One Bowl: Simple Healthy Recipes for One Review

There are several factors that have kept me from being a regular-basis cook. One is the tiny sliver of counter space, usually taken up by mail, keys and iPods. Another is the plethora of better-tasting delivery options within easy proximity. Lack of organization, time, know-how, motivation, confidence, and a dishwasher have also played their part.
However, this year, determined to eat better, save some money, and impress my boyfriend, I have embarked on a quest to at least slightly improve my culinary prowess. I've purchased a few cookbooks and gotten some as gifts. Many of them seem to assume that I can keep track of 20 ingredients, have 4 pots boiling up on the stove, and spend tons of money on a $10 per ounce spice available only at the Ukrainian grocery in Astoria. "One Bowl" avoids all of these and also addresses many of my other concerns. The recipes usually have a finite number of easy-to-acquire and reasonably priced ingredients that, when blended together, taste really good. It gives some very basic advice on cooking techniques, nutrition and shopping, all of which came in very handy. Usually, as befits its name, the dirtied dishes are kept to a minimum, and I like how the book suggests making more than one recipe at the same time and saving something for the next day. Recipes I really like include the Tomato, Broccoli and Avocado Salad; the Microwave Burrito, the Tuna Pilaf and everything with salmon in it. I like the recipes with familiar ingredients--sweet potatoes, cabbage--that I've never known how to prepare or what to mix it with. Plus, all these recipes can be pretty easily expanded to account for two people, which I know goes against the premise of the book--but I like to be able to try something myself before I subject my boyfriend to it!
Overall, easy to read, easy to use, with bonus sections on nutrition or basics. Hooray for knowing how to prepare vegetables!

Suddenly Cooking - Real food made real easy Review

This is the book I needed when I first had to feed my own children, because I knew nothing.
I like so many things about Suddenly Cooking. There are pictures of each dish, so I know what I'm aiming for. There are clear explanations about everything. Charts showing what is in season when, cuts of meat, conversions, and tips about food storage. Every page is well set out.
I especially needed the lesson about olive oil. How are you supposed to know about this stuff unless someone tells you? Sophie tells us how to make perfect eggs, rice, pasta and mashed potatoes, and how to cook vegetables. If I had known all that ten years ago I would have saved myself a lot of embarrassment and wasted food. How to make a basic salad then add whatever you might have on hand. The food that everyone should know how to make, simply in order to look after themselves and the people they love. How to be confident and creative in the kitchen.
I like the reminders why home made is better than shop bought; it is healthier and cheaper.
I love the tips about how long the food will last in the fridge or the freezer, and I like the suggestions for using leftovers. This is instruction from a cook who lives in the real world. It is like she is in your kitchen with you.
Now my ten year old daughter is cooking for the family, following the instructions in this book. It may be the only cookbook she'll need.

I bought this when I returned to work when my daughter was 10 months old. I initially bought it for the downloadable shopping lists, but instead of going by week, I go by seasons, flip through to find 2-3 recipes that jump out at me, and buy the ingredients for those. The next week, I pick up where I left off. The meals have simple ingredients, interesting flavors, and are easy to prepare. 2 minor things: the meals are 30 minutes to prepare, but may take longer to cook, so keep an eye on that. Also, some of the recommended dish sizes are on the small side, so I sometimes size up (9x13 instead of 8x11, for instance) to make sure that it fits well without bubbling over.

Obviously I haven't had time to do all the recipes yet (that would take months!), but so far I've been really happy with the recipes in this book. Not only are most of them very quick (although some of the longer ones will take you 25-30 minutes), but me and my family also found pretty much all of them to be really tasty so far (my personal favorite is the "creamy ranch skillet potatoes"...definitely check that one out).
There are a few recipes in the book that I don't think I'm going to try, just because they don't sound appealing to me, but that's to be expected with any recipe book, of course. Regardless, me and my wife have been using this book a lot lately, and it's been a real time-saver. Definitely recommended for busy people (and families).

I have used many recipes from this book, and altered many of them as well using the book's base recipe as a starting point for a meal. Several of the recipes are very child friendly, such as Chili-Frank Burritos (p. 21) and Curly Noodle Dinner(p. 13). The recipe I love to alter the most is Shortcut Strata (p.6). I'm glad I have this book and of the 100+ cookbooks I do own it does get used quite a bit.

