germany in the 1400's...from the opening of the Manischewitz bakery in 1888 to the opening of the famous Carnegie Deli in 1937. Next is a brief history of various deli foods such as bagels, Challah bread, corned beef, Matzo ball soup, blintzes, and of course the Reuben Sandwhich.
Ahh...but all that is just the garnish on this heaping plate of gastronomic delights. The meat of the book is a whirlwind tour of some of the oldest, and most famous delis in the country. This includes a bit of history of each as well as some of their most famous, signature recipes. While it's heavily New York influenced, there are recipes included from delis around the country. There's the chicken soup and matzo balls from the 2nd Avenue Deli, cheesecake from Carnegie Deli, Borscht from Katz's deli and Cheese Blintzes from the Stage Deli. Moving outside New York City you'll find a recipe for the German potato salad from Shapiro's in Indianapolis, the pastrami sandwich from Zingerman's in Ann Arbor, beef brisket from Canter's in Los Angeles, and the egg custard from Rose's in Portand, Oregon.
Now you'll know why so many of these establishments were frequented by Hollywood's elite over the years. With some 75 recipes and nostalgic photographs this book is a must-have for lovers of deli or great American foods.

The Sephardic Table: The Vibrant Cooking of the Mediterranean Jews Review

I am a great fan of Sephardi food and own several Sephardi cookbooks. Twena has assembled a wide ranging collection of recipes from the many countries whose Jewish communities fall under the classification "Sephardi". A comment on the origin of the recipe or its appeal personalises each dish. Many Sephardi recipes can be complex and time consuming, but Twena's are generally quick to prepare. Despite several deep fried delicacies and olive oil starring in many others, there are enough low fat recipes to satisfy the calorie conscious. This book is a great purchase for someone searching for a different and imaginative style of cooking, or to duplicate their mother's or grandmother's specialties.

Healthy Jewish Cooking Review

Who knew that Jewish cooking can have a light touch? Raichlen, like many reformed Jews growing up in Pikesville/Baltimore in the 1950's, lived his Judaism through his foods - soups, mandelech, pirogis, briskets, desserts, flanken, knaidlach, tsimmis, and baklava. But, today, these foods can be done lite. His techniques include bake-frying and grilling, focusing on naturally low fat foods, using egg substitutes, using chicken broth instead of schmaltz, increasing the ratio of vegetables to meats, sauteing with non stick pans, and roasting. His 175 recipes include mock schmaltz made from canola oil, a breakfast sangria (for a Yom Kippur Break Fast) from the Caribbean, Curacaoan hot cocoa, quick bake-fried kreplach, sweet cheese kreplach, sephardic empanadas, baltic pirogi, veggie chopped liver, lowfat chopped chicken liver, a low fat chicken soup, matzo ball soup, hot borscht, Greek egg-lemon matzo soup, sauerkraut soup, salonikan soup, and sorrel schav soup. He includes eleven salads including a two-egg-salad made from eggs and eggplants. Speaking of vegetable dishes, there are fourteen, including a tropical tsimmis, a Jewish Romanian polenta (mamaliga) made with garlic and cinnamon; a basil marinated zucchini dish, and Pesach Spanekopita. Several breads are described, including a honey VANILLA challah, Passover rolls, onion rolls, matzo muffins, and Bukharan steamed buns with cilantro and chives. A Sephardic style scrambled eggs with garlic, paprika, cumin and bell peppers (strapatsata or Tunisian chakchouka) is a standout. In terms of meats, recipes include low fat Israeli spiced turkey cutlets, chicken cutlets with a mushroom stuffing, Syrian style Chicken with eggplant (a new Shepherds Pie); a sweet and sour turkey stuffed cabbage roll; holiday brisket with raisins, grape wine, prunes, and apricots; a Napa Valley style brisket; lamb tagine, and a Three-B's cholent. Five kugel recipes include a carrot apple kugel, and a zucchini kugel. Desserts include zvingous, or Greek Hanukkah fritters that are baked. They became a sensation after being mentioned in 1999 in a NYT Hanukkah recipe. A strudel recipe includes a Greek-Sephardic Pumpkin strudel that is usually eaten at Sukkot (Rodanchas de la Calabaza). Finally, let me add a word on Greg Schneider's photography... great. His picture of assorted low fat blintzes lying atop Hebrew newspapers, corralled by a set of tefillin is worthy of individual sale as a lithograph.

A Drizzle of Honey: The Life and Recipes of Spain's Secret Jews Review

I came across this in the shelves the other day and was mesmerized. David Gitlitz and Linda Kay Davidson are a husband and wife team and teachers at the the University of Rhode Island. David is a past winner of the 1996 National Jewish Book Award, and he is a specialist in aljamas (jewish neighborhoods), the converso/crypto Jews, the anusim (forced converts) and the meshumadim (willing coverts). Using cookbooks and Inquisition documents in Spanish, Portuguese and Catalan (including the rare 13th Century Al Andalus cookbook of the Cocina Hispano-Magribi), the authors have recreating over 90 recipes of the Converso jewish community. During the Inquisitions in the Iberian peninsula, Jews and Moslems were killed, exiled, or converted. Some of the converted remained Jewish or Moslem and became Crypto-Jews, Crypto-Moslems, or Conversos. Spain expelled Jews in 1492 (you know, when Columbus sailed the Ocean Blue); Portugal expelled Jews in 1497. The recipes are well categorized, and make use of lamb, beef, fish, eggplant, greens, turnips, chickpeas, as well as mace, cinnamon, ginger, lavender, rue, portulaca, and dozens of other spices. Most recipes include histories and characters of the period, which is the prime motivation to purchase this book. For example, along of the recipes of Beatrice Nunez, we learn that she was arrested in 1485. Her maid turned her in to the Inquisition for the crime of maintaining a kosher kitchen. She also prepared a Sabbath stew of lamb, chickpeas and eggs. Proof enough to have her burned at the stake. Among my favorite recipes is Mayor Gonzalez's Egg and Carrot Casserole. She was imprisoned in 1483 for killing a goose in "the Jewish way." Then there is Juan Sanchez's hamin of chickpeas, spinach and cabbage; and Maria de Luna's rasquillas, honey pastries that she prepared for the post-Yom Kippur fast. She was arrested in 1505 for this crime. There is also Juan de Teva's Roast Lamb dish. Juan's father was a rabbi who was burned to death i n1484. The authors also include the Roast Chicken with Fruit and Almori recipe of Anton de Montoro. Senor de Montoro was a rag merchat in Cordoba, but is most well known as being the converso poet to the Court of Queen Isabel of Castile. De Montoro was accused of preparing stuffed radishes (a Jewish dish) and Pollo Judio (jewish chicken). Easily, this is among the top three Jewish Cookbooks of the year.
