There are some good substitution ideas in here, but especially in the dessert section there was 'way too much emphasis on fake food (fat-free and sugar-free pudding, for example), and there's already enough of that on the show.
Another big problem with this book is that the organization is poor. Several recipes called for another recipe to be made first (e.g. meatloaf sandwich made with leftover meatloaf), but they should have been listed alongside the original recipe, instead of being in separate sections.
Check out of the library first, before buying. If you already use sugar substitutes and sugar-free/fat-free convenience foods in your cooking, this book may have some new ideas. If you're looking for healthier recipes made with regular food that doesn't have additives, there are only a few recipes in this book that fit the bill.

The Healthy College Cookbook Review

Putting in 90-100 hour weeks during Graduate school, I needed a basic but comprehensive cookbook where the meals wouldn't take long, the ingredient list wasn't huge, but the meals would still be flavorful. I picked up this little gem. I can't even count how many times I've cooked my favorite recipes out of this book--Vegetarian Lasagna, Balsamic Chicken & Potatoes, the list goes on and on. This cookbook covers every meal item possible and gives you a great combination of classic and unique recipes that anyone can make. You don't have to be a BAD cook to get this book, the authors are sensitive to the fast-paced lifestyle many people have and present this as an alternative to lengthy cooking. And now that I'm out of the Graduate School schedule, guess what -- I'm still making these recipes.

Miserly Meals: Healthy, Tasty Recipes Under 75¢ per Serving Review

I am a fan of Jonni McCoy's other two books - "Frugal Families" and "Miserly Moms", so I purchased her book "Miserly Meals". I have to say that we have tried a week's worth of meals (including lunches) and we are sorely disappointed. These may be inexpensive and healthy, but they are not all that tasty. Some don't even work right. Last night, I made Mock Pizza in the slow cooker and it called for uncooked egg noodles. There apparently wasn't enough liquid in the recipe because the bottom noodles were cooked, but the top ones were still crunchy. I kept adding liquid, but then it was plain old mush. Yuck. Several other recipes are bland and boring.
I did like the meatball recipe, however, and even tripled it for my freezer. Some of the other basic recipes were also good, such as the taco sauce and spaghetti sauce. But we were very disappointed in many of the meals.
One other concern I had was that the yield of the recipes were not consistent. Some served four, some six, some eight. I would have appreciated a little more consistency there. We have a family of six, though, and even recipes that said they served six weren't enough for us.
I did like the kitchen tips and the nutritional breakdown of each meal. I wish the index was a little more comprehensive so that I could find a recipe when I wanted to use tomatoes, for example.
Overall, we were simply disappointed.

College Cooking: Feed Yourself and Your Friends Review

I'm not a foodie, but I like to cook. I've also found its one of the greatest ways to pull together people from diverse backgrounds--nothing like closeting a group of unrelated people in a cozy kitchen, pulling out some good food and drink, and chatting. Beats the heck out of the cardboard pizza most study and discussion groups serve. So, when I received a copy of Megan and Jill Carle's College Cooking: Feed Yourself and Your Friends, I have to admit I was more than ready to give it a go.
Now, normally a cookbook labeled "College Cooking" is going to have 101 things to do with Ramen Noodles or 100+ ways to microwave canned foods so that they no longer resemble canned foods. The Carles didn't take this approach, however. They've put together real recipes, using real foods. The catch is, you're going to need a real kitchen--or at least access to one--to make their dishes. Sometimes that's not such an easy item to come by when you're still in college--even if you are a graduate student.
What do the Carles have to offer? Let's take a look at last week's brunch: fresh tomato soup (ripe tomatoes, salt, milk, and pepper), chicken salad pita sandwiches (real chicken, lettuce, celery, cucumber, grapes and a peppery mayo), zucchini olive salad (strips of crisp zuchinni, garlic, basil, lemon, olive oil, salt, pepper, Parmesan, black olives and sunflower seeds), and lemon sugar cookies (made with real butter). Everyone had fun lending a hand with the meal and it was absolutely yummy!
Unfortunately, everything in this meal--with the exception of the zuchinni salad--required access to a full kitchen; and that particular fact applies to almost every recipe in the Carles' book. Also, the Carles give quite a few tips on making vegetarian dishes using their recipes; but few tips on making their recipes either low-cal or low-fat. All of which explains why I'm reviewing this particular "College" cookbook on the graduate school site and not the colleges site--graduate students have been out of the nest long enough to have learned a few tricks to manage these particular issues.
If you do have access to a full kitchen (and a nice enough bank balance to afford some of the more particular ingredients these recipes call for--like fresh black olives as opposed to canned), the Carles have put together a really nice collection of recipes covering everything from comfort foods to party foods in College Cooking: Feed Yourself and Your Friends.