As the title implies, this cookbook would be useful for folks looking to prepare meals without simply resorting to microwaving frozen dinners. Some of the included recipes are the sorts of things that you might find in a club recipe book and in fact, I've seen variations of several of them. This is not a
"whole foods" type of cookbook: it makes heavy use of processed foods. For example, there is a recipe for a "pizza" which uses canned biscuit dough for the crust. The recipes are devoid of nutritional information so you'll have to use your own judgment in that regard. If you already have a collection healthy, quick meals, then this cookbook is not for you. On the other hand, if you are at a loss for how to feed a family that's frantically on the go, this book might be for you.

Cooking Light Fresh Food Fast: Weeknight Meals: Over 280 Incredible Supper Solutions Review

My husband has food sensitivities, so we cook at home every night. I just stumbled across this cookbook at the bookfair at my son's school. It's FANTASTIC.
The good:
* TONS of photos. Every single recipe has at least one photo.
* The recipes give you complete meals. They'll show you how to serve an item, and they give you any needed additional recipes for sides.
* Every recipe has nutrition information.
* Most of the recipes can be easily adapted for allergen-free cooking. My husband is senstive to gluten, corn, dairy, honey, legumes, and some nuts. That's a long list, and I am still able to use most of the recipes in this book with minimal alteration.
* All the recipes are fast to make: very fast. I can complete most of them start to plate in under 30 minutes.
* They taste good. We've been very pleased. On flavor alone, my favorite cookbook is Jamie Oliver's "Food Revolution" book, and these recipes don't compete with those. However, I usually end up cooking out of this one because it's so fast and easy, and the recipes still taste pretty good. They are much better than the Rachael Ray recipes.
* The recipes are healthy but filling, and they still include some comfort-food type dishes.
* The organization is the best I've ever seen in a cookbook. Everything is divided into sections by main course: sandwiches, soups, poulty, etc. Recipes for sides or sauces are on the same page as the main dish, so you don't have to flip pages while cooking. But if you want to get creative and just look for a mustard sauce, there is a "Sauces" section in the index at the back. You do not have to remember that such-n-such mustard sauce went with such-n-such fish dish. You can just look it up.
The not so good:
* Some of the recipes use premade/prepackaged ingredients that are not always easily replaced with fresh, whole foods.
* The serving sizes are off/skimpy, in my opinion. I assume this is because they are trying to promote healthier serving sizes, but I've been caught a couple of times with less food than I expected to have. Most of the recipes seem to serve 3-4, in my opinion.
I would definitely recommend this cookbook, and I plan to buy the other "Fresh Food Fast" cookbook from Cooking Light as well.

This review comes with instructions: #1. Buy the book. #2. Turn to page 112. #3. Make the recipe "Slow Cooker Pot Roast." Now, to be as un-journalistic as I can be: OMG! If you like pot roast you'll love this recipe. It is so easy to make (as long as you own a slow cooker), and the end result is a truly magnificent braised meal. Perfect for the winter months. The recipe worked to a 'T.' The beauty of this dish for me? All I had to to do was buy the boneless chuck roast ($13.47 at Whole Foods). Happily, I already had the onions, carrots and potatoes from my C.S.A. More beauty? I managed to get three meals from one roast. All the recipes I tried from Quick-Fix Southern worked very well. Author Rebecca Lang knows how to cook and this book reflects her talents.
Lang groups the book's 115 recipes into ten themes including Tailgates and Gatherings, Busy Weeknight Suppers, and Girls' Night In making it easy to locate a recipe that fits the mood. As the title implies the recipes are geared toward meals that take thirty minutes or less to prepare (cooking times may be longer). "Quick-Fix Southern" is fun, light and breezy, and full of food that one wants to eat. Chapter three, Sipping on the Screened Porch is all about drinks to be made for imbibing on hot summer nights on the screened porch, or off. Lang, being a Southerner by birth, throws in stories of her family, and food traditions as well as the history and lore of the South.
To make her format of 30 minutes or less work Lang adds in quick cooking tips, and shortens cooking times and techniques where possible. On page four of the book there's a heading Keys to Quick Cooking. Below it are subheadings, Keep a Running Grocery List, Grocery Shop Once, A Well-Stocked Pantry, Fridge and Freezer with further subheadings all to help you quick-fix the meals in the book. I particularly appreciate the number of slow cooker recipes as I am a recent owner of one. In a busy, busy life the slow cooker has become indispensable to cooking at home (and not going out to restaurants). I'm always looking for more slow cooker recipes. Recipes I'd like to try: Slow-Cooking Stone-Ground Grits, and Slow Cooker Boiled Peanuts (a Southern delicacy). A southern cookbook would not be a southern cookbook without a few classics like Fried Green Tomatoes, Classic Sweet Tea, Lime Mint Julep, biscuits, Quick Icebox Pickles, Blackened Catfish, barbecue, Mama's Baked Beans, and cobblers; all are included in "Quick-Fix Southern."
I've been using this book often since receiving it. It's winter so my C.S.A. deliveries have included many winter vegetables like kale, collard greens, carrots, potatoes, beets, and squash. This book is full of recipes using these ingredients, and I've happily been making them. Two favorites have been the Spicy Mustard Greens and the Little Beet Salad. There are many more recipes to try, and try them I will. Don't forget! Page 112, "Slow Cooker Pot Roast." You won't be sorry!

I am very disappointed in this cookbook. If you are looking for a cookbook that has innovative, interesting recipes for food that people with diabetes can eat, save your money and don't buy this cookbook. A number of the recipes require either a food processor or a blender. Many recipes require extensive prep time. The author's idea of dessert is to eat a piece of fruit.

This is typical of the other "Everything" books or "The Idiot's Guide", it's a comprehensive cookbook to cover 30 minute meals. As if you've not had enough of Rachael Ray and Robin Miller.
The biggest tip for any of the quick cooking books is to have a plan. Whether it's a plan of what to have for dinner or a plan how to use leftovers or a plan to make a menu. Either way it's what gets you going. So as soon as you hit the door from work you know what to start making. You're not standing gazing in the refrigerator as though you're a deer in headlights.
This is an OK cookbook, I like that it does give how many the meal serves, it includes prep times and cooking times up front. The recipes are not divided into those categories, you'll still have to scan all the recipes to figure out if you have 30 minute recipe or a 10 minute recipe (and yes there are 10 minute recipes in this book). And this cookbook is much better than the BHG "Off the Shelf" one.
If you want a cookbook divided into quick, quicker and quickest look at The Family Dinner Fix: Cooking for the Rushed, it's sorted that way.
An example of a recipe in this book is buying a rotisserie chicken from the supermarket, coming home and shredding it and then putting it over a bagged salad, adding drained mandarin oranges, golden raisins and italian salad dressing. Hummm...I don't know if that's much of a recipe? Another recipe to cook chicken thighs and then spread store bought salsa verde over them. There's are no suggestions for side dishes, accompanying dishes, etc. If I'm in such a hurry that I can't figure out to pour a jar of sauce over some cooked chicken thighs then I probably need help with the whole meal, not just one component of it.
I wasn't real impressed with this book. If it had been divided into menus or suggested side dishes then I would rate it a little higher. There are no pictures, there are 3-4 recipes crowded onto one page. It's printed on recycled paper so don't get the pages dirty or wet. Overall, it's what's expected of the Everything series books. I would spend my money on Saving Dinner: The Menus, Recipes, and Shopping Lists to Bring Your Family Back to the Table or The Food Nanny Rescues Dinner: Easy Family Meals for Every Day of the Week.
Another suggestion would be The Good-to-Go Cookbook: Take-along Food, Quick Suppers, and Satisfying Snacks for On-The-Go Families. They're in the similar vein as they cookbook but put together a little better. HTH.