The Starving Students' Vegetarian Cookbook Review

With "The Starving Students Vegetarian Cookbook" students can enjoy inexpensive home-cooked fare while dirtying as few dishes as possible.
According to the University of Alaska Fairbanks bookstore, it is a top non-fiction best seller for college bookstores. Dede Halls vegetarian cookbook delivers quick, cheap and delicious meals that anyone can prepare. If your mother never showed you how to make an egg-salad sandwich, there is no need to fret. Not only can you learn how to make an egg-salad sandwich, but you can also try dishes like "Lynn's tofu spinach lasagna" and "onion potato soup."
The cookbook lists the staples one needs to have on hand to prepare these simple vegetarian meals. There is enough variety to avoid boredom. Many of the recipes will be ready in less than 15 minutes. The reduced number of dishes used in cooking is of benefit to college students on a tight budget.
Hall includes cleaning and shopping tips for those who are just now becoming responsible for their own homes. Tips like how to shop for citrus fruits or how to chop onions are scattered throughout the book.
I tried a few recipes out for myself, and was very pleased with the results. The chile rellenos were easy to make, and very tasty. Using only a few ingredients (eggs, cheese, baking mix, milk and green chilis), the dish was easy to prepare and a big hit with my family.
The zucchini enchiladas also made a wonderful meal. Using flour tortillas and canned sauce, they were quick to prepare with excellent results.
There are several other promising recipes I intend to try: Caribbean red beans and rice, banana fritters, and Spanish corn bread are just a few.
My only complaint is that there is no nutritional analysis of the foods. As many vegetarians are health-conscious, this would have been a nice feature. Still, the recipes do seem to be nutritious as well as simple. With the busy schedule and tight budgets of most students, this is a useful book full of culinary ideas that will appeal to vegetarian and non-vegetarian alike.

The $5 Dinner Mom Cookbook: 200 Recipes for Quick, Delicious, and Nourishing Meals That Are Easy on the Budget and a Snap to Prepare Review

When I became interested in saving money on my grocery bill, I purchased both this book and Mary Ostyn's book, and have read them both thoroughly. Honestly, you will be better off just getting Mary's instead.
Before I get to the negatives, I'd like to state the few positives. I give props to Erin first for recognizing that Americans eat too much, and second for working vegetables into every meal. The reviewer who said that this book is overall unhealthy is exaggerating a little. Yes, she uses regular ground beef, but processed foods are in only a few recipes and frozen vegetables are still vegetables (and she does encourage growing your own). Both Erin and Mary emphasize eating less meat and offer vegetarian meal options. Erin does mention the use of a price book, but Mary does to a MUCH more thorough extent.
Now the other stuff...
The tips in this book are all commons sense-stock up when it's on sale, match coupons to sales. You don't need a book to tell you that. Every positive aspect of this book can be found in Mary Ostyn's book Family Feasts for $75 a Week, and you'll find lots of other information as well. Erin gives an ingredient by ingredient price breakdown in every recipe, which is a good concept, but the problem is that price can vary largely depending on where you are. There are some items that she's apparently been able to find at prices that I've never, ever seen anywhere I've been, and I'm a very price-conscious shopper. So, a lot of her "$5 meals" I would not be able to make for $5. Also, she groups the side dishes right in with the main course, including the price tag, so if you want to change up some of the main course-side dish combos, you're going to alter the price (and if you're not eyeballing the price, there's no reason to buy this book at all). Speaking of side dishes, this book has a lot of "bare" vegetables, so if you have taste buds and like to put a little salt or butter on your veggies, that's going to affect the price.
Some people have expressed concern over the portion sizes in this book for a family of four. Erin has two children, and they are both very, very young, and thus probably consume much less than a teenager or adult. If your two kids are teenagers, most of these recipes will have to be adjusted quite a bit, and thus make the final price much higher than $5 dollars. For that reason, I don't like the concept of putting a dollar value on the meal as a whole, but rather a dollar value on a "per plate" basis. Mary states that she rarely spends more than $1 "per plate."
Mary and Erin differ greatly on their view of coupons. Erin swears by them, and devotes most of the non-recipe section of the book to them. Mary, however, outright says that she rarely uses them. Her reasons are that most food coupons are for highly processed brand name foods that are either unhealthy or have much cheaper generic counterparts. Honestly, most generic foods taste the same. Instead of focusing on coupons, Mary utilizes foods that are inherently a better value to begin with.
Erin does offer some homemade items, such as basic sauces and salad dressings, but you'll find a much larger section on such items in Mary's book. One other thing you will not find in Erin's book is desserts. I believe desserts have their place at the dinner table on occasion, especially if you have children.
As for the recipes themselves, I tried a few of Erin's, and they were just ok. Most of these recipes you could probably come up with yourself or find online, really. There were some I didn't even have to try because I knew how'd they turn out (I cook a lot), and I have a hard time believing kids will eat a few of these. Ziti pasta with plain white sauce and no spices? No thanks. I've tried several of Mary's recipes, and all but one have been really good.Long story short...everything in this book that's worthwhile can be found in Mary's.