I checked this out from the library and ended up ordering a copy from Amazon two days later. I've made four or five of the meals so far. All have been tasty, and the prep time is amazingly short; that "30 minutes" includes cooking time, so usually I can get the sides whipped together and the kitchen cleaned up before it's time to eat.
I love books that give you a shopping list, side dish suggestions and a "game plan" of instructions; it's the next best thing to somebody else doing the work for you. The limit of 5 ingredients is a fun gimmick, and for the most part those ingredients are "real" food, not cream o' mushroom in a can.
Some portions were a little small for our family, which includes 2 healthy teenagers. And relying on pre-packaged convenience foods can get pricey--I will probably continue to cook raw potatoes, boil ordinary rice, and chop whole onions. But as the authors point out, it's nice to know we don't have to.
Final comment: the lasagna recipe alone is worth the price of the book.

This is the easiest cookbook I've ever used. The recipes are delicious. It's so hard to find diabetic versions of the snacks and treats I love to munch on, and here they are! Great for kids to eat after school, or for late night treats.

I started cooking about two years ago after watching the Food Network and getting the notion that I might be able to make a beef stew or a pot roast. While my first attempts were all successful, I have to admit it was stressful because I did not even know how to read a recipe, did not understand what the techniques were. But I chose recipes I had seen done on TV, however cut down for a show format. After doing dozens and dozens of dishes I got a feel for how recipes work and could see how dishes are constructed based on the cooking method being used. Nowadays, I even build my own dishes or modify a recipe based on what I have on hand or what looks best at the market.
While a number of the big name Food Network chefs were inspirations to me, none was more important to my learning to cook than Emeril Lagasse. His recipes work and provide lots of flavor. Plus they are direct enough for those of us who want to cook but don't have training. Some of his recipes do require more work than others, but none are impossible. And I have always found them rewarding. My oldest son says that if the recipe is from Emeril he is willing to try the dish no matter what it is because they have always been good.
This book is especially nice for home cooks who have busy lives and want to cook quick, fresh, tasty, and affordable meals after work or on busy weekends. I have made a number of the recipes and they are all easy to follow, tasty, and I believe you and your family will love what you prepare. The shrimp etouffee has become one of my standards that I use for guests and they always like it. The goat cheese and caramelized tarts were also a hit. I also like the Salad Tropicale, which is easy and tasty - it is tropical because of the hearts of palm, avocado, and tomato. And I want to make the chili mac soon.
Emeril organized the dishes so you can choose a dish by how much time you have to spend preparing it. And each section, whether 20 minutes, 40 minutes, or 60 minutes, has a full compliment of starters, salads, soups, sandwiches, rice & beans, seafood, poultry, meat, and desserts. Vegetables only show up in the 20 & 40 minute sections.
Emeril also provides cooking advice and I have found that his advice to study the recipe in advance of cooking to be very sound. You want to be sure you have a strong conception of what you want to make, what ingredients you will need to have on hand, and what the order of battle will be. That is, what will prep take, how will you cook the dish, and how will that dish coordinate with the other things you are preparing for the meal. I have found that you want to have EVERYTHING prepped before you start cooking. So, allow a bit more prep time than you anticipate or than the recipe calls for. I don't know how they prep things so fast, but I don't want to lose a fingertip to haste when cutting, chopping, dicing, and mincing. Still, the timings on the recipes are relatively accurate and Emeril is clear about the range of time of the recipes in each section.
This is a very useful book and is handsomely produced. The photography is colorful, enticing, and there are many photos of what we aspire to create with some of the recipes. Not every recipe is illustrated and some of the photos are just there for decoration.
I look forward to cooking even more of these recipes and sharing them with friends and family. Thanks, Emeril, for helping me learn to cook and for helping me provide wonderful meals that allow us to sit and talk and enjoy each others company.

I feed 6-7 people every day for dinner, sometimes more if one or two of my kids' friends are over. I think about food all day even when it's not meal time because I'm thinking about what to put together to make a cohesive meal, if I laid it out to thaw, if I have enough of it, if I have any leftovers that I can incorporate so as not to waste food. It is exhausting. I purchase absolutely any cookbook there is that will help me make meal planning, prep and cooking easier. So when I saw this book I had to have it.
The very first page was planning the weekly menu like I've been trying to do for years. This book is having Comfort Food on Monday, Italian on Tuesday, Fish & Meatless on Wednesday, Mexican Night on Thursday, Pizza Friday's, Grill Night on Saturday and Family Traditions on Sunday. I've been doing something similar but trying to make mine Meatless Monday's, [...]. But regardless of what you pick this is excellent meal planning advice. It gives yourself (and the kids and spouse) an idea of what to look forward to rather than coming home with pots and pans banging around with no idea of what to prepare.
That is what I liked about the Sandi Richard book too, The Family Dinner Fix: Cooking for the Rushed. She has similar ideas to Ms. Edmunds. I would use a calendar that you get free in the mail and write your "theme" across the top. Your themes might be different than the suggested themes in this book but either way come up with 7 themes and write them across the top of the calendar.
Now go to each chapter in this cookbook (or any other cookbook) and list a recipe that corresponds to that theme. List the page it is on and briefly write any side dishes that you would be serving with the main entree. Ms. Edmunds suggests making your menu first and then your grocery list second. I believe in making the grocery list first and then making meals from that. I try to buy what's on sale and then make meals from the sale foods rather than the other way around.
I made the white chicken chili that was listed under the Comfort Food section. It's intended to be a Monday meal but I think we had it on a Wednesday (oops!). LOL. It was very good. Also under each recipe is a conversation starter. It's a question you're to pose to the family around the dinner table to stimulate conversation. I actually purchased these from www.savingdinner.com and here they are free.
There are also bread recipes, side dishes, desserts, after school snacks, cooking tips, and other great ideas to get the family back to the dinner table. It's an awesome book. One of my better purchases. This is certainly a fantastic gift, wedding or otherwise. It would be a great gift for someone just starting to cook who needs ideas and instruction for getting a complete meal on the table.
Another good cookbook I like is Saving Dinner: The Menus, Recipes, and Shopping Lists to Bring Your Family Back to the Table by Leann Ely. It has shopping lists, menus, and great recipes to get started. It's not laid out with "theme" nights like the Food Nanny but it's good nevertheless.

I got this for my preteen daughter, who is becoming very self-conscious about her body. So I educated her about what good foods and bad foods will do to our bodies. Putting good foods in our bodies will keep us healthy and this cookbook was a smash. That Acorn Squash recipe was our favorite...its now a staple we enjoy at least once a month. Great for Thanksgiving as well.

What's-For-Dinner Cookbook: A Year-Long Program of Balanced Dinners for Your Family Review

I have had this book for about 3 months now, so far using the "Winter" recipes.
The concept is good: Gather a year's worth of recipes together, split them up into seasonal sections, and create shopping lists. Give advance notice for the next day's meals, and prepare ingredients ahead of time. For someone who has a difficult time menu planning, I thought this book would be my answer.
But the directions are not so good. Some directions will have you cook pork chops until you could resole your shoes with them. Some will tell you to bring the ingredients of a soup to a boil, but omit the part about adding water. Some will include ingredients, yet never tell you what to do with them. Some directions will tell you an important step, but only at the end of the recipe, when it's too late. Some have incorrect cooking times, leading to undercooked/overcooked meals.
Then there's the cream-of-something soup recipes. 43 cans for the year. 18 cans of cream-of-something for the Spring section alone! Before deciding on the week's recipes, I scan the ingredients for C-o-?'s, and cross those recipes right off the list.
Of course taste is subjective. Maybe you would like a dish with cream-of-mushroom, a pint of sour cream, 2 cups of cheese, 1/2 cup of butter and some hash brown potatoes. It was nearly deadly for my family. Gag reflex for my 3.5 year old, and doubled-over gas-filled intestinal pain for us.
Some recipes are unnecessary for a busy family. My first go at the book was Sloppy Joes with Stovetop Baked Beans. In the interest of time and money, I skipped the ingredient list and bought a can of Sloppy Joe mix and a can of Baked Beans.
Some recipes are good. We liked "Mom's" Meat Loaf and Mexican Lasagna for instance.
If you get this book: read, re-read, re-re-read the recipes and make sure you make notes and fix the omissions and errors before starting. Use your own common cooking sense: if the recipe calls for you to cook chicken breasts, stuffed with cheese and topped with spaghetti sauce, for 1 hour, you might want to adjust that a bit so you don't end up with dried-out, tasteless boiled chicken with cheese melted right out of it, sitting in watery spaghetti sauce. And if you like cream-of-whatever soup, then get your casserole dish ready... you're going to need it.