Gill Holcombe gives some good common sense advice on how to cook, healthy and within a budget for your family.
He gives more than 200 recipes in this book. There are no pictures or diagrams. It is printed on newsprint. It is a basic book containing basic recipes.
There is a section on necessary pantry ingredients and how to prepare vegetables. Some recipes, such as some in weekend breakfast just tell how to fix some dishes, they are not set up like recipes with ingredients listed first.. There are good tips for fussy eaters and some for packed lunches. Most of the recipes in here are those for some standard comfort fare with a twist, although there is hamburger, shepherd's pie, chicken nuggets.
Some quandaries occur when directions are given to add ½ package or 5 pieces of ham; or add broccoli or spinach - how much is that?
Menus are given with hints on how to fix some of the dishes. Included are recipes for breakfast, dinner, quick fixes, soup, puddings (desserts), cakes, a few smoothies and drinks, some breads and a few assorted recipes for such as; hummus, mayonnaise, ginger beer, chutney. Our family has enjoyed the Toad in the hole, Tuna lasagna, and Kedgeree among others.
The book does have a British leaning in some of it's recipes and in its language - desserts are puddings, whether they are what Americans call puddings or not. It was printed in Great Britain first. Despite, or maybe even because of it, this book might not be the most picturesque and flashy, but it certainly contains some sensible advice and good recipes.

The Student Cookbook: 200 Cheap and Easy Recipes for Food, Drinks and Snacks (Cookery) Review

This is a really good book. The reason it's a four and not a five is because the 50+ drink recipes are alcholic, and there's only 7 smoothies! There's no pictures in the book, but the text is easy to follow. It doesn't have an index or a table of contents, instead it has a quick guide page which are categorized into "Really Hungry", "Date", "No Money" ...
I would definitely suggest first making the "Very Difficult Muffins" and the "Brownies for Dummies" when you get this book. The "Italian Grilled Cheese Sandwiches" is a nice spruced up basic.
Get it if have some spare $$. Also look at: How to Repair Food

*FYI: For those who don't know, with most baking recipes you can replace half of the oil with (healthier) apple sauce.

The Starving Students' Cookbook Review

It wasn't so much college, as right afterwards, when money was tight, and Ramen noodles were considered a staple... The Starving Students Cookbook taught me a lot of really basic, but very tasty dishes that I still use today. My favorites include "Meatloaf Men Like" and "Easy Roast." I highly recommend this book to anyone living away from home for the first time, or who is just strapped for cash.

I have used this book for several recipes this past week and my picky family has enjoyed every dish. I like how it has the price break down although I have not verified them yet. The dishes are healthy, flavorful and inexpensive. I feel as though my arsenal of meals to make for my family within budget has multiplied. I am a person that likes to try new things but hate cookbooks that call for ingredients I don't have in my kitchen. The reason why I have not verified price is because I had all the ingredients in my kitchen already. No special trips to the store. Cooking Outside the Pizza Box: Easy Recipes for Today's College Student Review

I originally bought this book for myself, and found it to be too introductory for me, so I gave it to my brother, who despite being older than me still calls me to ask things like how you mash a potato. The recipes are very easy to read, making no assumptions about previous knowledge, and they utilize store-bought pre-prepared ingredients (the author is especially fond of frozen potsticker dumplings) in a way that is helpful to college students, although I thought occasionally the scratch alternative would have been no more difficult and probably cheaper and better tasting.
What I love best about the book is the way it is organized. Recipes that require no cooking or are microwave-only are marked with big icons on the page, and while the recipes are organized by meal or food type, like most books, the book also contains multiple tables of contents that group the recipes differently--vegetarian, microwavable, appropriate for a date, seasonally, etc.--and even has one set of listings that put together recipes for a complete meal. While not particularly elaborate (as most of the recipes are pretty simple anyway) I love this feature, because matching flavors can be particularly difficult for a new cook, and for any cook a recipe book can be unhelpful in planning a meal if you don't kind of already know what you want.
The first section of the book is also really good for first-timers because it goes over the basics of setting up, cleaning, and sharing a kitchen. It provides lists of basic equipment and the basic ingredients you should always have on hand, and this list is in general pretty sensitive to the limitations of dorm sizes and mini-fridges. It even gives cleaning instructions for some of the less obvious cleaning challenges in the kitchen. I thought the list of things to discuss and agree on with roommates regarding kitchen use was particularly helpful. Lastly, the book itself is well-designed, being spiral-bound rather than a traditional paperback, so that it lays flat easily while staying open to the same page hands-free. This seems like a silly note, but I have a lot of cookbooks, some with a similar target market as this one, and I've had to waste a lot of time copying recipes down onto other paper or recipe cards just because I needed both hands and the book kept closing itself or flipping to another page.
In summary, a great book for someone who doesn't know anything about cooking. Would make a great high school graduation gift perhaps made more interesting by pairing it with some of the basic kitchen tool necessities listed in the first few chapters of the book.
